Thanks to my friend @interstitialblues for pointing out the @blazemovie soundtrack was on a @rachaelrayshow repeat this morning with @ethanhawke and @bendickeymusic. It was an absolute whirlwind year of design work and working on the packaging for this insanely great movie was a big highlight. Many thanks to everyone I worked with this year - it means a lot to help artists realize and package their dreams. Even more thanks to those who helped support me by lending an ear, a hand or whatever else to make this year one I will never forget. Pork Chop with Caramelized Onion Sauce 

Ingredients:

~4 tablespoons EVOO (eyeball it)

1 large onion (or 2 med onions)

5-6 fresh thyme sprigs (can also use 1tsp dried)

salt + pepper

2 large garlic cloves, chopped 

3 tablespoons balsamic vinegar (eyeball it)

1 cup chicken stock (I used chicken powder + water)

2 tablespoons butter

1/4 cup parsley (a handful)

Instructions:

Season pork chops liberally with salt and pepper (I used Lawry’s garlic salt).

On a skillet, drizzle ~2 tablespoons of EVOO. Add pork chops; cook for ~ 5 minutes on first side. Cook on second side for ~8 minutes, or until desired doneness. (I had really thin ones so mine cooked for 3-5 minutes).

Remove pork chops from pan and set aside on a plate. 

In the same pan, add another drizzle of EVOO. Add onions and thyme, and season with salt and pepper. 

Cook, stirring every now and then, for 10-12 minutes oruntil golden brown. 

Add garlic, continue to cook for 1 minute. 

Add chicken stock and vinegar. Bring to a simmer over high heat and cook until liquids have been reduced by half, about 3-4 minutes more. 

Turn heat off, add pat of butter and parsley. Stir until butter melts. 

Serve chops topped with caramelized onion sauce. 

Notes: 05/31/2022: Super easy to make! Prepped, eaten, and cleaned all within an hour. Served with a side of mashed potatoes (made from flakes lol) and steamed broccoli, but other vegetables could be used.
