ah damn
so here's an example of the difficulties of two specialized diets at odds
I got a bean and rice burrito meal kit because I'm trying to keep kosher so I'm picking more vegetarian things; I can have the cheese on the burrito because there's no meat right
the other thing i'm doing is low-fodmap. I knew I had an issue with guacamole, I can have like 1/8 of an avocado for fodmaps. But I figured the little single serve cup would be okay.
you know what I didn't think about looking up until after I cooked it? the beans. meal kit gave me like half a can black beans and a whole can of pintos, for two burritos.
I can have about a 1/10 of a can of either for fodmaps, and they have the same fodmaps so I don't want to stack them.
After having eaten half a burrito (so we're at... like an ok amount of black beans probably but a like double-treble the safe amount of pintos) I am now scraping the filling off so I can finish off the cheese tortilla will some rice on
This is so pathetic ugh
and I was told by the doctor that whatever blood test they did says I'm not celiac so I didn't need to worry about wheat, but I'm looking up what fodmaps are in a tortilla or bread and it's the same fodmaps as beans and like. I am remembering that as a child I always ordered double-rice-no-beans at Mexican restaurants and so far there's been so many things in the the low fodmap diet that like. confirm my preferences and comfort foods. so like maybe I don't gotta worry about gluten specifically but maybe I do actually gotta limit my bread??
anyway keeping track of this shit is exhausting and if I had been having like a beef or chicken burrito I probably woulda had a lot less beans to worry about? Meat is rarely if ever an issue with fodmaps but it's super an issue with kosher and i'm just. so tired

Finally I am starting cymbalta. I'm really hoping this medication helps me, i know with all meds it's a hit or miss. Soon a gene testing kit will be arriving, and I'm hoping I can get on financial aid so that's not too much of a whammy, and that way we can understand better what meds my body won't reject. This fight is exhausting, I definitely couldn't do it without my partner. 💛🥺🫂
I also want to look into aquatic therapy. My rheumatologist wants me to go physical therapy, but I read that aquatic therapy can be good low intensity for fibromyalgia. The only place I can think of that offers it would be the YMCA which I think would require a monthly membership. More stuff for me to look into.
Also, I tried gluten free pizza today and it was yummy, just wish it wasn't so expensive. I still need to look into gluten free foods, if you have any tips on how to eat gluten free w/o breaking the bank, please let me know. Thank you. 💛

KEEPER Pre Production organisation
I made sure I had a checklist of all the equipment we had. I booked out a room for Alex to check out all the equipment right before we start shooting, to make sure it is working and that everything is there. We also organised that we would be cooking for everyone as that would cut down costs than buying a separate meal for all the SAs, cast and crew. However, I had to take into consideration everyone's dietary requirements. I sent out a Unit list Google form, where people put their name, role, contact information and dietary requirements. Once I received the information we could decide on what to provide. We had nut allergies, gluten-free, vegans and vegetarians. So Alex came up with the idea of vegan chilli and he came round to my flat to cook it so that we could transport it on the day during lunch break. I struggled to book out equipment for this test shoot as it was overlapping with other groups and third years. We managed to source some sandbags and a polyboard from elsewhere. I also booked out walkie-talkies as we will be quite spread a part and I wanted to get the quickest form of communication with the AD's and production. I noticed that the kit store did not have a fold-up table we could book out. I had to source that from my friend as well as urns for coffee and tea to keep the cast and crew warm throughout the day. I also used the unit list information from the Google form to create a call sheet. When we met for the location recce it was sometimes unclear on the exact location of where we were meant to meet at Harrison Park, as it is massive and people got lost. I made sure to make the meeting point as clear as possible for everyone. The call time is 8am, but we have to factor in the multiple runs at the beginning, so I have to get up fairly early, next time booking a van will be more efficient.

helllllooo i've been gluten free because i'm intolerant at the very least and currently in the middle of getting tested for celiac disease. I'm here to bestow some ✨️knowledge✨️

So, I've know I am gluten intolerant since I was at least in my teens. I had a family practitioner tell me I'm intolerant because I have bad eczema (comorbid with celiac) and basically told me to lay off the gluten. I went GF in 2020 and didn't go back.
recently, i went into my gastroenterologist to complain of heartburn and was trying to get on prilosec rx so i could have insurance cover it. I mentioned I am GF and I mentioned some comorbidities and they scheduled me for a celiac blood test and a upper endoscopy.
you can mention it to your doctor. at the very least, you can ask for the celiac blood test. they'll probably want a metabolic panel anyway if you are visiting the gastroenterologist for the first time. you don't want to stop eating gluten until after the blood test is done because it picks up the antibodies caused by the reaction to gluten (i had to eat gluten again for a month before my test) if there is no gluten in your system, it'll skew the test. If you aren't concerned about celiac testing, then you can go gluten free and see if it helps you out! I was going to try out GF for a month but i ended up feeling so much better after a couple of weeks i just stopped eating gluten lol
GF diet -
There are GF alternatives for pretty much everything so when you decide to quit, there is Udi's brand for most breads. you'll find those in the frozen food aisle near the garlic bread. Udi's is what most restaurants stock too if they have GF options.
For pasta, there is Barilla. Barilla is my fave brand for GF pasta. Texturally, pasta was the hardest to find a substitute for but Barilla is the closest. The only drawback is it doesn't reheat very well. Pho noodles (the skinny glass ones) are made out of rice and are naturally GF as well.
Bob's Red Mill and Pillsbury make the best GF 1:1 flours for baking. I prefer Pillsbury for sweets and Bob's for rouxs and savory doughs like bread. Pillbury also has a really REALLY good GF pizza dough kit.
Besides that, there are bunch of GF recipes on the internet. you can also look for recipes labeled atkins because that is a carb elimination diet so they usually don't include any bread or sub out bread with like vegetables (like spaghetti squash pasta or cheese crisps instead of crackers) Steer clear of products/recipes labeled keto, however. That's also a carb elimination diet but all the labels i look at still have gluten in them in some way.
I can give you some chain restaurants that do GF if you want! I don't want to overload you with info.
