Delightful Summer Baklava - Recipe by Grandma XHENI - PART I Ingredients: 600 gr of crunched nuts 500 gr wheat flour 5 eggs 350 gr unsalted butter 2 coffee cups of vegetable oil 1 lemon dry cloves 2 soup spoons of raw honey corn starch salt Preparation: Baklava could be prepared with thinned dough foils or with ready dough foils, which are bought ready in the shop. Grandma Xheni thins the dough foils by herself. For you that will use pre-made foils, make sure to get wet foils dedicated for sweets; and you may skip the first part of the recipe (preparation of dough and thinning of the foils. Start with dough preparation: Sift the flour using a thin sieve. Pput the flour in a bowl and open a hole in the middle. Add the yolks of two eggs and three whole eggs. Add little salt. Work the preparation with hands. Add a coffee cup of tiepid water and one coffee cup of vegetable oil. Work the dough well, until it becomes a slightly softer than the pie dough. Wrap it with plastic foil and let it rest for at least one hour. Meanwhile, crack the nuts and crunch them into small pieces. Grandma Xheni advice to use the knife to cut the nuts, so that baklava tastes better that way. Add three soup spoons of brown sugar to the crunched nuts mix well with the help of a spoon. Once the dough break is completed and the room is warm, start with the thinning process. Divide the dough into small pieces and prepare scones of dough. Work the scones with corn starch and leave them into the dough bowl. Grandma Xheni advises to work the baklava dough in piecemeal, so that the dough is not dried. Healthy Soup with Meat Jelly - Recipe by Grandma XHENI Grandma XHENI has learned today's recipe from her grandmother, who was famous for her cooking. It is a simple to-be-prepared soup, but very tasty and healthy. She misses her grandma any time she cooks this soup and recall her wonderful memories with grandma. Due to the fact that this recipe has few ingredients, it is crucial to select high quality natural inputs. Here I go with the recipe: Ingredients: 1 kg of meat jelly (or freshly made) 1/2 cup of white rice 2 tomatoes 1 bunch of fresh parsley or dry parsley red pepper salt, olive oil Preparation: For preparation of meat stock we may use: beef, lamb, rabbit, deer, etc. I prefer a mix of all these kinds of meat for stock preparation, as it is excellent for immunity. Take the meat with bones and put it in a pot with cold water. Place it on the heat and bring it to boiling. Remove the foam and let it simmer until the meat is completely disconnected from the bone. Remove from the fire and let it aside until cooled. Then, remove the meat from the bones and chop it in small pieces. Such preparation can take up to 4 hours, my advice is to prepare the meat jelly the day before and keep it in the refrigerator for up to three days or in the iced compartment for longer. Put the meat jelly in a pot on fire to warm up. Meanwhile, wash the rice and pour water. Peel the tomatoes and chop them into the small cubicals. Add the rise as soon as the meat jelly start to boil. Attention! Rice needs around 30 min to be fully cooked. Leave the rice boiling for 15 minutes, than add tomatoes and red pepper. Let them simmer and stir occasionally. Add one cup of cold water to help thicken the soup. Fix it with salt. When the rice is fully cooked and the broth is thick, add shredded parsley and a little olive oil. Remove from fire and let quite for 10 minutes before serving on the plate. Bon Appetite! This soup is great for children and adults, because is very healthy. Serve it as the first dish of a full meal (with 4 dishes) or just alone for a light and delicious dinner.
