The soup I had is Turmeric & Lemongrass Broth; with Zucchini, Asparagus, Parsnip, Sesame, the Lemongrass & Turmeric. My balcony garden is growing again, so it was time to get some of the Basil, Rosemary & Mint and add it to my Daily Harvest Soup! 🌱 🍃 🌿 At first, the flavors weren’t too spicy; but as I ate more bites, the spicyness increased. The Culinary Uses & Medicinal Purpose of Rosemary

Rosemary is a powerful herb that originates from the Mediterranean region. Its name has been derived from the Latin "ros marinus", which means "dew of the sea", due to the fact that it was first seen growing along the Mediterranean coastline. Rosemary has been used for thousands of years in cooking & in medicine & it is famed for its ability to stimulate the mind, enhance the memory & improve concentration.

Rosemary is incorporated a lot in Mediterranean cooking where Rosemary is extremely pungent, making this herb favorable for meat dishes such as stews or roasted meats. It is an excellent flavoring for lamb, pork & chicken in particular. Rosemary is very strong in flavor & should therefore be used sparingly.

Rosemary is one of the few herbs that dry really well, due to the fact that it has a lot of oil contained in its leaves. Therefore, rosemary can be used fresh or dried in cooking, with equal results either way, of a strong & flavorsome taste. In some cases, dried rosemary is actually more pungent than fresh rosemary & should not be used as liberally as the fresh version, so that the dish is not overpowered.

Rosemary is typically used as a seasoning for lamb & pork dishes but there are also plenty of other wonderful possibilities on how to cook with rosemary such as use to make homemade stuffing or Add to soups to flavor. Mix with garlic & use as a seasoning for lamb or chicken or add to melted butter & pour over boiled potatoes & vegetables.

This month I’ll be sharing with you what’s in my basic cupboard essentials! So this morning I’m getting on top of what needs to be made as it’s all been used up! One I simply can’t live without now I’ve got my Thermomix - Homemade vegetable stock paste! You can see the amount of vegetables that have gone in! Spinach, mushrooms, tomatoes, carrots, courgettes, cauliflower leaves, herbs, sea salt, olive oil and dry white wine. Simple ingredients. Nothing in there I can’t pronounce! This will last me just over one month for about 500g worth. Shop bought versions contain a hell of a lot more salt and other additives. The taste is unreal and I use it in the majority of my dishes for a lovely depth of flavour.
