hey, hey now, I know the world is dystopian and overwhelming but go buy a pork roast okay? And a can of frozen apple juice and a jar of sauerkraut? Just breathe, trust me, salt and pepper the pork roast and then sear on all sides in a well-oiled, hot pan, okay? Then put it in the crock pot and dump the frozen apple juice and the entire sauerkraut jar on top, alright? Set it on low for ten hours, got it? Then invite some friends over and have it over rice at sunset and watch the birds in the apple tree, okay? I love you, have a wonderful time.

New Year’s Day Pork & Sauerkraut II
I came to blog my recipe then through a search, discovered I posted one last year! That was in the roasting pan though, and it was a pork loin rib half. This year, I put a pork shoulder roast in the crock pot... and made some dumplings 2 ways too!

I have mentioned how thankful I am that my parents returned home safely? Oh don’t get me wrong I’d be thankful regardless if my mom made this or not, but it certainly isn’t a bad thing. Definitely, something to try making yourselves especially if you are a slow cooker/crock pot household. Pork Chops with Apples, Sauerkraut, Raisins, & Walnuts. You wouldn’t think so but trust me this works…it REALLY works. A combination of sweet and savory, pork that was literally falling off of the bone, apples so soft it’s like apple sauce 2.0, that and the Sauerkraut really provides all needed produce. A side of rice for carbs and it’s complete. Oh and by the way, those homemade brownies are just any homemade brownies. The recipe is from label on a can a Hershey’s Cocoa. A label that they don’t print anymore and haven’t for many years. My mom has saved that can for a long time and the recipe to no surprise still holds up. I made myself a Brownie Sundae. What do you eat Sauerkrout with? Is it like coleslaw?
sort of! the german tradition is sauerkraut and a pork roast, but i’m not a fan of the pork. my family cooks it in a crock pot for like 6 hours with lil smokies and makes mashed potatoes which is what i’m doing! i prefer to eat it hot, but you can eat it cold like cole slaw.

These pepper are absolutely delicious on their own and don’t need much else added. White rice can substituted for cooked brown or wild rice, or barley.You can add in chopped cooked smoked bacon, smoked chicken or smoked sausage, Polish kielbasa or andouille, for a smoky flavor.Carrots and celery can be skipped or complemented/substituted for other vegetables of your choosing, e.g.You can use beef only in this recipe but the peppers will be less ‘melt-in-your-mouth’ tender.Drop the temperature to 325F and cook for another 2 hours. Add the peppers, cover and cook at 350F for 1 hour. To cook in the oven, grease a Dutch oven with some oil. Add the stuffed peppers, cover the pot with a lid and cook on low for 2 – 2 1/2 hours. This will shield the peppers from direct heat. To cook on the stove, take a large pot, or a Dutch oven, grease with oil and cover the bottom with a layer of sliced onions or cabbage leaves. If you don’t have a slow cooker, you cook the peppers on the stove or in the oven. Just be careful when cooking them longer – they will be very tender and prone to breaking apart, yet so delicious. The longer you cook them the better the peppers will be. Next, we will stuff bell peppers with the stuffing mixture and cook low and slow in a Crock Pot for several hours, until the peppers and the stuffing simply melt in your mouth. We will let the meat stuffing cool down and then mix in the cooked rice. This cooking process will get the most of the flavor from the vegetables and the meat. Cook for another minute or so.Īfter that, we will add the meat and the seasonings and brown it for 15 minutes, frequently stirring and breaking up clumps. Once the onions are translucent and start to brown, add the rest of the vegetables and garlic. We will start with the onions as they release a lot of water at first. To get the best flavor and taste, the meat and the vegetables will be browned on a skillet over a fairly high heat. While these peppers take some time to make, they process is really simple. The seasonings are very basic as well: salt, pepper and sweet paprika. Add some oil for cooking for completeness’s sake. All that you will need is bell peppers, minced beef and pork, onions, carrots, celery, fresh garlic and white rice. This recipe uses very simple ingredients. They kind of remind me of chili in pepper bowls. Thirdly, the ingredients for the stuffing are pre-cooked in a skillet, which gives them a lot of flavor.įinally, the stuffed peppers are cooked low and slow for hours. They also make the stuffing incredibly juicy. Onions add sweetness and a lot of flavor. Pork makes the stuffing taste richer and juicier. First, it’s a combination of pork and beef. Tonight's delight: some soup I put together in the crock pot, with most of leftover New Year's pork with sauerkraut and potatoes. (That's dried dill on top of the sour cream, since we don't have fresh.) Plus some cheesy garlicky biscuits.
I hadn't tried making any sauerkraut soup with leftover cooked stuff before, but I didn't see why not and it turned out pretty good. Put some onion, celery, and carrots in to slow cook on low while I was asleep, with some chicken broth out of the freezer. Then added in the already-cooked stuff later, along with part of a kielbasa we had left in the fridge after browning it a little.
I didn't use any particular recipe, but this one looks pretty good. Maybe with some marjoram added.
Maybe the best part was the biscuits, though. Anything from that blog is liable to be good, anyway. These called for at least twice the butter I would normally use but the results were awesome enough that I'm tempted to try her regular drop biscuits version too.
I also ended up using dried parsley here, but it works fine. (ETA: Also white cheddar, since that's the default here.) Those did turn out a little dark on top with the cream brushed on, but they definitely didn't taste burnt or anything.

Just kidding - it’s going to be the same old stuff.  I’ll be screwing up crafts, cooking mediocre food, and leaving chaos in my wake.   I’ve got a couple of nifty things to share, but first I have to snap some pictures and watch the new season of Grace and Frankie.  Just kidding again, I’ll snap some photos tonight and post a few things tomorrow.  I will be binge watching Grace and Frankie because I’m all alone this week.  The baby and her mama flew out this morning and so did the mister.  His flight left about an hour and a half after hers but I dropped him EARLY so that he could lend a hand getting the stroller and bags through TSA and all that.  Wish I could share the selfie that Grandpa and Little Miss Magic sent from the airport, it was hilarious. I totally respect their wish to keep her off social media platforms, but it’s awfully hard when you have the most adorable grandchild ever born. Anyyyywayyyy, that’s what’s up here in Mt. Juliet on this Saturday in January.  It’s been raining all day and there’s a chance it will turn to snow.  I’m not even trying to hide my excitement about that possibility. I have my hat and gloves ready.  If we get more than a dusting I’m making a snow cat.  We probably won’t get enough for a full blown snow man. It’s not yet 3 o’clock and I’m nearly ready to call it a day.  I’m sleep deprived right now and the gray weather is making it hard to stay awake.  I’ve got a pork roast and sauerkraut in the crock pot for dinner - I hope I last that long.  I should probably do some chores to stay alert but I think I’ll snap those photos instead. Until tomorrow, boys and girls - sending out love and doing a snow dance. XOXO

Day 1 of OMAD
Drank one cup of coffee this morning at 7am and fasted until 4pm. Dinner was a yummy pork loin cooked in bone broth and sauerkraut for 6 hours in the Crock-Pot.
Starting weight was 183 as of yesterday, I was 175 before I left from my trip 3 days ago. The Renaissance festival was not good on my diet unfortunately but I have no one to blame but myself. Oh well, that's why I'm back to low carb and OMAD!

Good luck pork n' sauerkraut for a proper Yinzer new year! Did in the oven in a roasting pan instead of the crock pot this year. Pork loin rib half cooked up nicely. Might blog the recipe later. I used @straubbeer, apple juice, spices, mustard powder, golden crisp apples, & a Spanish onion. Added brown sugar after cooking. Steamed green beans, added parmesan cheese and butter.
