Additional step not specified: put the peanuts in a baggie on the counter, and fairly lightly whack them with something heavy. My original idea was just to knock more of the halves apart, but if anything the little bit of crushing is a nice bonus.
First batch is currently in the oven. That dough did taste really good when I had to try a smidgen.

Jimmy Carter Cookies
Local community cookbook, Scranton Russian Carpathian Greek Orthodox Diocese. Has no date inscription definitely after 1977 when Jimmy Carter became president. These cookies were tasty, I did add extra peanuts n honor of President Carter may he rest. The cookies tasted like peanut brittle!
Next baking project sorta underway! I am currently waiting for the butter to soften.
No actual connection to Jimmy Carter that I can tell, other than the inclusion of peanuts.
These are otherwise pretty simple oatmeal cookies full of peanuts, and they sounded really good. We also currently have a buttload of peanuts and a fresh bag of oatmeal. I even picked up some moist dark brown sugar yesterday.

Only going for half the recipe and planning to make them pretty big. There's no way in hell we need 6 dozen cookies at a time. If it still looks like too much dough, I may freeze some unbaked cookie blobs ready to go for later.
This is also getting the wooden spoon treatment, because the stand mixer is more trouble than it's worth for a cookie dough like this which doesn't really need extensive beating.

And some very badly plated for myself, as usual. (Zucchini in a separate dish.)
I had to go back and get a little extra garnish cheese for the pasta itself. Normally I would want a little extra side sauce to add on, but we were sorta low in the sauce department tonight. It's fine.
And yes, that spaghetti was preemptively broken in half before cooking. Only because Barilla is one of the brands where their GF long pasta actually tends to break up LESS that way, while you're just cooking and eating it. Theirs is not the worst for that, and the stuff's flavor and texture are otherwise fine. Garafalo is the least likely to come apart that I've found, so of course nobody seems to be selling their GF spaghetti or linguine locally.
Nothing wrong with breaking it just because you want to, of course. I just rarely do want to, and evidently needed to complain into the ether. 😒
Very tasty for the amount of effort involved. Glad I did decide to go ahead with the plan.

When Mathem life brings you slightly abused zucchini, you fry up some squash sooner than intended! This is from one overgrown specimen, minus at least a quarter of its skin. Can't bitch too much, when they're selling it by the piece.
We also got more and larger green onions than anticipated, so I guess this batch is getting giant green onion instead of the usual storage kind. About to add some chopped garlic in a minute here, after more of the liquid evaporates off. Also involved: olive oil, and some Tony's Creole seasoning he picked up.
I like oil versions just as well at room temperature. So, getting this ready first.
The rest of tonight's plans are a little jankier, but should hopefully taste good anyway.
With some of that GF breaded chicken, I decided to go for lazy parmigiana-ish. Haven't had anything like that in a good while.

That is obviously not proper Parmigiano (which we do have a block of in the fridge). But, the pregrated Grana Padano was on sale, and frankly probably better than this concoction deserves. We also had less jarred pasta sauce left than I thought, or I would have bought more. Current plan is to take about half the jar, and bulk it out a little for the chicken with that open carton of passata plus some quick seasoning adjustment. The actual pasta can get the rest of the original sauce.
