People love to shit on people that buy frozen meals for being unhealthy or lazy but I've never been able to stack five different coupons with a sale and get $23 off $19 worth of fresh meat, fruit or veggies.

TEXAS
2024 Apr 20 (Sat) – We went to Spindletop-Gladys City this morning.  It was the site of a big oil dig and the city was, at one time, full of well heads.  We went through a museum and walked the sidewalks of a replica old west town.  There was some kind of health fair going on and tables were located around the square with different organizations offering information about their particular health plans.  There was also a band playing on a raised stage in the middle of the square.
      We left with Joe & Diane and went to lunch at Floyd’s BBQ.  The meal was good and we brought home left overs.  Back at the campground, Diane made carnitas for dinner. 
2024 Apr 19 (Fri) – We both packed up and left Ledbetter at 9:05 a.m. after first stopping at the dump station.  It was a long drive to Beaumont.  We missed a turn for I-10 and had a heck of a time finding a route to Sam’s Club to stop for lunch.  We wound up taking over 5 hours to get here to the Elks Lodge.  We set up, took a short nap, then went into the lodge to pay for 2 nights camping.  We have full hook ups with 50 amp service.  The camping area (can’t really be called a campground) is a kind of mish mash in the parking lot.  Very un-improved.
      We had drinks, played shuffle board, and had dinner.  The exalted ruler reheated smoked ribs, chicken and beans.  They also offered potato salad, cole slaw, and bread pudding with a pecan sauce.
2024 Apr 18 (Thu) – We drove into Brenham at 11:30 a.m.  First stop was at Blue Bell Creameries. They stopped giving tours 2 years ago so we just stood on the second floor and looked down at the factory workers hard at work.  There was a museum area that explained the process for making ice cream and lots of pictures of the founders of the creamery.  It is still a family run business.  We then stopped at the counter and each got a scoop of their special flavors.
     Now that we had finished our dessert, we went out to lunch at Must Be Heaven.  It was a very eclectic restaurant.  You picked up a menu, got on a long line, and placed your order.  We then moved down the line where several employees behind the large counter prepared your food.  It was all pretty good.  We then took a walk around the quaint western town, admiring the many murals painted on the sides of the buildings.
      Sated and satisfied, we headed down the road to Koopers Distillery where we tasted different types of bourbon and a whiskey.  Paul bought one bottle and Joe bought two.
      At 5 p.m. we went to Joe & Diane’s RV where she cooked pork carnitas with lime rice.  After our meal, they taught us how to play Pegs & Jokers.  It was fun.
2024 Apr 17 (Wed) – We packed up and left Fredericksburg at 9:40 a.m.  It was almost 4 hours to Ledbetter where we are camped at Lake Sommerville State Park Nails Creek Campground (isn’t that a mouthful?).  We stopped at WalMart for lunch and Paul pulled over to the side of the road when he spotted a liquor store.  I ran in to get a replenishment for our libations.  We arrived at the new campground around 2 p.m.
      At 4:30 p.m. Joe & Diane and we drove down the road to a little barbecue place to get dinner.  It turned out to be something about the size of a broom closet with a huge smoker outside.  A woman sat at a window and took your order.  They only do sandwiches on Wednesday and Thursday.  Dinners are on Friday and Saturday.  We all got sandwiches.  The meat was good but they put it on regular hamburger buns, which were too soft and mushy.  Yuck!  After dinner, we played Rummy Kube.
2024 Apr 16 (Tue) – We went into town and had lunch at Opas Smoked Meats.  Joe & Diane met us there.  It was a kind of deli that also made sandwiches.  Paul and I both had chicken salad.  The bread was dry and crumbly but the salad was good.  Everyone wanted to walk the town but I was feeling woozy and went home to nap.  Every few months, I get that.  I think it’s the medication.
      At 5 p.m. we went over to Bill & Rhonda’s RV to join the remaining group of Cajuns (several have left) for a grilling.  We brought over chicken to grill.  Others brought steaks or burgers.  It was a very pleasant evening.  The sunset was beautiful with a bright red sky.
2024 Apr 15 (Mon) – We went to WalMart to pick up a few things.  My pedi-shaver and Paul’s shaver both quit on us.  We also got Sheba a new scratching post and a mat for underneath the cat box.  Still couldn’t find drawer slides.  *sigh*
      We did the laundry today.  For a resort, the machines were cheap!  Just $1.50 for washers and $1.00 for dryers.  It made me wish I had more laundry to do.  😊
      The President of SMART and his wife, Richard & Mary, drove in from San Antonio to join the group for potluck tonight.  We went over to visit with him at John & Kathy’s RV.  At 4 p.m. we went into the community hall for happy hour.  At 5:30 p.m. all the food was cooked and we shared a potluck meal.  Past President Willie and his wife Joyce also came in to visit.  It was quite enjoyable.
2024 Apr 14 (Sun) – We drove to Luckenbach this morning with Joe & Diane.  It is a modern day ghost town.  Three people live in the town but they have wooden buildings with shops, a large dance hall, and a stage for musicians.  The schedule is for music all weekend and there was a band setting up while we were there.  We got lunch at the one food truck in town.  It was far more reasonable than the food truck we ate at yesterday!  We wandered around the town, reading information plaques and memorial signs for those who started the town.  It was established in 1850 and closed in 1971.  Individuals have come along and made the town a tourist stop.  The lady who owned the hat store was from upstate New York and we enjoyed conversing with her about the poor state of affairs back home.  We then wandered through the general store and picked up a Christmas ornament.
      Our next stop was at Meierstone Winery.  John & Kathy know the owner and arranged for a tasting for a group of 12 of us.  I didn’t like any of the wine.  Paul bought 2 bottles.
      After our return to the campground and a quick nap, we went to happy hour.  Paul brought over the beanbag baseball game and we had a rousing competition.  It was fun.
      Sheba is doing better.  She, at least, is looking to eat again.  That was a pretty bad flare up she had.
2024 Apr 13 (Sat) – We ran into town to pick up a few things from WalMart.  Paul is still searching for 12” drawer slides.   It’s still the only size missing in all the stores we look in.  We stopped at the Auslander Restaurant for lunch.  It as a quaint German restaurant.  There were cuckoo clocks on the wall and the stuffed heads of elk and moose around the room.  Paintings were hanging to depict the German countryside.
      After happy hour, Joe & Diane and we went over to a parking lot next to the campground where there are six food trucks parked.  We got burgers.  It was quite expensive!  There was a band getting ready to play some music.
2024 Apr 12 (Fri) – We packed up and left Elm Mott (Waco) at 9:30 a.m.  With Joe & Diane in tow, we headed out to Fredericksburg.  Johnny & Linda dropped in on our group about half way here.  We pulled off into a WalMart parking lot to make sandwiches, then continued to Fredericksburg RV Park.  We were here back in 2017.  It’s still a very nice campground.  And the laundry is cheap, too!  $150 for washers and $1 for dryers.  They have a community room that the Cajuns will use for our 5-day stay here.  We all enjoyed happy hour at 4 p.m.  The group had a potluck for dinner at 5 p.m.
2024 Apr 11 (Thu) – We had a delightful tour of the Waco Mammoth National Monument this morning.  I thought we had seen it before but it was totally unfamiliar to both of us.  Two boys found a bone while exploring a creek bed.  They brought it to a nearby museum.  It turned out to be the leg bone of a Columbian mammoth.  Excavation found 15 mammoths at the site.  It was a nursery herd that was at a watering hole when a flash flood trapped them in the mud (or so they hypothesize).  Since, they have discovered more bones and are still digging out more remains.
      The dig site was covered by a large building.  We walked in the door and were on a suspended walkway that looked down on the dig site.  There were several bones marked with signs identifying where remains were found as well as implements spread around the place telling what they are used for.  It was an interesting stop.
      After the monument, Johnny & Linda and Joe & Diane and we went to lunch at Ninfa’s Mexican restaurant.  The food was very good.  We then ran some errands – stopped at Home Depot, Lowe’s and Ace Hardware looking for drawer slides to repair the desk drawers.  There seems to be a shortage of 12” drawer slides.  There are many other sizes in stock, but no 12”.  Wonder what’s going on.  We also stopped at H.E.B. to pick up potatoes for potato salad for a potluck and the gas station to fuel up for tomorrow’s move.
      When we got back, we had happy hour where the group played card bingo.  It was a good night for the Thomases!  I won a game and Paul won 2 games.  All in all, we won $20.  Then we went to Johnny & Linda’s new rig for dinner.  She made chicken and rice; I made a salad.  They traded their Class A for a Class C rig.  It is much smaller than their previous rig and they are adjusting to it.  We are still adjusting.  Both of us keep going to the wrong cabinet for the garbage.  Just got used to where things were before.
2024 Apr 10 (Wed) – It was raining lightly this morning.  We packed up and with Joe & Diane in tow, we pulled out at 9:35 a.m.  The rain picked up over the ride and it poured buckets during some parts of the trip.  We traveled Route 31 to Elm Mott, just outside of Waco.  There was a section of road that so bad.  We hit many bumps.  When we got to the campground and opened the slide on the RV, we had damage.  The drawers on the desk had opened and caught the side of the slide.  Two drawers were damaged beyond repair and the trim piece around the slideout was pulled out.  We also found another leak in the RV.  *sigh*  I am suffering buyer’s remorse.  There are several things about this RV that I am not happy with.
     After set up, we did the laundry.  At 5 p.m. we went over to the community room where almost everyone else joined us for happy hour.  There were some very tasty snacks.  When we got back, I worked on sending out a newsletter about the upcoming National Muster in September while Paul went out to Home Depot to buy material to repair the drawers.  They did not have everything we needed but there was a liquor store next door.  Paul was able to replenish our alcohol supply, so all was not lost.
2024 Apr 9 (Tue) – It rained all morning and didn’t clear up until almost 2 p.m.  Because of the rain, no one really did any activities together.  At 4 p.m. we climbed into Joe & Diane’s car and drove down to Easley’s Steakhouse where about 12 of us had dinner.  There definitely seems to be a very strong schism in the Cajuns chapter.  Doug, who was supposed to be coordinating activities, hasn’t done any planning and has shared no information.  There is a lot of grumbling about the lack of communication. 
       After dinner, Joe, Diane and we went to the town square to explore.  We parked and walked around the block.  Like many small towns we have been in, Canton’s court house is located in the middle of the square.  Stores and shops surround the court house on all 4 sides.  We had to cross the road at each corner to go to the next area.  Most of the stores were closed.
       Afterward, we came home and prepared for tomorrow's move.
2024 Apr 8 (Mon) – Today was the Solar Eclipse.  We worried about the weather – forecasts were for thunderstorms and hail starting around the time of the eclipse.  Although there were scattered clouds, we were still able to gather together and watch the eclipse.  Totality took place at 1:44 p.m.  It got pretty dark for a few minutes.  Automatic sensors turned on outside lights.  Bo grilled up some hamburgers and Diane made chili.  The rain started after 7 p.m. tonight.  Paul discovered that the window next to the desk is where the leak in our side cabinet is coming from.  He’ll take a look at it tomorrow.
2024 Apr 7 (Sun) – We worked around the rig, continuing to plan our Michigan caravan next year.  Paul and I went food shopping to pick up snacks for happy hour.   Happy hour was at 4:30 p.m.  We went to dinner with Joe & Diane, Johnny & Linda, and Hank and Brender.  We ate at Val’s Italian Restaurant.  There has been a band playing in the field across from the parking lot for 2 nights.  We sit in the rig and listen to them playing.
2024 Apr 6 (Sat) – We left the Shreveport Elks Lodge at 10:30 a.m.  The drive was just 2 hours.  We stopped for lunch at a rest hour about half an hour away from Canton.  When we came out of the rig, we discovered we were hemmed in by 2 semi-trailers.  We started to back up when they both pulled out.  That was a pain in the butt!
      When we got to First Monday Trade Days Campground, we had to call to the camp host, Frank.  He arrived in his little golf cart and led us to our site.  We are basically located in a huge open dirt lot with rows of hookups.  Every site is a pull thru.  It is good to see many of our friends here: John & Kathy from our Appalachian Caravan this past October, Johnny & Linda (who we just left in Chatham, LA), Joe & Diane, Bo & Karen from Mississippi, and Hank and “Brender” (Brenda with an accent) from south Texas.  There was happy hour at 4:30 as we all caught up with one another on what we’ve been up to.  Four of us have new rigs so it was fun touring everyone’s camper to ooh and aah over them.

Jim N Nicks Menu Prices in 2023
Jim and Nick’s is the only place you need to drop by if you fancy BBQ-style food with good prices. Let’s start the talk with their salads, potatoes, and soups menu with six dishes. The dressings are of your choice but never hesitate to order their brisket chili. They make four yummy starters with onion rings half or full baskets, smoked wings, and devilled eggs. Their JNN classics menu is humongous. Each dish on this menu is served with two trimmings. There are beef briskets, pulled pork, BAR-B-Q chicken, and a basketful of chicken tenders. If you need more meat on your plate, order Mr. Jim’s combo plate with two or three meat choices. JNN ribs with two trimmings come in 1,2,3 Lb. size and their 7 sandwiches are made-from-scratch and taste godly. Yet, Karl’s catfish sandwich is a house special. JNN burgers are also served with a trimming.  Both their original burger and the Southern burger come in either single or double size with options to add bacon for the latter one. As for the trimmings, you get to order from a collection of 8 trimmings from the baked bean, and coleslaw to French fries and potato salads. Substitutes are available with onion rings, house salad, and brisket chili. If your whole family is ready for a feast, then there’s their feast in a flash family menu. Each of the four dishes comes with 2 trimmings (pint-size). You have to choose the buns or cheese biscuits to go with the meal as well.    They’ve got 10 traditional holiday feasts and 11 amazing features including rib dinner and tailgate package. There’s a Lil’ piggie menu for children and five of bulk protein options with pulled chicken, spare ribs, etc.   Of course, Jim and Nick make the best homemade pies and banana pudding as desserts. Okay!  Blogging update two of two!  This post should catch me up to now!  
This past three-day weekend was absolutely fabulous!  With the Busch Gardens adventure taking place on Sunday we had all of Saturday and all of Monday to relax and enjoy the slowness that is glorious weekend life.  
On Saturday morning Kevin asked me if I wanted to go to a ghost tour that night.  UM. OBVIOUSLY THE ANSWER IS YES, ALWAYS YES.  I’ve wanted to go on a ghost tour since moving to Virginia TWO YEARS AGO.  The ghosts here are so much older than in California!  I got ridiculously excited and immediately wanted to plan and strategize the entire day.  His friends live in Northern Virginia and were driving down to Williamsburg that day and thought it would be a fun outing to which I whole-heartedly agreed.  
We drive the hour to Williamsburg around 7 p.m. and meet their family for dinner.  I smartly order BBQ pulled pork, a side of coleslaw and fried okra.  The plate came with a side of cornbread and the pork smothered in a BBQ sauce :(((  I neglected to ask if it came with a sauce so I’m sure I consumed at least 40 carbs in that dish alone.  Since I’d already eaten all the sugar I decided to take a bite of the cornbread and hot DAMN was it incredible.  The fried okra was good, too!  I definitely left a lot of okra on the plate since I filled up on the pork and slaw and gave Kevin the cornbread.  We finish dinner at 8:45 p.m. with the ghost tour starting at 9 p.m.  But, our friends wanted to drop their leftovers off at the hotel room beforehand so Kevin and I head straight to downtown Williamsburg.  We arrive at 8:58 p.m. and our friends arrive at 9:10 p.m. The bookstore, where you buy tickets, closed at 9 p.m. but apparently tickets can also be purchased online.  We find the tour group and ask if we can join and they say no :(  We try to go to a later tour but with tired kids and not finding tickets available we give up on that dream and head back to their hotel to play card games.  I overall have a good time, but I’m also really bummed.  I was sooooo looking forward to walking around in the dark and hearing haunted stories!
On Monday I sleep in, lounge around and thoroughly enjoy this extra day off.  I take my time getting ready in the middle of the day, straighten my hair and wear a shirt I didn’t expect to fit into for at least 25 more pounds.  I leisurely enjoy my grocery shopping experience and even found low carb bread!!!  At 3g net carbs per slice that is definitely manageable within my macros!  I kept daydreaming about all the incredible things I could make with bread including buttered toast, avocado toast, SANDWICHES, butter and splenda and cinnamon toast, grilled cheeeeese!  Unfortunately, the slices are MIGHTY tiny, see the hand and avocado for scale.  But even so, the bread was soft and tasty!  
After the grocery store I decided to swing by Starbucks and try the keto white drink my mother-in-law posted on my FB page for Kevin and I to try.  I got two venti sized unsweetened peach citrus white teas with a splash of heavy cream, 4 pumps of sugar free vanilla syrup, no water, and light ice (one over ice and one blended).  Aaannnndddd..... they sucked!  I really did not enjoy these drinks at all.  Even once I got home and tried making it better with more sugar free vanilla syrup it tasted even worse.  They tasted flat and not flavorful and were a complete waste.  We actually poured them down the sink we didn’t like them that much. The pink drink was FAR better and I don’t know why.    
Kevin and I then set out to hit up Costco to fill our house up with avocados, nuts and meats but were totally shocked to find the parking lot completely empty!  Apparently Virginia takes Labor Day seriously.  Kevin took this as a sign that we should eat out for dinner so we drove by Fellini’s to find they were closed TOO!  What the heck VA!?  So where did we end up?  At Cogan’s Pizza where I proceeded to order a salad while Kevin got a large pizza.  I took one bite from the tip of a slice and one corner of a bite of crust and was completely satisfied.  Of course, my weight disagreed with me and is rebelling completely.  
All week I’ve been slammed with work which has prevented my normal blogging patterns - rude.  I’ve spent my evenings nursing some pretty nasty headaches while watching episodes of the Great British Baking Show, Parks & Rec and Castle Rock.  I’m happy to finally catch up and have it be another weekend so sooN!?!?  Although, Kevin flies to Australia tomorrow which is SO exciting for him to be able to present his research internationally but also, I wish I could go with him and support him through this journey!  I’m looking forward to having some time alone but sad that I won’t see him until the following Sunday since I’ll be off on my own adventure with @zerocarb, @lizzielosing and @hello-newman !!!!  I truly can’t believe the Tumblr Trip is SO CLOSE!

eating disorder
hi, I have an eating disorder. I'm going to a php in 3 days and I wanted somewhere to vent my anxieties about it. And also kind of write my thoughts out as a baseline/pre-php thought documentation. (PHP = partial hospitalization). I've never been to any treatment like this so Im nervous
December 4 2021
According to my therapists, they say I have ARFID which is Avoidant Restrictive Food Intake Disorder. Having looked at the info they provided me I'd say that's probably what it is. There's definitely a fear of fatness/weight gain though in addition to that. It said that sometimes there's a thing you can have where you are hypersensitive to tastes as well? hyperactive taste buds? and idk if I have that but I have ALWAYS been hypersensitive to SMELL. Always. So maybe correlated
I've been vegan for 7 years about (thanks to tumblr for converting me lol) and honestly I haven't been on tumblr in about that time either. I went vegan for 3 reasons ranked from highest to lowest:
1. Good for the planet
2. good for my body
3. good for animals (not killing the chickies)
At this point I'm ngl, I am over being vegan. Like I have shifted back to eating mostly processed foods. When I went vegan there weren't a lot of vegan supplements for things so I had lots of whole plant based foods all the time but now I'm eating vegan microwave mac n cheese and oven chicken nuggets and shit all the time. AND I'm craving chicken, like chicen strips all the time. and My roommate ate pulled pork (like my favorite food, my LAST SUPPER of not being vegan) yesterday and I'm like, shit. I hate pork and I hate bbq sauce usually but mmMMmm good pulled pork.
HOWEVER, a common thing I have said since going vegan is "IF I weren't vegan I would be so fat". This is not cute. I really do believe this statement, and I think it's part of why I am afraid to stop being vegan.
Lately I've been plagued with this feeling of like, not ever being full. Bottomless pit, never to be filled. But instead of trying to satiate that, I like ignore it as uncomfortable and deal with it in the only way I know how which is restricting (or simply avoiding) food. I am feeling it right now! IT's easier in this moment for me not to eat. Which is not healthy.
I am afraid of getting fat. EVERYONE, including my younger sibling who is 19 and a foot shorter than I am, is overweight in my family. My extended family not so much but my immediate family definitely. And that's scary. I have (well, HAD, when I tried to write this post yesterday) 3 main reasons why I am afraid of gaining weight.
1. it is annoying to not fit clothes I own
this is kind of silly but its true. I experienced the same phenomenon in the last few years while I've been losing weight and my body has been changing in general (I'm 21, this isn't puberty lol). Like it SUCKED in 2018 when I was waking up and wearing the same two pairs of pants that were just falling off because they were too big (skinny jeans too). I went to Hollister during my break (during black friday weekend probably LOL) at my mall job and purchased new pants in a smaller size that day. There's like this frugality? that my mom ingrained in my and like it's great and all but it's also this sense of like, you don't NEED anything ever? Like making normal necessities seem like not? normal? necessities? like clothes that fit? the bare necessities. now sing the little song from the jungle book (horribly racist movie, fun music tho i can't lie)

reason 2 of being scared of weight gain
2. its uncomfortable
it really fucking is. I won't list my weight here now, but I was my heaviest in 7th/8th grade, and it was awful. THAT was during puberty LMAO. It was awful. My clothes were uncomfortable, my tummy hung over my pants (then i met high rise jeans, thank you jesus, I've never looked back). When I got into the shower I felt like I hadn't taken off all my clothes-- there was still a layer I hadn't removed. That was my fat. You can't take that off!!!! And it's awful. Awful. :( Like a second skin basically. Bleh
3. it is unattRACTIVE (for me?????)
I do have insecurities. and I'm not gonna lie, I have been working on my fashion/wardrobe for the last year and it has some GAME now ok, I don't look like a hobo everyday. In fact I look fly as fuck. And it helps to be skinny. I have some beautiful girlfriends who are CURVaLiCIOUS and i love them, but I am still afraid of it for myself. It also feels like so much more work. Like I feel like for me if I were heavy/ier then Id have to start wearing full face makeup everyday with contour and shit to look decent. It's dumb and contradictory and cognitive dissonence-y i know. but it's how i feel.
So, I think there are several possible causes to my ED/correlations with life events.
1. I went vegan around the same time my dad left

So yeah, the summer before freshman year I went vegan. And at some point during this summer my dad went grocery shopping and I don't even know what it was but I guess I asked him to buy some type of vegetable, and he bought kale instead or something? Either way, I know that kale got thrown at me. hard. Sooooo, this is kinda like dumb i guess but it is abusive behavior and I was like crying on the floor for an hour and nobody at all came to talk to me or help me out (I have a victim complx too haha FUN AND QUIRKY!!! RAWR XD) and yeah basically people like ignored the whole situation??? And my mom like said something to my dad about it but like, it was not enough. A month later he threw something bigger and harder at my mom and she kicked him out. I'm still upset by this a little and the fact my mom didn't like realize sooner what was going on. Like my feelings and my experience of my dad wasn't valid or didn't incorporate with who she knew my dad to be. And I just always think that maybe if she cared more about the kale incident that maybe something would be different. idk what.
ANYWAY: that's when I went vegan, right? So we start this (pattern) of ~abandonment correlated with limited food options. REMEMBER this was before I could pick up frozen vegan meals at any supermarket, I was cooking EVERYTHING from scratch basically, and I couldn't have conventional ice cream and shit.
2. b-R-e-A-k-U-P-s
if you're still reading, now you'll probably be able to figure out who I am. So here's a short rundown of events:
A. I am searching for stability outside the home. I avoid being home as much as possible (consciously or subconsciously). I lose my best friend (best friend breakups, yuck). And finally after a crazy fling, somebody starts dating me (ahem *bitchass). So it's awful but it had potential ( I thought ) to be everything I wanted. So we break uP DUH and I'm like heartbroken!! Dismayed!! And I stop EATING. I stop eating. I literally lose 10 pounds.
before this, crushes made me stress out and CAUSED me to eat. But this was new! This was ~ANXIETY~. Having to interact with an ex, having to see them go out with someone else, etc etc etc.
B. victim complex continues
so I get a new boyfriend shortly after, like a month. that November bitchass dumped me was the worst month of my life probably. idk. thanks to XXXTentacion SKINZ album for gettin me thru it. So new boyfriend is like everything I could ever want and more, literally MAKING ME FOOD, doing his savior complex shit, saving my fucking day. It was great, for me anyway. And then he broke up with me too and PLUMMMETTTTING plummetting. so now I have no savior and no appetite, yummy. I am still hung up on this (if u r reading this, I hope you're not). But he was like, my first love, and I don't think that's something you get over, ever. It just kinda sucks I wasn't his first.
yeah that's it for breakups. My other symptoms/reasons are pretty compliant with ARFID ideas, these (above) are basically the psychological outliers I wanted to identify. Like I choked on graham crackers once and then I avoided eating them for YEARS literal years. I currently have a fear of choking (ranked highest to lowest fear, 1 nuts 2. popcorn 3 crunchy chips) I'm afraid they'll scratch my throat.
About my food
again, if you're still reading this, idk why but go for it.
I CAN eat crunchy things if it's with or before something that is not crunchy. Like hummus and pretzel chips. That has basicallly been 50% of my diet for the last two weeks or more.
Yeah idk basically surviving on that and vegan deli slices and pickles occasionally and lots of cinnoman raisin toast and applesauce. occasional clif bars.
But like when people offer me food or I'm eating a "forbidden" food I feel like I go kinda crazy. I literally DONT but I FEEL like I could or do. like eating cheese ravioli: I ate like more than I thought I would. (ahem, only 3 but i figured i'd have one) or when people offer me food I like, cannot resist it. that has ALWAYS been a thing too so maybe that's partly how I got this far with ARFID bc like i know there's something inside me that lacks control.
ok that's pretty much it for now. I am anxious about PHP and I could make a different post about that but again that's kinda what got deleted the first time around.

West Coast Trip 2021 Journal Part 1 - Vancouver
Day 1
We walked around downtown, corner-to-corner, in about 4-5 hours. Prepare for a leg workout and wear good footwear.
Japadog on Robson. I got the “love meat-cheese” dog, hearty late night street foody, but nothing special. They open until 3AM. The store is small, be prepared to line up outside on the street. 7/10. Not worth the visit unless you’re craving something dirty and have stomach space. 
Robson street is a nice bustling street with a lot of stores, worth checking out if on your first visit.
As part of the downtown walk, we passed through English Bay Beach, Sunset Beach and parts of the Sea Wall. It’s a nice walk. Not a lot of shade, bring sunscreen. 
Canada Place is a bit boring, just walking and seeing, but not much to do.
We made it to Gastown for dinner. Gastown is a charming area to walk around with lots of restaurants, but the area smells like pee, you’ll start seeing more homeless people in this area. For dinner, we went to Gringo, located in a sketchy alley. It’s a tiny bar-style joint with Mexican fare. Of the tacos we tried, the brisket was superb. It was super juicy, flavorful, and wrapped with corn-style tortilla. The rest of the tacos were meh, nothing special. I would recommend just getting the brisket ones. We got their lemonade, which was refreshing and a nice sour, not too sugary. Super friendly staff that makes you comfortable. At $3-4 for a taco ($4ish for the brisket), it is definitely worth it, compared to other places. 7.5/10.
We walked back to downtown to meet up with friends and get dessert. We tried the gelato at Bella Gelateria. It was disappointing, too hyped and pricey at around $9 for 2 scoops in a cup. 5/10. Don’t bother. The gelato at Stella Luna in Ottawa is better.
For accommodations, we stayed at Days Inn Wyndham in DT. It’s bait and switch advertising, the room in reality looks nothing like in the pictures online. The price was cheap for downtown though, but the room is tiny with an even tinier bathroom.
Day 2
Morning coffee at 49th Parallel Lucky’s Donut in DT on Thurlow. Lot of room outside to sit with 90 min of morning WIFI. I got my favorite donut, a cruller, which has a really good sweetness and airiness to it. It was also big size-wise. The black Americano I got was also good; not too acidic/bitter. 7.5/10. I would go again if I had time in the morning to chill.
Walked to Chinatown. LOTS of homeless people here and it smells pretty bad. There’s not much to visit here other than the famous garden and New Town Bakery. See it on your first visit, but that’s it.
Japantown, which is next to Chinatown, don’t bother going. There’s nothing to see and even more homeless/crazies/druggie as you get closer to Main and East Hastings.
I tried the Bulgogi Burrito at Tako, near Chinatown. It’s Mexican-Korean fusion. It was on the smaller size for around $12-13 for a burrito, but it was flavorful and had a nice mild heat. It’s no Kogi in LA, but it’s okay. 7/10. Not worth visiting if you’re limited in time and stomach space.
I also tried the tacos at Tacofino, located in the same sketchy alley as Gringo in Gastown. Their tortillas they used for the tacos are paper-like; they don’t use standard corn tortilla. It was overhyped, busy, underwhelming and overpriced at $7 a taco. The fish taco was bland and dry and relies on the sauce to bring out any flavor. The meat of the crispy chicken is good with some mild heat, but it ends there. The taco is also on the drier side. Nothing special, Disappointing. 4/10.
We bused to Wreck Beach, on the far western end, near UBC. It’s a popular destination on sunny days, known for optional clothing. It was cloudy and empty when we went, but was still nice to sit and chill. There’s quite a bit of stairs to go down to the beach; was not expecting that for our tired legs.
Take out dinner at Sal y Limon Mexican. They used corn-style tortilla tacos, had good flavors, but something about all the meats we got were off (lamb > al pastor > pulled pork > chorizo). The churro was good. We also got a carnitas (pulled pork belly) huarache, which was flavorful, but the shell was not very deep fried, with too much sauce soaking it and making it soggy. For authentic Mexican, it was underwhelming. 6.5/10. Not worth your time or stomach space.
The Hive @ Strathcona is a small bouldering gym with a sufficient amount of climbs. The staff were friendly. They have a Friday night cheap night ($18), which was good since their regular admissions are on the pricier side ($25). The grading system wasn’t that intuitive. More importantly, it was super hot/humid with no AC and only a couple of fans running.
Day 3
We went for early morning bakeries at the popular local spot, New Town Bakery in Chinatown, before our day trip out to Squamish. We got: 2x egg tarts, 1x bbq pork, 2x pork steam buns, 1x coconut bun, 1x butter cream cone, 1x curried beef bun, 1x meat spring roll, 1x pineapple-coconut bun. All the items were quality, and exceeded expectations. 10 items among 2 people was a lot of food though. Prices are good, smells like heaven. 9/10  Worth visiting. 
Originally, we wanted to do the Chief hike at Squamish, but as of this year, you need to buy passes, which they were sold out. Instead, we went to Shannon Falls. The main attraction at the lower falls is whatever and mostly packed with families and kids. We found an moderate/hard trail to Shannon Falls Pools that not many people hike and takes you higher and up close to the falls. Dangerous place to slip. There were some rope sections where you have to pull yourself up that were sketchy; definitely not family-friendly. Also, easy to get lost at the beginning if you don’t take the correct fork. Use the Trailforks app to not get lost. Once we were up close to the falls, we were treated to great views and a perfect spot to relax all to ourselves.
A late-afternoon visit to the popular Earnest Ice Cream on Saturday was perfect. No crazy lines like you would see at peak hours and after dinner hours. We tried the Cookies & Cream, London Fog, Whiskey Hazelnut and Milk Chocolate. The first three were highly rated ones on Google, and they were true. I loved the first two the best. The price for double scoops was around $6, but you get a lot. Compared to other places, this was really good value for size and excellent ice cream. 9.5/10. I highly recommend this place and would go again.
For dinner we went to Ajisai Sushi Bar in Kerrisdale. They were only offering takeout during the pandemic and you had to call to order. Expect 2 hours order times during peak dinner times; this place is BUSY, their phones are constantly ringing. We ordered around 5pm and got our food around 7pm. You can see the chefs working non-stop from the store front window. We got the Spicy Roll (Salmon/Tuna/Scallop) combo that includes 24 pieces for around $13. Great price for the quality. We also got the Assorted Sushi combo which includes around 9/10 items, mostly nigiri and some special rolls for around $19. The sushi was QUALITY and FRESH. The salmon and tuna were melt-in-your-mouth quality. For around $40 for 2, this wasn’t too expensive relative to other meals and surprisingly filling. If you love sushi, this is perfect mid-tier sushi (higher than budget sushi places, but lower than expensive top-tier places like Miku/Minami). 9.5/10. Worth visiting and would get again.
To digest, we drove around and ending up relaxing at Burnaby Central Park. Nothing touristy, just a local park in Burnaby to say that we’ve been to Burnaby. At night, we just drove across Lion’s Gate bridge back in DT Van to check out the bridge lights and night views. Driving in busy Saturday-night traffic is tough, you need some confidence, aggressiveness, and focus (there’s a lot of bright lights) especially when you have day-trip fatigue.
Day 4
We tried the red velvet cake and ice americano at Breka Bakery on Denman St in DT Vancouver. The cake was moist, light, airy; and the cream not too sweet, which was perfect. The chocolate pieces in the cake were a nice touch. The ice americano was good, a hint of bitterness, but refreshing. It’s a 24h café with a couple locations. 8/10. Worth visiting.
Today was bike day around Vancouver. This was probably the best way to get around since public transportation is slow (not much better than Ottawa’s), walking is tiring and ride share for 2 isn’t that cheap. Spokes bike rental, $40-50ish for the day, provided solid Trek hybrid bikes, helmet, lock and phone holder. The staff were friendly and helpful. It seems expensive compared to the city Mobi bikes, but its definitely more fun and flexible in my opinion. It will be around the same price as an attraction somewhere (like Capilano bridge), but you get all day fun. Worth.
Riding leisurely around Stanley Park, took about 1-2 hours. Great views. Worth visiting.
We biked to Granville market and walked around lunch time. It’s a cute and charming market. This place is busy, lots of fresh fruits and the local strawberries were perfect, not too sweet and good tartness, but expensive at 2.5lb for $13.
Lee’s donuts - high quality donuts, jelly, chocolate, honey dip, Dutch. Good size. Pretty good compared to what we have in Ottawa. Long lineups. 7.5/10. Worth visiting.

I went to climb again but at the Hive North Shore location, far from downtown (~50 min by multiple buses). The gym is clean, spacious, has AC, a nice store, and high climbing walls (feels pretty sketchy up high, higher than Altitude Kanata’s), so they make you do an orientation and practice falls. I booked for 2pm on a Monday, not much people, which was nice. I prefer this location over the central Vancouver one.
Afternoon snack at La Casa Gelato, they have too many flavors (238 to be exact) in my opinion. It was empty when I went, I tried their popular flavor, the  durian, but I wasn’t a fan, more sugary sweet than anything. I think it’s overrated. And for around $6 for one scoop cup, its not that cheap. Decent size though but not too big. Seems very gimmicky to me. The building exterior is entirely bright pink, good for Instagram I guess. 5/10. Not worth.
We had dinner at Ramen DANBO in Kitsilano (DT location was closed for renos) For around $10-14 for a bowl of noodles only, the tonkotsu broth, which was rich and flavorful. "Rose?" I hear after a knock on my door. It was a Tuesday; Sofia had left for New York early yesterday morning so it was a lazy day for me. Shuri had announced earlier that there wasn't going to be a formal dinner so just call for food yourself or go out somewhere. I had been lounging in bed debating if I actually wanted to put effort into getting food or if I was going to get something brought up when the knock came.
I hop out of bed, my shoes slapping against the floor, and open my door to see Bucky standing there; although it was no surprise, nobody else called me Rose. He seemed off, I wasn't sure what was different but his whole aura was different. I straighten my back and search his face.
"Is everything okay?" I ask, trying to not sound too worried. 
"Take a walk with me," he simply says, offering me his arm. I look down at myself and frown. I was wearing a layered ice blue dress that I wore when I was lounging around that had a large slit up the middle. My beige sandals were clasped around my ankles and crossed over the tops of my feet.
"Are we going out?" I ask. I definitely wasn't indecent, but I didn't know if it was appropriate.
"Yes, but you look beautiful," he says with a meaningful smile. I felt my face heat up. I reach out and link my arm with his before he rests his warm hand on top of mine. 
We walk in silence as he leads me outside and towards where the jets were kept. I feel the evening sunshine against my face and I sigh in contentment. I nudge Bucky's arm with my free hand, causing him to drop my hand. I reach for his bicep with one hand and slide my other hand down, interlacing our fingers, my warm skin appreciating the coolness of his arm. I pull him closer and lean my head against his shoulder. I peek up to see a small smile on his face and his eyes looked happy. I bite my lip and feel a rush of heat flood my body. 
God, I was so gone for this man.
Bucky leads me towards a smaller jet, obviously made to fit only a couple of people. I didn't say anything as Bucky reaches up to enter a code, causing the back hatch to open. He looks at me and gives me a smile before taking his arm back and nudging me in. 
It was a pretty standard ship from what I had been used to. It was more high tech and probably more indestructible then the ones Tony and SHIELD let us use. Bucky briefly rests his hands on my waist as he squeezes past me towards the command center. His hands left a warm buzz on my body that forced me to use all of my self-control to not just spew my feelings right then and there. 
"You might wanna get up here and buckle up, dollface," he says with a smirk, plopping into the pilot's seat. 
I roll my eyes and get into the seat next to Bucky but I wasn't mad at the pet name. If anything it was more personal and meaningful then how easily people throw 'babe' or 'baby' around today. I buckle up before answering. "Sure thing, Sarge."
Bucky flashes me a quick grin as he flips what seemed like a hundred buttons before the jet rumbles to life and we're taking off at a high speed. 
"Does T'Challa know you're stealing one of his jets?" I ask as I pull a knee to my chest, resting my foot on the seat. 
"We're borrowing, not stealing. But yes, I told him before we left."
I arch an eyebrow and look over to see a smug look on his face. "So this wasn't a spur of the moment thing?"
"'Fraid not, Sweetcheeks, I've had this planned since this morning."
"So what exactly is 'this'?" I ask, vaguely waving my hands, somehow expecting Bucky to know what I meant. 
"This," he says as we near a large, open field and finds a relatively flat place to land. "Is me taking your sister's advice."
My head shoots over to look at Bucky. Oh God, what did she say? My mind flashed to what felt like the hundred thousand times Sofia and I talked about Bucky; specifically how I felt about Bucky. 
"If it was that she was sick of me trying to bond with her and she advised you to take me out into a field and kill me, I would only be mildly displeased."
"Because I'm the one killing you or that Sofia asked me to kill you in a field and not somewhere cool?" Bucky asks with a laugh. The jet settles and he turns it off before getting up, beckoning me to come with. 
I quickly unbuckle my seatbelt and rush to follow him, just as the back hatch was lowering. 
"Both, definitely both," I say loudly over the noise of the door.
The door settles on the ground, leaving us wrapped in the sounds of nature. I take a glance over at Bucky, who nods towards the door. I bite my lip and rush outside. I turn back to see Bucky hasn't moved; he stood there with his hands in his pockets and a smile on his face. 
My eyes shift towards where the setting sun was casting the world in a warm orange glow. I feel my jaw drop at the colors that were surrounding me. My hands itch to draw this, maybe even paint it. The oranges, yellows, and pinks of the sky contrasted the greens and blues of the shadows. Where the light shined was a happy medium of the two, the rich green that shimmers orange and yellow when the wind rattled the trees. I see a winding stream closer towards the tree edge that almost seemed like liquid fire from the reflection of the sky.
I felt hands gently grab my waist and a body press against my back. I reach down to grasp both of Bucky's hands, both warm and cool, feeling my heart swell. 
"It's so beautiful," I whisper, almost afraid of saying anything too loud. As if noise would scare away the beauty. I, of course, had seen the sunset from the palace, but out here with trees instead of reflective buildings was a whole new experience. 
Bucky rests his chin on my shoulder and wraps his arms around my middle completely. I knew this wasn't something friends did. It definitely wasn't something people did when Bucky was young because Steve was never this physical. It was more of an arm around your shoulder or a bear hug. With Bucky, it was gentle, tender, lingering touches. 
"I really like you, Buck," I finally whisper, not even afraid of what his response would be anymore. All of the signs that I've overlooked or just not seen but people have told me; they all pointed towards how Bucky felt about me.
He hummed and buried his face in my neck, giving my middle a squeeze. "I really like you too, Sugar."
A giggle bursts from my lips and I've never felt happier in my life. Except maybe when Sofia was born, I was pretty ecstatic to have someone to protect as an older sibling instead of being the baby of the family. 
I reach up and run my fingers through his hair. He lifts one of his hands from my waist to grab my hand, pressing a kiss to the palm of my hand. I bite my lip and carefully turn around in his arms. 
His face was lit up by the sun behind me, causing his normally dark hair to glow a warm mahogany color. 
I reach up and twirl a strand around my finger. "You got some red in there, Barnes," I say with a laugh. 
"And so do you, Turner" Bucky retorts back with a blinding smile. 
"Really? Woah, I had no idea! Thank you Captain Obvious, I never would've known if not for you!" I gasp, trying not to laugh. 
"Captain? Wow, thank you for the promotion, doll."
"Anything for you," I giggle with a small salute and a wink. 
"Anything?" Bucky asks and suddenly I could see small specks of green in the grey of his eyes. I feel my heart beating in my chest, knowing what was going to happen. My throat felt closed off so it took me a minute to be able to reply.
"Anything," I finally say, weak and barely above a whisper. At first, it was just a brush of lips, giving either one of us time to back out if it's not what we wanted. I push myself onto my toes, bringing our lips together. His lips were so incredibly soft compared to the scruff of his beard, but I didn't mind it one bit. 
My hand travels up to tangle themselves in Bucky's hair. The kiss was dizzying but so light, yet heavy with what I could only describe as a breath of finally. 
Our lips separate but our foreheads remain pressed together. Our breaths mingle and I let out a small laugh. "That was…"
"Incredible? Perfect?" Bucky suggests. 
I feel my face heat up and a laugh slips from my lips. "Yes to both of those, but I was gonna say overdue."
Bucky laughs and pulls back to press a kiss to my forehead. "That's very true as well. Now come, I brought food." 
I reach down and interlace our fingers together, letting him pull me towards where he had a blanket spread across the grass. 
"Awww, you know the way to a girls heart," I say with a laugh, sitting down, never letting go of Bucky's hand. 
"Only to yours, doll," Bucky replies as he reaches over towards a canvas looking bag he brought. He tugs the zipper open and starts pulling out bags and containers of food. 
My eyebrows shot up as the amount of food that he brought. "You hungry there, Sarge?" I ask with a laugh.
Bucky laughs and bumps his shoulder into mine. "No, I didn't know what you wanted so I brought a little of everything." 
"I swear to God if you have a burger or 6 in there I may just ask you to marry me right now," I ask, looking through everything. Bucky reaches for a medium-sized container and 3 bags, sliding them towards me. 
I open the container to feel the warmth of some patties and I felt a grin form onto my face. The 3 bags contained buns, cheese, and bacon. 
The smell of bacon alone was making me feel high. "Oh my god, you are my hero, when do you wanna get married?" I ask, quickly assembling my burger. 
"How's tomorrow sound?" Bucky suggests as I take a bite of my burger. I look over at Bucky with surprise. I stopped chewing for a second before continuing slowly. 
"It's a date," I say, not even bothering about the food that was in my mouth. Bucky laughs and reaches to pull another container closer. He too grabs a hamburger bun and opens the lid, revealing what looked like BBQ pulled pork. I groan and fall backwards, pulling my burger down with me. "How could you shove that in my face, are you trying to kill me from stuffing my face?"
(("Of course not, we can always finish this tomorrow," he says. I turn my eyes to glance over at his back. He was relaxed, his usual tense shoulders were slouched and the curve of his spine was displayed through the thin fabric of his t-shirt. His hair was flowing softly in the slight breeze and I felt the urge to put my fingers in it. 
I half sit up, realizing I didn't have to hold back anymore. I gently reach my hand out, slowly running the pads of my fingers up his back and into his hair. A shiver ran through his whole body and I couldn't help but bite my lip. 
"You're beautiful," I say, my hand running through his hair and back down his back. 
I feel Bucky laugh under my hand and he turns his head to look at me over his shoulder, his mouth covered by his bicep. I can see a red tint to his cheeks as he reaches up to scratch his beard and tuck a strand of his hair behind his ear. "Thanks?"))
I sit up and laugh, leaning my shoulder against his. "Of course," I say with a grin. I lean my head atop his shoulder and I felt his lips ghost over my hair. We sat there eating quietly, watching nature happen around us. 
I take the last bite of my burger before shifting so I could grab a couple of napkins to wipe my mouth and hands off. 
I look over to see Bucky was now sitting with his knee up and his elbow resting on it, his hand holding his hair out of his face. He was watching the sunset with a content look on his face; we probably only had about an hour of daylight left.
I bite my lip and sit up straighter. "Can I..?" I ask, nodding towards where his hand was. 
Bucky drops his hand and looks over at me, causing his hair to fall into his face. I giggle as he lets out a laugh, flicking the hair away with a jerk of his head. "If you want," is all he responds with. I situate myself behind him, putting my legs on either side of Bucky's body. He leans back onto his hands so I didn't have to stretch to reach his hair. 
I carefully run my fingers through his coarse yet soft hair, untangling everything. Did I do that for longer then I needed to? Absolutely, but there wasn't a complaint from Bucky so I didn't hurry. 
I pull a hair tie off my wrist and ready it between my fingers. I gather the front section and slide a nail about halfway down his head, parting his hair into two horizontal sections. I pull some of the hair out from the back so it would sit nicely as I wrap the hair tie around his hair. I carefully pull it into a bun before pulling pieces out and tightening pieces in so it was even, tight, but also messy. 
"How's that?" I ask sliding my hands down his back and under his arms, hugging him from behind. 
He hums and places a hand on my knee. "It's perfect," he mumbles and I could feel him relaxing against me.
"You tired?"
"A little," he concedes, leaning his head back onto my shoulder. I nuzzle my face into his neck and squeeze my arms around him.
"Then sleep, I'll be here," I say.
"People don't sleep on dates, Rose," Bucky says with a tired laugh. 
"And that," I say as I leave small kisses on his shoulder. "Is where you're wrong, old man. This is the 21st century, plenty of people sleep on dates." 
Bucky laughs and shifts his weight to his other arm that was previously on my knee. 
"Here," I say, pulling my legs out and sitting so I was perpendicular to him. I tug on his shoulder, pulling him down so his head was resting on my thighs.
He sighs and looks up at me with a small smile. "Thanks, dollface."
"Don't worry about it," I reply with a returning smile. I lean to grab his hand and intertwine our fingers. I like how they looked together; his hand was tan, felt rough and calloused, while mine was soft and my white skin was littered with freckles. 
"Now take a nap, I'll wake you when I start getting eaten by bugs or there's an alien invasion," I say, kissing the back of Bucky's hand. 
"M'kay, night Sweetcheeks," Bucky says before closing his eyes and pulling our hands down to his chest.

Vegan BBQ Jackfruit, Kale & Black Bean Enchiladas
For all of my interest in new, plant-based products, I’m often a slow adopter. I’ve got so many standby staple foods that it can take me a while to welcome something new into the rotation, and jackfruit is a perfect example. It’s one of the most popular ingredients in plant-based cooking these days, and until this summer, I had never—never!—even tasted it.
Thankfully, I’ve welcomed jackfruit into my life in the last few months, thanks to the folks at The Jackfruit Company, and it hasn’t taken me long to see what people love about it. It’s got a dense, “meaty” texture that’s still tender enough to pull apart—no wonder it’s so often used in place of pulled pork—and it seems to absorb flavor and seasonings readily, which makes it super versatile for cooking.
For all of its popularity in the vegan community, jackfruit is a relatively new product to US consumers (I’d never even heard of it until quite a few years after I’d gone vegan). Part of its growing presence here is thanks to Annie Ryu, the founder of The Jackfruit Company, whose vision has been and continues to be making jackfruit available worldwide.
Annie is a former pre-med student, who traveled to India in 2011 to implement a maternal and child healthcare program she’d developed with her brother. She saw jackfruit at a local street vendor’s stall and was intrigued—like most Americans, she’d never seen or heard of it. She soon learned that jackfruit is nutritious and sustainable: it’s resistant to drought and doesn’t need replanting each year, which makes it a good investment for farmers in tropical climates.
Struck by her experience in India, Annie ultimately moved away from medicine and toward building the Jackfruit company, creating a working international supply chain to make jackfruit more available around the world. Today, The Jackfruit Company, which is based in Boulder, works with 1,000 farming families in India to make jackfruit more globally available and to see that less of the fruit goes to waste, while providing income for the farming families.
The company makes refrigerated seasoned jackfruit meal starters, frozen single serve entrees, and foodservice products, all of which are vegan, non-GMO, and gluten free. I’ve had a wonderful time getting to know them, piece by piece: I’m saving some of the frozen meals for the fall, when time to cook will be more precious than it is now. I’ve gotten to know the seasoned jackfruit well, and so far, my favorite flavors are Tex-Mex, Curry, and BBQ.
It’s the BBQ that’s on full display in today’s easy vegan jackfruit, kale, and black bean enchiladas. The idea here was to pair jackfruit with greens for color, texture, and nutrition, and then to throw in black beans for some extra plant protein. It’s worth saying that jackfruit is very micronutrient dense—rich in Vitamins A and C, as well as a number of B vitamins—and it’s high in fiber. But for a meat replacement, it’s not high protein, so I usually pair it with some sort of legume.
I’m super excited to continue getting to know this new-to-me ingredient in more dishes: I see tacos, stir fries, and stews in my near future. But for now, I’m happy to use the BBQ jackfruit in one of my all-time favorite comfort food dishes—one that I like to eat for breakfast, lunch, or dinner!

Serves: 12-16 enchiladas
Ingredients
1 tablespoon olive oil
12 ounces washed and chopped curly kale
3 cloves thinly sliced garlic
2 tablespoons freshly squeezed lime juice
1 ½ cups cooked black beans (1 can, drained and rinsed)
20 ounces The Jackfruit Company BBQ jackfruit
Salt and freshly ground pepper to taste
12-16 corn or wheat tortillas of choice
1 15-ounce can green enchilada sauce (or a batch of the tomatillo sauce inthis recipe)
Chopped fresh cilantro, pickled jalapenos, and/or chopped avocado, for serving
Instructions
Preheat your oven to 350F and lightly spray a rectangular baking dish with oil.
Heat the oil over medium heat in a large, roomy skillet. Add the garlic slices and allow them to sizzle for about a minute; next, add the kale (you may need to do so in batches) and stir it as it wilts down. Continue cooking the kale until it’s tender, about 4-5 minutes.
Stir in the lime juice, black beans, and jackfruit. Mix and heat the ingredients through; taste and add salt and pepper as needed.
Pour ½ cup of the enchilada sauce in the bottom of the baking dish and spread it thinly and evenly. Fill each tortilla with about ⅓-1/2 cup jackfruit mixture. Wrap the tortillas up and place them, seam side down, in the baking dish. Pour the remaining sauce on top of the enchiladas. Bake for 35-40 minutes, or until the sauce has darkened on top and the edges are golden. Top the enchiladas as you like, and serve.

This is one of my easiest and most low-key enchilada recipes to date, which works perfectly with my hands off summer of meal preparation. It’s also in keeping with the star ingredient: the nice thing about using the BBQ jackfruit is that it’s flavorful enough to resist the need for a lot of extra spices and seasonings. These are weeknight friendly enchiladas, or a great prep-ahead option for a group brunch.

English Muffins
This English Muffins recipe is cooked on a skillet and makes fluffy English Muffins full of the signature nooks and crannies we love.
My Favorite English Muffins Recipe!
When you’ve got four kids, you become a pro at quick and easy meals. Back in the day, I found myself going through loads of store bought English muffins because they make for a yummy, filling, and deliciously easy breakfast. Simply toast them and slather them up with butter and jam. Or, turn them into a breakfast sandwich with a fried egg and sausage patty. At dinnertime, well, my family is all about English muffin pizzas.
It wasn’t long before I realized I’d have some major savings by making my English muffins at home! But, I psyched myself out. They’ve got to be hard to make, right?
Wrong! They are so easy to make. They are lightly kneaded, only rise once, AND you won’t even need to turn on your oven. 
What Are English Muffins?
When you think of English muffins, I’d bet you picture the signature nooks and crannies. I could just drool thinking about melted butter pooling in the large nooks and crannies. I bet you can, now, too. Are you picturing it? 
But, aside from nooks and crannies, what makes an English muffin an English muffin? Well, they’re not made in a cupcake or muffin tin. That’s it, really.
If you go to England, they’re simply called muffins. And, what we call muffins are called American muffins or sweet muffins. Weird, right?!? 
Recipe Ingredients
Don’t let these English muffins fool you! Aside from buttermilk and yeast, I’ll bet you’ve got everything you need at home right now!
buttermilk
butter
bread flour
Instant Yeast 
salt
sugar
egg
corn meal
How to Make English Muffins
Melt: In a microwave safe bowl heat the buttermilk and butter together in 30- second increments until the buttermilk is warm, reaching a temperature of 120°F – 130°F on an instant read thermometer. The buttermilk might separate and look curdled. Don’t worry, this is okay.
Mix: Add the flour, yeast, salt, sugar, and egg into the bowl of your stand mixer fitted with the paddle attachment. Pour in the buttermilk mixture and mix on low until combined. This should take about 1 minute. 
Remove the paddle attachment and replace it with the dough hook attachment. Turn mixer up to medium-high and mix for 5 minutes, until the dough is smooth and elastic. 
If you don’t have a dough hook attachment, you can knead the dough by hand on a lightly floured surface for 5-6 minutes. It will take about the same amount of time and you know your dough is ready when it’s smooth, elastic and bounces back when pressed lightly with 2 fingers.
Rise: Form the dough into a ball, and cover the bowl with a towel. Place the bowl in a warm, draft free place in your kitchen and allow the dough to double in size. This will take 1-2 hours, depending on the warmth of your kitchen. If your oven has a proof setting, this can be used as well.
Prep: Prepare a large baking pan by sprinkling it liberally with corn meal. Once you’ve done this, set the pan aside.
Divide: Once the dough has doubled in size, remove it from the bowl and divide it into 16 pieces. Roll each piece into a ball and flatten the ball until it’s about 3- inches in diameter. Place each into the prepared pan. Sprinkle the tops of the muffins with more corn meal. Cover the pan and let the dough rest for 20 minutes.
Heat: Spray a griddle or large skillet lightly with nonstick spray, or coat it lightly with oil. Heat the pan on low and place the muffins onto the pan, working in batches, carefully transferring the muffins onto the griddle. You don’t want to handle them too much. This will cause them to deflate. 
Cook: Cook the muffins on each side for 7-10 minutes, until the crust on each side is golden brown and the center of the muffin reaches 180°F on an instant-read thermometer. 
If you don’t have an instant read thermometer, don’t stress! If your muffins cook in the skillet for 7-10 minutes on each side and are golden brown, they are pretty much guaranteed to be cooked. 
If the muffins are browning too quickly, place them in a 325°F oven on a parchment lined pan for 10 minutes, or until cooked thoroughly. Depending on the pan you use, this can happen and is not a problem at all!
Cool: Allow the muffins to cool completely on a wire rack before using a fork to split them.
Why Buttermilk?
I get – hands down – the best English muffins using buttermilk. I’ve tried alllll the other options: whole milk, 2% milk, combinations of milk and water. Take it from me, buttermilk gets the best results. 
I really like the texture and flavor that buttermilk adds to my English muffins. The acidity in the buttermilk works really well with the yeast to rise and create a nice, airy dough. This is what gives my homemade English muffins the signature nooks and crannies we all love
Don’t worry if you don’t have buttermilk. You can quickly and easily make a buttermilk substitute right at home!
What Happens If Your English Muffins Brown Too Quickly In Your Skillet?
If the muffins are browning too quickly, don’t panic! Depending on the pan you use, this can happen and is not a problem at all! Simply, place them in a 325°F oven on a parchment lined pan for 10 minutes, or until cooked thoroughly. 
This can happen for loads of different reasons, but these are the most common:
A dark pan like a cast iron skillet distributes and holds heat, which can lead to it getting too hot too quickly.
Stove tops can heat on low at different temperatures. You might have an electric stove top, or a gas stove top…there’s no set temperature for “low” and temperatures may vary.
If you’re working in batches, your skillet will be hotter on the second or third batch than the first, creating varying cook times.
Tips for the Best English Muffins
If you’re looking for my top tips for the best English muffins, I’ve got you, girl.  Here are my suggestions:
Allow the dough to rise to at least double in size. If the dough isn’t rising, just give it more time, and make sure it’s in a warm, draft-free place in your kitchen.
Does your oven have a proof setting? If yes, this works great with this dough. 
Let that dough rest. Once you’ve allowed your dough to rest for 20- minutes after you’ve formed them into flattened balls try not to handle them too much. They will rise slightly and this is when all the air pockets form giving you the distinct interior texture of an English Muffin.
Both kinds of yeast work. You can use regular yeast instead of instant yeast, you just need to give it more time to rise!
If your English Muffins are browning too quickly on the stove top, just place them on a parchment lined baking sheet in a 325°F oven for 10 minutes to bake them.
How To Fork Split An English Muffin
Please! Never cut an English muffin with a knife! When you do this, you lose all of the nooks and crannies. Instead, you should ALWAYS fork split your English muffins. 
Here’s how:
Hold your English muffin in one hand and your fork in the other hand.
Insert your fork into the side of the English muffin.
Spin your English muffin while simultaneously moving your fork in and out until it arrives back at the place you started.
The two sides should completely separate. 
Serving Ideas
English muffins make for a great breakfast. They’re super simple to toast and serve with butter or jam. You can also use them as the bread on your breakfast sandwich – egg and cheese; egg, cheese, and bacon; egg, cheese, and sausage – on an English muffin. Scrambled eggs, over easy eggs, I’ve even been known to sandwich an omelette filled with cheese between two slices of English muffin. YUM!
My kids have always enjoyed them as mini pizzas, too. All you have to do is fork split them, spoon on your favorite sauce, and top with shredded mozzarella. Then pop them in the oven until toasted and the cheese is melted. 
You could use your English muffins as the bread for any sandwich, really. Peanut butter and jelly? Sure! BBQ pulled pork? Yep! Burger?
How to Store English Muffins
Now, it’s not likely that I’ll eat 16 English muffins in one sitting. Hey, I said it’s not likely, but it’s definitely not impossible. 
If you do end up needing to store your English muffins, you have two options. First, you can store them in an airtight container at room temperature for 3 days. 
Or, you can freeze your leftover English muffins in a ziptop bag for 30 days. Don’t forget to label your freezer bag so you are sure when to use them. Allow them to thaw to room temperature before using them.

Making English Muffins at home is so rewarding…and delicious! This easy English Muffins recipe will have you enjoying homemade muffins in no time.
Ingredients:
1 3/4 cups buttermilk
1/4 cup butter, cubed
4 1/2 cups bread flour
1 (0.25- ounce) packet Instant Yeast (2 teaspoons)
1 teaspoon kosher salt
2 tablespoons granulated sugar
1 large egg, lightly whisked
Corn Meal for sprinkling on pan
Instructions:
In a microwave safe bowl heat the buttermilk and butter together in 30- second increments until buttermilk is warm, reaching a temperature of 120°F – 130°F on an instant read thermometer. Buttermilk might separate and look curdled. This is ok.
Add the flour, yeast, salt, sugar, and egg into the bowl of your stand mixer fitted with the paddle attachment. Pour in the buttermilk mixture and mix on low for 1 minute until combined. Remove the paddle attachment, replacing it with the dough hook attachment. Turn mixer up to medium-high and mix for 5 minutes, until the dough is smooth and elastic. Alternately, you can knead the dough by hand on a lightly floured surface for 5-6 minutes.
Form the dough into a ball, and cover the bowl with a towel. Place the bowl in a warm, draft free place in your kitchen and allow the dough to double in size. This will take 1-2 hours, depending on the warmth of your kitchen. If your oven has a proof setting, this can be used as well.
Prep a large baking pan by sprinkling it liberally with corn meal. Set aside.
Once the dough is doubled, remove it from the bowl and divide it into 16 pieces. Roll each piece into a ball and flatten the ball until it’s 3- inches in diameter. Place each into the prepared pan. Sprinkle the tops of the muffins with more corn meal. Cover the pan and let the dough rest for 20 minutes.
Spray a griddle or large skillet lightly with nonstick spray, or coat lightly with oil. Heat the pan on low and place muffins onto pan, working in batches, carefully transferring the muffins onto the griddle. You don’t want to handle them too much, causing them to deflate. 
Cook the muffins on each side for 7-10 minutes, until the crust on each side is golden brown and the center of the muffin reaches 180°F on an instant-read thermometer. If the muffins are browning too quickly, place them in a 325°F oven on a parchment lined pan for 10 minutes, or until cooked thoroughly. Depending on the pan you use, this can happen and is not a problem at all!
Allow the muffins to cool completely on a wire rack before using a fork to split them.
Notes:
Store airtight at room temperature for up to 3 days. Freeze in a zip-top bag for up to 30 days. Allow English Muffins to thaw at room temperature.

We stopped by California Pizza Kitchen inside the King of Prussia Mall to use our #MakeItMontco promotional free appetizer or free dessert. CPK offers diners a large variety on their menu including signature hand-tossed pizzas, seasonally-inspired specials, hand-shaken cocktails and delicious desserts. We started off with the Buffalo Cauliflower and Barbecue Chicken Pizza, a favorite since the restaurant first opened in Beverly Hills in 1985.
CPK was started by two former federal prosecutors Rick Rosenfield and Larry Flax. They had a passion for food and with fresh high-quality ingredients created hearth-baked pizzas such as The Original BBQ Chicken, Thai Chicken, and Jamaican Jerk Chicken, cooked in an open kitchen. Their first restaurant gave California recognition alongside major pizza destinations like Chicago and New York. After the first location opened, CPK expanded to more than 250 locations in more than 30 states and 11 countries. Today the CPK twist on global flavors is enjoyed by guests, during both business and family gatherings. You can even find CPK pizza’s inside your grocer’s freezer, inside major airports all over the world, feeding eager fans at sports stadiums and students on college campuses.
Next on our visit was a brewery tour and tasting at King of Prussia’s only craft brewery, Workhorse Brewing Company located at 250 King Manor Drive. With options for both indoor and outdoor seating, we enjoyed lasting local favorites including hand-crafting award-winning lagers, IPAs and more. Workhorse offers something to both the beer geek and craft novice; drinkable, yet nuanced, well-made beers by Brew Master Neil Olewine.
We enjoyed a private tour led by Co-Owner Dan Hershberg which was informative and fun. It is truly a special experience to enjoy craft beers brewed on site. The Standard tour is 30 minutes and includes one full-sized draft pour in the $10 price (paid upon arrival at the brewery). This guided journey will show you the full scope of our 70,000 square foot operation and allows for plenty of Q&A. The VIP tour is led by Workhorse CEO and Co-Founder Dan Hershberg, giving guests an opportunity for a more in-depth experience, including details on the origin story. Like our standard tour, this session includes a full-sized draft pour of any of our beers, but runs an additional 15 minutes. Food Trucks make a special appearance at Workhorse weekly Thursday-Sunday and guests may also bring their own food. Luckily a delicious pairing with Workhorse beers isn’t a challenge since the beer portfolio is a balance between lagers and ales, providing a range of beers that include, crisp, malt-driven lagers all the way to dank, resinous IPAs. They specialize in traditional styles, while still offering rotating seasonal releases.
Sunday morning we got an early start fueled by breakfast with Vitality Bowls in the King of Prussia Town Center. This health focused fast casual spot specializes in making açaí bowls topped with organic granola (gluten free available) and a selection of superfood ingredients. An açaí (ah-sigh-ee) bowl is a nutritional packed with the Amazon’s antioxidant-rich organic açaí berry and super-fruits pitaya, graviola and acerola are offered as a base for bowls as well.
Roy Gilad and Tara Gilad, founded Vitality Bowls in 2011 in San Ramon, California. The duo started the concept together as a result of discovering their daughter’s severe food allergies and wanting to find healthy, safe food alternatives. All items on the menu are made fresh to order and in a kitchen designed to avoid cross contamination of common food allergens. Since franchising in 2014, the brand has seen significant growth with more than 100 cafes open and in development.
After hitting the King of Prussia Town Center for some shopping we built up an appetite for a bigger meal. We stopped by Paladar Kitchen & Rum Bar for brunch featuring $3 Mimosas! Paladar Latin Kitchen is conveniently located in the King of Prussia Town Center. This restaurant offers diners Latin American cuisine inspired by Central & South America, Cuba and the Latin Caribbean.
  Starting back in 2007, the restaurant originated in Cleveland, Ohio. Soon they saw more and more guests coming back to enjoy Paladar’s bold flavors and vibrant cultures of Latin America without leaving their comfort zones. The menu is designed to be extremely family-friendly and approachable menu featuring signature dishes like freshly prepared guacamole, slow roasted and grilled meats, fresh seafood and homemade salsas.
We kicked off brunch with Paladar Mimosas in varieties of Pomegranate-Ginger, Grapefruit or Traditional Orange. The rhythm of Latin Music playing through both the indoor and outdoor seating at the restaurant sets the tone for the unique rum bar offering fresh muddled Mojitos, over 75 selections of rum and an approachable and exciting wine list. We tried a rum flight, but our favroite drink of the day was the Jalapeno Paloma made with El Jimador Silver Tequila, jalapeños, grapefruit juice, simple syrup, and a salt rim.
Our server suggested some of the more popular brunch dishes include: Maple Glazed Pulled Pork with fried eggs, yucca cake, and jalapeños; Chipotle Honey Fried Chicken with fried eggs, chipotle honey glaze, yucca cake, and pico de gallo; Scrambled Egg & Chorizo Soft Tacos with pickled jalapenos, chihuahua cheese, cabbage, and aji verde sauce; or the Cripy Duck Confit Hash with fried eggs, sweet potatoes, plantain and yucca spaetzle with aji verde.
Make sure to start off your meal with the Craft-Your-Own Guacamole available in a single serving of trio, served with house made blend of plantain, malanga and tortilla chips. After more than a year of signs and rumors, Aldo’s Pizza Pies in downtown Memphis finally opened in July of 2012. Now, Aldo’s (and its other location in Cooper Young) are a Memphis staple for great pizza, sandwiches, and local beer. You’ll recognize the name “Aldo” of course, if you know that Aldo Dean is the same restauranteur who owns Bardog Tavern on Monroe downtown, Slider Inn in midtown, and the forthcoming Slider Inn on South Main. The downtown Aldo’s is located on the first floor of the Barbaro Flats building on the car-free part of Main Street – you’ll need to park along another street and take the short walk to it (or ride a bike!) The downtown location has a huge covered patio, a spacious dine-in area, and medium-sized bar. The midtown location is a bit smaller, and has a nice rooftop patio. Their menus are slightly different, and you can see them both here. If you’re doing a full dinner at Aldo’s, start with the appetizers like garlic knots, prosciutto-wrapped asparagus, or stuffed peppers. Folks love the garlic knots. They’re giant roll-sized hunks of garlic bread and come with marinara for dipping. Pro-tip: ask for a side of the vodka sauce for dipping, too. The prosciutto that was wrapped around the asparagus was like paper-thin, perfectly smoky bacon. The poblano pepper’s spice was tempered by the pile of warm cheese on top of it. The peppers come with some crostini, which are presumably a cheese-to-mouth delivery method, but you could opt to attack with a fork. BBQ pizza The point of Aldo’s isn’t the vegetables, though – it’s the pizza. Aldo Dean is a veteran of the New York City restaurant scene, and used New York style pizza as the inspiration for his pizza recipes. Go for the popular vodka pie, a simple (but tasty) cheese pizza with vodka cream sauce or The Other Side, with poblano sauce, fontina cheese, sliced tomatoes and big hunks of grilled chicken. If you’re more into the meat, go for the T-Rex. It comes with a traditional red pizza sauce, mozzarella, and pepperoni, sausage, and meatballs. Pizzas come in small ($15 – $18) or large ($23 – $25) – though prices may vary or change over time. The small pizzas are big enough for two not terribly hungry people to split, or one normally hungry person to eat and have some left over. If you’ve got two hungry people or more, go with a large. The Lombardi You can also order by the slice, with basic choices – think pepperoni, veggie, or cheese – or the Slice of the Day, which is usually something more adventurous. Plus, there’s a build-your-own option. They also offer sandwiches, salads, and small plate (meatballs, pasta) and a kids’ menu (look for the “Bambini” section). For dessert, split a slice of the New York cheesecake, about which, I’ll say this: I’m a good southern girl. I do my best culinary work in the cream cheese arts. I’m a connoisseur of cheese-based desserts. The cheesecake at Aldo’s is, hands down, the best cheesecake I’ve ever had. Cubano sandwich at the midtown location That’s not hyperbole – it was so good, I wanted to take it home and study it to figure out what made it so amazingly light and fluffy and rich all at once. Pro tip: wash it down with a glass of super tart framboise beer. Though the restaurant does have a bar (and a well stocked one at that), it’s more family friendly than both Bardog and Slider Inn.
