As an omnivore who likes vegan and vegetarian cooking I think the mistake a lot of people make when trying to convince meat eaters to go plant based is trying to convince them that something you’ve got will replace meat for them.
I like vegan nuggets and real chicken nuggets for different reasons. They taste different. They only taste identical to you because you haven’t eaten meat for five years.
When cooking for myself I only eat meat maybe like three times a week because vegetarian cooking is often cheaper and it tastes good.
Like just give people the actual recipes you use that aren’t pasta. Every time you ask what to eat on a meatless day people are like. Pasta. I don’t want pasta every day.
Point out the foods people already eat that are vegetarian. Like sweet potato fries, veggie chow mein, grilled mushrooms, mashed potatoes, black bean enchiladas, peanut butter sandwiches. Tell people what you microwave when you’re drunk at 3am. Show people that vegetables are so good they’ll want them in their diet.
Also some people are just never gonna go vegan. They’re just not. I’m certainly not, and I love vegan food. But since I’ve fallen in love with vegetarian cooking I eat meat much less and I’m much more careful about picking the meat I do eat. Doesn’t that align with a lot of your goals?
Impossible burger doesn’t taste like meat. But you know what tastes really good? A mushroom fajita taco. Falafel. Potato pancakes with applesauce. Smoky vegan collared greens. Hot potato salad with herbs. Palak paneer with rice. Tofu Pad Thai with extra peanuts. Some of my favorite foods of all time, and I’m a dirty rotten meat eater. Use THAT to get your foot in the door. And be more accepting of some half-assed victories. I’m on your side for the most part, believe it or not. But stop trying to claim certain things are just like meat. You and I both know you don’t plan most of your weeknight dinners around meat substitutes.

Since it is one of those days where I am unable to cook. I thought I would share one of my favorite recipes, not vintage exactly, but a family recipe, one of my moms. Unless is the 90s vintage now?
Anyway this one freezes well and makes idk 4 or 5 servings.
I like to prep a few things ahead on the days I feel well to have on days like today.
Enchilada Soup
1 can cream of chicken
2 cans of chicken broth, I used one bigger container of low sodium
1 can cream corn
1 big can of green enchilada sauce
1 can green chiles
1 can of diced chicken, or a small amount of rotisserie etc.
Half an onion sliced or diced, idc
Bring to a boil then add:
4 or 5 flour tortillas cut with scissors into tiny strips and boil 5 minutes.
Add lots of cheddar cheese
Sour cream if you like, but I didn't use any last time.
It's like a spicier chicken noodle, comfort food, not healthy.

Spinach White Bean Enchiladas from Budget Bytes
I usually don't bother with the sauce on these and just make them with green enchilada sauce because I'm lazy. They also make a great quesadilla filling!
Best Lentil Soup from Cookie and Kate
I have had so many meh lentil soups and this one really stood out to me, though of course there's always personal taste involved!
Smoky Black Bean Beet Burgers from Minimalist Baker
I personally find about 1/3 cup of mix is the right amount for 1 burger
And a couple personal "recipes":
Baked Sweet Potato + Black Beans + Queso Fresco and/or Sour Cream + Pico de Gallo + Fried Egg (optional)
Polenta + Black Beans + Sauteed Kale w/Garlic + Tempeh/Tofu/Chicken w/BBQ Sauce (good with side of cherry tomatoes)
Roasted Root Veg (Carrots, Beets, Squash, etc) + White Beans + Italian Dressing (serve with bread or grain for added heft)

Holiday meal planning (aka me trying to have a break from doing all the cooking)
Eaten so far….
Oven pizza, beans on toast, sausage and greens gnocchi bake (cooked by d1), jacket potatoes and baked beans and cheese, chicken enchiladas (I had leftover pulled chicken, pepper and black bean filling in the freezer at home that I brought with us and just threw it all together this evening)
Next five days: lamb curry (cooked by my dad), pulled pork burgers (d1), TikTok feta pasta (d1 and d3), readymade steak pies, peas and mash (thrown in oven by me probably) and takeaway fish and chips
Then we have four days left at the end that we haven’t planned for but we have another supermarket delivery arriving for those days so the planning can wait. Also d2 will be here by then and she likes to cook so she can throw in a recipe suggestion or two. I’ve done two supermarket deliveries so far, the first was £300 and the second was £200 😱. It feels a lot but we are 7 people, plus a baby on a tricky diet. My mum and dad will chip in 2/7 of the cost at the end when I work out the total food and drink spend.
