Rhubarb, known as the ‘fruit of Orkney’ is busy growing in the gardens of these Scottish islands. Rheum rhaponticum (common rhubarb) is a species that may have been involved in the parentage of the hybrids now used as culinary rhubarb. This plant is a large herbaceous perennial which overwinters as a low crown.

Fred and George went together like rhubarb and custard; always complementary and very rarely ever seen without their counterpart. Cauliflower, the pale cousin of broccoli, is supposed to taste like mildly nutty nothingness. If it tastes really nasty to you, then you may be sensitive to tasting sulfur compounds, and should avoid cruciferous vegetables for your own happiness. A lot of kids are very sensitive to them, and they make broccoli and brussels sprouts taste awful to them. For most people, this goes away as they grow up, but some people don't grow out of it. It's less "being picky" and more of a "do you have the cilantro tastes like soap gene" situation.

Tastes of Thedas Lore:
New Fauna, Food, Ingredients, and General Lore Introduced by the Cookbook
I'm putting this all in one list separate from the master list so it will be easy to find. I am also including all the information we've known from the sample pages for completeness. Source of all this information is from Dragon Age: The Official Cookbook: Taste of Thedas.
I have not included anything that was mentioned in previous media, for a complete list of all the lore mentioned in the cookbook as well as the other sources that mention it, please see this post. I'm putting all this below the cut in case you are trying to avoid spoilers, as well as the post itself is long.
NOTE: I did not include any of the ingredients from the recipes themselves, just the lore blurbs as it has been made clear the recipes not only do not match up, but are also rooted more in reality than Thedas.
Culture
Anderfels has a robust pig farming industry, the climate being well suited for them to grow to a generous size.
Kirkwall is known for their crab cakes.
Nevarran's culinary practices view food to be a feast for the eyes and mouth and thus place heavy importance on plating.
Orzammar holds a competition for the Best Sauce and participants will hatch plots to steal recipes of competitors. Leading recipes to be closely guarded secrets.
Some Orzammar dwarves insist that the proximity to lyrium and darkspawn only improve the flavor of edible deep mushrooms.
Tevinter seems to be the origins of cupcakes. They historically would use them to poison people.
There are custard connoisseurs across Thedas.
General Notes on lore
Isabela has a drinking game based on the number of enemies one has. The game has killed at least one man.
Krem suggested that Bull and the Chargers use the rice they were paid with to make rice pudding.
Krem seems to hold knowledge of all dishes the Chargers eat.
Varric and The Iron Bull love sweets.
Vivienne eats croissants every morning.
Vivienne is known for dressing blancmange with white chocolate curls and whole jasmine flowers, serving the dish on a black plate.
Wyverns, like phoenix, can be deadly if not prepared right.

Additional Notes
I included fried young giant spiders on this list because it is technically different from the roasted giant spider legs we see in the TTRPG adventure Buried Pasts.
Stuffed Vine Leaves may have appeared previously in the comic Deception. However I didn't feel I could make that determination unlike the desserts clearly shown in the comic Magekiller that are easily identified to me.
Quillback was mentioned in Unidentified Meat but isn't included as suggested or speculated food due to it being eaten by Inquisition soldiers in the Western Approach.
Saffron isn't a new spice to Thedas, as it was originally mention in the Last Court. It's origins seem to come from Antiva both due to the recipe and the fact they import most spices from Antiva in Serault.
Roasted turkey was first mentioned in the Dragon Age TTRPG. Thought it is common in the Free Marches, this dish is also popular among the Chasind.
Cupcakes seem to originate from Tevinter, as Cherry Cupcakes have been tied to them both in the cookbook but also the comic Magekiller.
Pumpkin Bread referenced to Tevinter, however we know that other nations such as Ferelden and Orlais, also grow pumpkins. The dish likely originates from Tevinter given the reference of it being used to tempt one to visit the Imperium. But thought it would be worth noting that pumpkins also exist in the south.
Licorice is previously mentioned by Dorian, referencing salted black licorice candy. But it may very well come from Riviain as the Rivaini tea blend has a variation that uses licorice root and they export the tea blend.
Additionally it seems peppermint and oregano also originate in Rivain.
Chocolate is not a new item to Thedas, however it is known to be imported to other nations from the Donnarks and Rivain.

the evil rhubarb post pisses me off so much it's called forcing rhubarb it's not a different plant it's a very common technique for growing sweeter and less tough rhubarb mostly it is just grown under a large pot or bucket in the garden rather than a dedicated basement but it's fucking fine why r ppl treating it like a fuckin creepypasta. i hope every rhubarb pie you ever eat is chewy and bitter i place a rhubarb curse upon you

About the air element: The air element is linked to things such as divination, concentration, visualization, and prophecy. Air teaches us how to hone our scattered energy and focus it toward what we want. It teaches us to use our intention. Air can be a big cleanser and also a big charger. Just stand outside for a few momenrs on a windy day, letting it blow around you and play through your hair, and you will feel renewed.
Air in magic: The air element is often used in combination with smoke, feathers, trees, flowers, and plants. It is common to use the air element in both spells that require letting go, and in spells that bring you new information. After all, rumors can travel on the wind. Aromatherapy, hanging objects up, playing the flute or other woodwind instruments, and tossing things to the wind are all examples of using the air element in magic.

Air in daily life: The most obvious form of air in our daily lives is the air that we breathe. Everyone does it, everyone needs it. Speaking requires the element of air as well, as it carries the vibrations of our voices. We use air to cool off, and every time we look up at the clouds in the sky, we are interacting with the air element.
Air in the home: Similarly to how fire is used to keep our homes warm, air is used to keep them cool. Whether you are opening a window, turning on a fan, using an air conditioner, or fanning yourself with the playbill for your little brother's school performance of Legally Blonde in the stuffy auditorium, you are using air to cool yourself down. Air can also be very healing. How many times have you stepped outside to get some fresh air and take in the breeze while you were feeling sick?
Air in the kitchen: Though it may not be obvious at first, there are some cooking methods that utilize the air element. Perhaps the most common is drying, whether you are drying meat for jerkey or herbs for tea. Then there is cooking with convection heat, which is growing more popular, or cooking with microwaves. Also popular, as seen by the amount of fizzy beverages and whipped toppings available, is carbonation and aeration. There are several foods and ingredients associated with the air element, including~

Here we are, this is Rhubarb Pie Cookie
So basically Rhubarb Pie here is a professor at Parfaedia, specifically she teaches plant magic and how to grow magic plants. She also likely has a greenhouse full of them. She’s a very sweet and friendly lady and she enjoys her job a lot. She also probably bakes a lot of rhubarb pies in her spare time and gives them either to coworkers or her students (as well as eats them herself)
Side note, I feel like I make way too many Cookies go to/live in Parfaedia, but also it’s like the only magic school we really know of, so there’s not that many options. I mean I suppose the Vanilla Kingdom might have something like that up and running, but usually the Cookies I get requests for don’t live there or I forget that they do
Also I kind of forgot about the whole “is Strawberry’s sister thing”. I don’t really know if she’s younger or older than Strawberry either
Anyways, on to design stuff
So she gets her name from rhubarb pie, since it’s a pie made of vegetables. Also the more common pie with rhubarb is strawberry rhubarb pie, and apparently their sister is supposed to be Strawberry, so it works as a companion name (even if Strawberry isn’t actually made of strawberries)

So as you might tell from the sketch, she wasn’t originally supposed to have a witch hat and she looked somewhat different, but I had the idea that she was a magic professor in my head, and so I decided to just give her a big witch hat. Also it differentiates her more from Blueberry Pie
Honestly I do wonder if I made her “pie” enough, since it’s really just her hair. I mean I suppose Blueberry Pie doesn’t have too much pie in her design other than hair as well, but she also has that sort of pie pattern going on on her dress. I tried to incorporate the design onto Rhubarb’s dress, but it didn’t look right with how I posed it, so I just went with the rectangles that are meant to look like rhubarbs (which I think might look off but whatevs)
I did try to incorporate rhubarb into her design though, with the dress pattern, the reds and greens and the red eyes, the frill and obviously the rhubarbs in her arm. Hopefully I did a good enough job
Overall I think her design’s pretty neat. I feel like something might be off but overall it’s pretty good
And yeah, that’s Rhubarb Pie, I hope you like her

Growing a tea garden?
Full disclosure, I once had an actual Camellia sinensis tree that I loved dearly and flowered for me and was such a joy. But I misunderstood some aspects of taking care of it, and after 2 years, I lost it, which was tragic. I've yet to find another one in an in-person shop near me, so I remain tea-less, technically.
BUT, last summer I found out that there's something called New Jersey Tea. Which, despite the English name, is native to a lot of northern North America, including my own area. And native planting is always a thrilling bonus for me.

Perfect for a combo native prairie/English cottage garden vibe that's going to go well with all our fruit plants. Being native it's not fussy and I can mostly plant it and forget it, which is ideal. Plus it's a pollinator favorite.
There's a sort of mostly-dug-up garden along the back porch because the previous owners took some apparently massive rhubarbs with them. It's a sunny spot with some decent soil, so a good spot for a garden, and plus then you'd be hanging out with these nice, aromatic plants.
Supposedly, when it's fresh the leaves have an almost wintergreen taste, but when dried it tastes like a spiced black tea. It has no caffeine. It was also supposedly a huge favorite during the US revolution, when tea imports were difficult.
So, then I started thinking about what OTHER plants I can use for making tea that will grow in my frigid home climate.
Canadian Ginger

Just like now New Jersey Tea has no particular relation to Camelia, this is nothing to do with the tropical grown ginger, which is the ginger you probably think of. BUT, it has a deeper ginger taste.
Swamp Mallow Hibiscus

So, again, you think of Hibiscus as being tropical. I only thought to check because one of my neighbors has a bigass deep red hibiscus that's been flowering away every summer for years. Apparently it's some kind of hybrid situation that lets them grow here.
I thought this sort of coloration would look better with the kind of garden I've got going, since I don't want to look tropical.
I adore hibiscus tea. It's tangy, it's colorful. It's refreshing. but I'll be honest, I haven't been able to find any reviews of what the flavor of these hybrids is. If you happen to know, please pass on your knowledge to me.
Fireball Bee Balm

This may shock you, but bee balm is another very pollinator friendly plant. I'm looking to get the fireball type specifically because I like this crimson color. the more common colors are between lavender and hot pink, which are not so much my jam. Plus, it's another native plant to my area!
They have the added bonus of being on the short side, and bunnies don't really like them, so they can form a perimeter around my tea garden to protect the other plants. We have a serious lack of predators in my neighborhood and the rabbits are OUT OF CONTROL. Last winter they ate every one of my cherry shrubs and my entire raspberry bramble down to the ground at the old house. I don't know what we need to do to get some birds of prey over here but we could use them.
Bee balm flavor is a little mint, a little oregano, and a little bit citrus, so that's a natural for tea.
Rose Hips

Apparently you CAN look up which kinds of roses have the tastiest rosehips! Rose hips are the seed of the rose, are in the same botanical family as apples. These are a few of the tastier heirloom varieties I've located. I likely won't plant all three of them. My porch isn't that big and I want to leave a lot of room for the new jersey tea.
Rosehips are lightly floral and tart/citrusy and are a fantastic source of vitamin C. You can of course also eat the flowers, but I don't plan to. My grandma always wore tea-rose perfume and I don't really want to drink a tea that feels like drinking how gramma smelled.
The two lefthand roses are both tree roses (from the middle ages!!), the one on the right is much more low-growing. So I suspect how I end up arranging these will determine which we get.
Anise Hyssop

Proper anise (the flavor for licorice) also doesn't grow here, BUT, anise hyssop has a similar flavor from the mint family. Again, it's usually a purple or pink color, but I CAN find it in an apricot tone, which I love.
Dropmore Scarlet Honeysuckle

Native to IA, not MN but still in the general right biome and so pretty resilient here. I only found out in researching tea gardens that the flowers make for tasty, very sweet, lightly floral tea! I knew you could drink the nectar out of them but this was news to me. And, of course, they make everything around them smell amazing.
I have 16 feet to work with, so plenty of room for plants.
A few other plants that wont be in the garden proper are raspberries, whose leaves have a milder and easy to store version of the fruit flavor, and mint. Both of these though are tremendously prone to conquering any area around them, and so they need some extra containment. We don't really do year-round container gardening here because the roots freeze and kill almost anything. But, the boulevard between the front sidewalk and the street, under the big maple tree, is slated for mint seeding in the spring, and the side garden already has raspberries I'll tell you about on another day.
Chamomile, lavender and echinacea all grow here and are thought to make tasty and healthful tea but...I don't like the flavor of any of them, so they aren't invited.
