What do Herbert's experiments represent?
In Bride of Re-Animator, we see a variety of experiments Herbert has created, outside of his initial work in reanimating corpses, and there are a few separate moments where we see the actual process of these experiments in action. Surely these experiments have some kind of meaning to them, right?
But what could that meaning be?
First, let's talk about the finger-puppy or eye creature, whatever you wanna call it... I like to call it finger-puppy.

Finger-puppy consists of five fingers and an eyeball that Herbert likely acquired from the hospital they work at. He unveils these laid out pieces to Dan, excitedly showing him as he assembles the pieces together and uses his reagent to bring it to life.

I think it's important to note Herbert's demeanor here in this scene. First, he is excited and eager to share this with Dan. So much so that he lays everything out like a presentation, neatly organized and ready for assembly. He had intended to show this to Dan, he had planned this moment out.
But throughout this part of the scene, he is mostly focused on the task at hand and not what Dan is trying to talk to him about.
Everything leading up to this moment also indicates to us that Herbert is in good spirits, he seems happy and content. He spooks Dan from behind the wall and laughs, he excitedly explains how they practically share a wall with an old crypt in the cemetery, and even when Dan stops him to talk (to ask what he did with the last cadaver, to which he simply says he was 'finished with it'), he determinedly shows off the progress he's made on their 'work', and then ends on displaying and constructing his finger-puppy experiment in front of Dan... which then prompts Dan to finally drop the ball about how he wants to move out, and Herbert looks up at him, confused. When Dan reiterates his statement, Herbert loses any excitement and happiness that was present just moments before, now seeming upset.

This is a great scene to show that Herbert has been content and satisfied with their work lately, but also that his focus has been so primarily on that work that he's been neglecting Dan's concerns and needs. He's also still using misdirection when Dan asks him questions, manipulating him by bringing Dan's attention back to their work so he doesn't have to explain himself about the cadaver or why they would need to block the hole in the wall.
Dan isn't stupid, so even if he has gotten caught up in the moment by what Herbert's doing in the past, he likely realizes later that he didn't get his answers and that he'd gone back at square one in trying to address things. In this particular instance, Herbert's misdirection doesn't work, that's why Dan is able to relay information Herbert is stating right back to him, because he's heard it before and understands it. He's not fooled this time, and is determined to just get to the point of telling Herbert that he wants to move out.
And this scene really set all that up perfectly, ending it off with Herbert's newest experiment, through bringing life to mere parts, hence the finger-puppy.

While I don't think this is the first time he's done this kind of experiment (he'd been collecting parts before this, after all, and also purposefully lied about why they needed to block the wall to the crypt), it's important to note that he is presenting it to Dan here and wants to see what he makes of it. Not just the finished product but the entire process, how he constructs it, applying the reagent, and then watching it come to life.
This seems to be something he wants to share with Dan specifically, whatever the experiment itself represents for him.
Now, fast forward to his other experiment where he connects a leg to an arm. The scene makes it clear that the experiment itself isn't as important as Herbert's motivation for conducting it.

In this moment, Herbert has been left in the basement alone after working with Dan because the doorbell rang and Dan went to answer it. Dan had forgotten he'd invited Francesca over for a date and they would be cooking and eating a meal together, so he stopped his work with Herbert to go enjoy his time with Francesca.
Herbert is clearly shown to not appreciate this, as the scene starts with him frustrated and annoyed, seemingly unable to focus on whatever work he's doing. He doesn't like that Dan's attention was taken away from their work and now that he's stuck down there, he has the thought to connect these two parts together, seemingly on a whim.

Throughout this experiment, he consistently stops to look up at the ceiling, indicating he's extremely aware of Dan's activities upstairs.
What's also interesting is that, unlike the finger-puppy, this leg-arm experiment is not given much focus from him at all. He's very distracted by what he is assuming of Dan's activities upstairs (which he obviously can't see or hear from where he is in the basement, but he can guess pretty easily). This lack of focus shows that this experiment has absolutely nothing to do with his work, it's not really about creating life at all, it's meant to be a distraction from how he feels about what Dan's doing without him. He also goes from tinkering about with the experiment to aggressively pouring the reagent on the combined body parts, the aggression matching his growing annoyance at Dan's behavior upstairs.

And after Herbert completes the leg-arm experiment and it retaliates against him, he immediately shoves it into a biohazard bag and tosses it into the crypt to get rid of it.
We see later on in the film that he must have been doing this kind of thing a lot because the crypt is full of these experiments, these bizarre amalgamations of parts. And considering his insistence on moving the metal cabinet in front of the loose bricks to the crypt that he was purposefully using to dump these experiments, it also means he's hiding these experiments and wants very little to do with them.
And also considering he showed Dan the first one he made, this means that the rest of these experiments are specifically being hidden from Dan.
So what does that say about the first experiment, the finger-puppy? Why was it so different from the others? If the leg-arm was merely a distraction to avoid his feelings in the moment, and he's purposefully hiding this from Dan, then what does that mean?
Well, not counting the finger-puppy, he's been hiding these experiments, and hiding implies shame. He's not proud of this particular work, it doesn't technically add to the overall work they're doing (it's something superfluous) and it was initially something he was happy with until Dan showed distaste for it and then almost got them in trouble with a cop. So it needs to be kept hidden so they're not both seen as suspicious, but Dan already knew about the first experiment, so he doesn't need to hide it from Dan.
And yet, Herbert doesn't want him to know about the other experiments. He can't let Dan see evidence of these experiments lying around with their shared work, so he hides it in the crypt, and this is either because he doesn't want Dan to be disgusted again or because he doesn't want to bother him with it.
This puts a whole new perspective on what these experiments represent, because Herbert's actions regarding them are always specifically about Dan. The first one, he shared with Dan excitedly, the next one, he was jealous about Dan leaving to spend time with someone else, and after that, he apparently added a human arm to Francesca's dog for some fucking reason, likely as a thoughtless retribution of sorts considering Dan and Francesca spent the night together. All these other experiments are hidden away from Dan, meaning they occurred when Dan wasn't around, which further implies their existence stems from Dan's absence, and especially in Herbert's feelings about Dan.
A very long-winded way of saying it, but, yes, I think these experiments are a representation of Herbert's romantic feelings and interest towards Dan. It's why he's so excited to show him at first, why he's upset that Dan is bothered by them once he knows about them, why he's so quick to hide them afterward, why he gets angry when they retaliate against him, and why he calls them "rejects" and mistakes. He's ashamed that he has them at all, despite the fact that he can't seem to stop himself from making them (and also never chooses to kill them, he just hides them away instead).
And coming back to finger-puppy again, it's interesting to note the natural curiosity and slight mischievousness that's very prominent in this little creature. It seems to want to wander and explore, something very different from the other experiments who seem to want to attack Herbert directly.

Maybe it's because it's so small in comparison and therefore mostly harmless, but finger-puppy seems to represent a more hopeful and positive concept than the other experiments. And if these experiments are representations of Herbert's feelings for Dan, well this little finger-puppy could probably be compared to a crush, or the initial spark of romantic interest, something small and simple that doesn't mean any ill-will.
But Dan rejects it outright and calls it "morbid doodling" when he sees it. And then, immediately after, he tries to shoo it away and get rid of it when the cop shows up at their house. Dan himself has to act suspicious to try to keep the cop from noticing this thing running around wherever it damn well pleases, and eventually Herbert picks up the book the cop slammed down on top of the creature to see that it had been crushed to death.

Hell of a way to show that someone's hopes were dashed.
So if Herbert then keeps up these experiments afterward, not really focused or thinking about them as they happen, and then wants to remove and hide them once they've come to life, it could imply these experiments are coming from his own emotions bubbling over, combined with carelessness and whims that match those emotions, all things that have no place in their work in reanimation, and yet he can't seem to stop himself from making them. The more they keep popping up, the more he has to hide them, after all, so why not just stop making them...unless he can't?
Working under this assumption, this could mean that these feelings for Dan refuse to go away and also that Herbert doesn't exactly hate them (or that he doesn't want to outright kill them), but he still sees their existence as a mistake. He doesn't want these feelings because Dan didn't want them from him and they don't actually contribute to their work anyway, right? He believes the science should be more important, so why does he keep coming back to these pointless experiments unless he can't help it? After all, it's not like you can just will emotions and feelings to go away if you don't want them. It just doesn't work like that.
And, of course, this all eventually culminates in the whole lot of Herbert's experiments getting out. Notice that the scene in which these experiments get free and attack (mostly) Herbert only happens after Dan rejects the Bride that he and Herbert worked on together throughout the film.
It's not until after the Bride starts to come apart that Herbert's experiments get loose and shit really hits the fan. Despite thinking he could be proud of their work in creating the Bride, once Dan rejects it and calls her a monster, Herbert is quick to agree that she's just a bunch of parts.
But...well, so were all his experiments this whole time, right?
The only difference was that this one was supposed to work - this one was supposed to appeal directly to Dan, to give him what he wanted. But, in the end, he said he didn't want her, and that likely means that he couldn't accept what Herbert could give him, either.

It's been said before, so this isn't a new concept, but the Bride being Herbert's way of expressing his feelings for Dan makes a lot of sense. And alongside my theory here, I think the Bride really was one big, intentional experiment, and maybe leans to why Herbert takes so much ownership of her ("I made you!") up until the moment that Dan rejects her.
Dan's reason for rejecting her simply being that she's "not Meg" also doesn't bode well for Herbert, either. He can't be what Dan wants, so nothing he does will ever work to change that.
Harkening back to the scene near the beginning of the movie, where he asks Dan what it was he loved about Meg, this ending moment shows that it didn't matter what parts Herbert tried to use or recreate, he could never give him Meg back and he could never be her for him.
And it's a sad ending to the movie, emphasized by Herbert's experiments all attacking him at once, as though knowing he can't escape them, falling to the consequence of those actions. Sad, but telling, because if those experiments represent his feelings for Dan, then that's a hell of a way to go out, succumbing to those emotions.
All in all, I think it makes sense to interpret Herbert's experiments throughout Bride of Re-Animator as a representation of his romantic feelings for Dan, and that the creation of the Bride itself was a genuine attempt for Herbert to appeal to Dan in that way.
The Bride's sole focus on Dan appealed to what he wanted, what Herbert wasn't giving him before. The desperate scream of asking Dan "then what do you want?" certainly lines up with Herbert's misunderstanding of their situation, not understanding why his methods didn't work. And going so far as to pull her heart - Meg's heart - out of her chest and offering it to Dan, paralleling Herbert's actions earlier in the film, can be seen as Herbert's efforts to do so much of this for Dan and it all going to waste, simply because the Bride - and Herbert - cannot be Meg for him.

Free pass to rant about blorbo opinions. I have SO many blorbos [if I must] but I suppose I'll go with Dan Cain for now. He's Jewish, for starters, because I love the idea of that making H.P. Lovecraft rapid-revolve like a rock-tumbler of b*got bones in the afterlife, but also because I think there are a lot of qualities about Dan that point to Jewishness, like questioning/going on a journey of faith and looking both without and within for answers in that regard [which may sound like most kinds of faith, but - defiance and query, the pursuit of knowledge, are all very Jewish to me], as well as a kind of being "othered" in subtle ways by people around him - although some could allege that to strictly queerness.
I also see him as someone desperately seeking validation due to being orphaned early in life. He's directionless if he's not helping other people, and the intensity of his desire to save folks in his job as a doctor is far too heightened - a savior complex that severe doesn't come from outta nowhere. He's also bi, all of which can be found in canon imho.

Plot Description: during the Crimean War, the Doctor discovers the British army fighting a brutal alien army of Sontarans, as Yaz and Dan are thrown deeper into a battle for survival. What is the Temple of Atropos? Who are the Mouri?
Please tell me we’re not introducing even more concepts into this already really weird and overly crowded season
I guess since this dude has been out in space and o have no idea what time he’s from, it might make sense for him to not be disturbed by a floating terrarium filled with light barking orders at him (looks like HE is in the temple that holds the Mouri)
Thought Dan and Yaz were being erased a la Back to the Future rules but turns out they’re just taken to some other point in time
Oh now Yaz is in the temple and Dan is in a changed present where the Sontarans have taken over….hmmmm several people are outside their time
“I have Queen and country on my side. That is all I need” Wrong! You need god and anime and the Doctor
I don’t want to spend more time than necessary with the Sontarans but their philosophies are interesting. It’s very absolute and centered on death. Mercy is a quick death
Really thought the Sontarans had carried through from the Crimean War to present, not arrived again two days ago
Gonna go out on a limb and say that repairing the Mouri is not going to be a task with a positive impact. Yeah…Yaz is already suspicious of it
Dan gets kidnapped by an alien one time and thinks he can handle any alien thing the universe throws his way
This British general is an absolute idiot letting his troops fight the Sontarans
At least we’re condensing things a little by bringing the formerly imprisoned alien to the temple where Yaz is
I can’t see a Sontaran door and what they use to open them and not think “Donna, you have three fingers”
Oh shit. He just disintegrated one of the Mouri
(Meg chooses the worst times to smurgle so close to my face)
Is that known lore about the Sontarans?? That they need to rest in their ship every 27 hours to replenish their suits to circulate the gases their planet has?
I hate this general so much. Could have just let the Sontarans leave but decided to blow up their ships as they tried to
Dan is such a random sort of companion. Like, I know they’re all a little randomly selected but Dan is even more so, it seems

From the beginning, you had assured Herbert that you wouldn’t be getting in his way. He didn’t say anything to make you do it, but he acted well and fine to make it clear that something had to be said.
Even after a couple months of you showing up, you felt the need to stand toe to toe with him one day and assure him that Dan was your only concern, being a friend from work. “Nothing more than that.” 
The subtext in the back of your mind that murmured “If I can help it.” felt like an open secret, something you couldn’t hide even with it being locked in a deep thought that you’d choke on before letting come forth -- especially to those scrutinizing eyes.
When his jaw only squared at the comment, you added that you weren’t stupid and knew a jealous stare when you saw one. “Really, I don’t want to distract him from…” You gave him a quick glance up and down and huffed, “Whatever you and him do outside of work. I’m well aware that it’s none of my business.”
Jealousy was easy to feign, call it an irritation rather than a burning hope that loomed overhead like an old lamp that held decades worth of dust and buzzed until your head pounded. Herbert didn’t know how to admit that needing Dan’s attention wasn’t why he gave you two such awful looks.
He wanted yours, too. He wanted both of yours, but that was no easy thing to even begin to put into words. All that he knew was that it was the reality of the problem between the two of you, and that it only got worse after he walked in on you and Dan.
Seems that you couldn’t help it after all.
You had to do a lot to make a scene jarring to Herbert West, but what he was witnessing from out of sight was enough to make his expression pull back in shock. At first, he didn’t understand what you were doing sprawled out on their sofa. It seemed that you were here on another uninvited drop-in, your head thrown back over one arm and your lower half covered by the blanket that usually rested over the other one. You almost looked asleep, and he was about to barrel in and throw the pen in his shirt pocket at you before your shoulders suddenly pulled forward, and you gasped through an open mouth. All in a way that was too intense to belong to an unconscious person.
It was then that he connected the legs poking out from underneath weren’t yours; the body they belonged to hidden from the waist up and kneeling against the side of the furniture, because he was just too damn tall to stay up there with you. Long fingered hands were coming up from underneath to hold your ribcage in place while you shivered under a force that wasn't hard to place. It was enough to make the exhale fall to the bottom of his chest, and then sit there as he turned back from where he came.
Dan’s recognizable voice emanated from under the scratchy fabric, raw as he came up for air from an act that anyone could put together. “You’re so pretty, I c- I can’t-” He cut himself off, your knees twitching underneath the blanket as you fought against a long, dragging moan that seemed as though it’d shake the walls from its volume. The slam of the basement door should’ve been enough to pull the two of you from the act, but when it wasn’t the other man had to bite his tongue again.

You could tell by the way the energy between you and Herbert had seemed to worsen overnight as indication that he'd seen what had happened. Again, for someone who was so acclaimed and quick to seclude, he sure liked to let you know just how badly he disliked you.
Despite this, you still rapped on their front door. “Come in, [Y/N]!” Dan called from inside, and you tried to ease the nervous knots that were making your body stiff by giving one last look off their porch and reminding yourself you were there for him and him alone. The more you wanted to just be friends with his roommate, though, the more that seemed to fall to the wayside. You were slipping into a pattern where it felt as though when you came over, it became a group effort. Even if he was just there to give you offending glances, it was like what was once a couple’s space had just enough room for three.
“Dan?” You faltered at the door, only holding the open edges of your jacket before taking it off, “Where are you?” A part of you found yourself even debating calling out for the other one, but a looming awareness that he didn’t care made you only suck in a breath, the name Herbert slipping off your tongue, back from whence it came.
In a beat, you recognized a shadow coming from the kitchen, but before you could call out again it bolted in. You were about to smile, thinking it was Dan with a spurt of energy trying to freak you out, get you riled up to goof off with him – but then you saw more than two arms on a human torso standing opposite the room from you and your stomach felt as though it had hit the deepest pit of your body.
As it approached you, you could clearly see the figure in all its glory. Still a little bloody and absent from the torso up – but it was making up for that with not two arms, not four – but six arranged in an almost haphazard fashion. They were slapping against each other, confused in their movements, and feeling to make up for being unable to see where they were going. You took one step back from it, sole rocking on a creaky floorboard, and suddenly the thing sprinted at you again, finding you out from either the audible sign or even feeling the vibration of the wood under its feet.
You bleated out, “FUCK, DAN!” Mind racing, you shot in the other direction, and then said the next name that came to your mind, something you hadn’t even realized until it sat on your tongue. It had returned just as quick as it had tried to hide, painfully on point with the character that came with it. “HERBERT!”
You spun on your heels a couple times, trying to find one of the corridors towards the back of the room but stopping dead in your tracks when the body froze. You could see it turning in every which way, feeling the wall closest to it and swatting miscellaneous objects off the side table against the wall, something cracking loudly against the hardwood. Your breathing was shallow, seeing the stitching was shockingly neat.
Only a doctor would be able to do it.
Dan’s narrow frame caught in your peripherals, and you turned your head slowly to look at him. Your eyes grew hard, giving him a slack jaw and a shake of your head. You glanced back at the fumbling body, and then mouthed at him ‘What is this?’
He opened his mouth, a world of explanation flashing behind his glassy green eyes, but quickly shut again when the creature took a step towards you. In a rough impulse, you bolted across the room yet again in an attempt to get away from it, barely able to breathe from the terror alone.
“[Y/N], over here. Come over here.” Dan stood close to the wall, one arm outstretched towards you and the other holding out to the body, like he would be able to do anything if it tried to run at him. Still, he spoke to you like one might speak to a baby animal, not an edge to it despite his expression fixed on the cadaver and breath hissing through his teeth as they struggled to unclench.
You took one faltering step, another sealed fate coming in the form of one of the six arms shooting out with a newfound precision and finding your shoulder. It grabbed you with enough intensity to make your vision flash white. The voice was taken out of you, every muscle flinching in a searing pain as its nails dug into you and it didn’t hold back when it pulled either.
Your muscles tightened at the force, and the noise that clawed its way out of your mouth in a choked gasp finally made Dan shoot forward and shove the body backwards. “Fuck-!” Your arm tucked against your side, cramps overtaking everything and making you let out a clumsy shriek as the body tripped on something it had displaced, falling backwards in a dramatic fashion and hitting the ground with a resounding thud that shook the house again. “[Y/N],” Dan whispered as he took a hold of you by the shirt, avoiding your arm entirely as he pulled you from where you stood and the both of you took one look at the back of the sofa before booking it.
When you were settled behind the furniture, listening for the thing to regain its senses and attempt to search for you, you spat under your breath, “Is this what you do when I’m not here!? You raise the dead, make whatever the fuck that's supposed to be!?”
Dan shook his head slightly, stammering, “I-I didn’t make it, [Y/N], Herbert-“ He trailed off again as you heard the other man slide in next to you, hiding behind the back of the couch. “Why?” You barked. Dan’s mouth opened, but another crash from across the room made him close it for a third time, trying to duck further down.
“Because I had to see just how many separate body parts could be added for a collective consciousness to merge into one.” Herbert answered for him, making you whip your head from one to the other. You persisted, almost like a child would but meeker in the way you spoke to that critical stare, “Why?” Glass shattered, raining over your head as Herbert replied, “Why not? To see if I could do it.”
You wanted to say something smart, ‘Well, you did it!’, but he was looking at you with pursed lips and a careful furrow of his brow – not in any sort of scorn for once, but for worry as he saw the way you were holding your upper arm.
Finally, you shook your head and looked at the ground, gently knocking your head back and then letting your eyes lock onto the ceiling. The throbbing in your shoulder was not helping, arm shying away from even the awareness that Dan was close to your side, and the thud of the body hitting the wall in a stupor only made you realize you could very well be killed by it.
At least I die here- The thought was smothered when you felt Herbert’s hand shoot under the sofa, looking for something. Your eyes fell down, Dan soon looking with you. “What-” The taller man began, but you flinching at the sight of a pistol made him jump, as well.
“Jesus Christ, where did you get that?” Dan asked. You bit your lip as your hand instinctively went to your ears, feeling him get up and feeling the resounding bang that was anticipated. You even ducked into Dan’s side, his arm curling around you and clasping you against him like your lives depended on it.
Herbert stared for a pause, slowly lowering the gun again. “...It was already dying. The dosage wasn’t high enough to-”
“…This-” Dan shook his head, looking down and murmuring right in your ear as you slowly pulled your face out of his chest, “This doesn’t happen every day, if that’s what you think.”
You were silent, trying to give him some sort of affirmation but unable to even nod. Herbert then muttered, “It didn’t live long despite getting the regular dosage. Could the use of extra appendages have expended too much-“
“It could have hurt someone. Could’ve hurt [Y/N].” Dan interrupted him, eyes growing hard again as he looked past you and at him now, “It nearly dislocated [his/her/their] arm because we let it get out of hand, just like we always do.” Herbert glared back at him, but then looked at you for some sort of say in the matter.
That was a first. When you moved your arm slowly, making sure it was still functional at the least despite the surging pain causing your expression to sour, he gave up. Dan wasn’t finished, and added with a sharper tone, “I’d like to have one friend in my life that isn’t subjected to this madness, you know. What if it-“
“It wouldn’t have.” Herbert cut him off, “It was under control.”
“Yeah,” Dan nodded, sarcasm so thick you had to disengage again, “Yeah, you sure did.”
As they both continued to talk, saying something about how the body didn’t have enough re-agent to live long enough to cause significant damage, and that it was a strike of luck that none of your bones were broken when it had its hands on you, you let a thought possess you before any better judgement caught up to it. The terror had ignited the worry, the thoughts, and the bad idea that had been sitting in the back of your head ever since the first day you had met the two of them. It felt as though anything could happen, and that was what got you to turn to Herbert on your right.
Grabbing his jaw, you cut off the next paragraph that was about to come out of his mouth with your tongue on his, connecting in a brief kiss. Feeling Dan shift to stare at the scene in disbelief, you whipped your head around and pushed your lips against his just as suddenly, a shivering hand still curled into the other man’s shirt.
Pulling off of him, you murmured, “…Just in case I don’t live long enough to tell you that I love you both.” Your hands unclenched to release both of them, your entire form relaxed in the glow of feelings finally getting out to breathe, and the post-adrenaline dopamine encircling your thoughts like a hug.
For once, both of them stared in dead silence, and you couldn’t recall if you’d ever seen them with so much emptiness behind their eyes before. Usually, it was you who was lost on what to do, looking to them for the answer.
To see them looking to you for a change? The corners of your mouth quirked as your eyes bounced back and forth a couple more times.
You could get used to that.
