Lentil Salad with Feta and a Lemon Turmeric Sunshine Dressing
This post is all about how to take a very basic ingredient from your kitchen and turn it into a (healthy) gourmet salad. Are you excited to try this out with me?
The basic ingredient I am referring to here are lentils. Given that the vegan revolution is spreading through the world, lentils have started making an appearance in a variety of healthy dishes in restaurant menus.
Indian cuisine puts to use a spectacular variety of lentils (dals, split or whole) in dishes like dals, khichdi, as a filling inside breads / puri and so on. But mostly dals, which are consumed on an everyday basis, pretty much across India.
When we talk about lentils and Indian cuisine, salad is not the first thing that comes to mind. One of the only lentil based salad that I can think of is  kosumalli where split skinned yellow mung dal is mixed along with cucumber or carrots. This makes a light dish that heralds the onset of summer. A spoonful of this salad is served as a part of a larger meal.
Lentil Salad with Feta
 Brown lentils or whole masoor / sabut masoor is the hero ingredient here. While a curry using this dal along with rice is my favourite weeknight dinner, these lentils are the perfect Indian pantry ingredient for a lentil salad.
When you cook the whole masoor just right, it retains its shape well enough to be tossed into a salad. I make sure not to pressure cook the soaked lentils, but just steam cook (minus the weight), for it to be cooked just right.
To complement the earthy flavour of this lentil, I have used fresh and flavourful ingredients like green apple and cucumber, all brought together with a sunshiny lemon turmeric dressing.
A few tips for this Lentil Salad with Feta
Ensure that the lentils are not overcooked. Please follow the instructions on cooking these lentils given in the recipe below.
Make sure to douse your salad with plenty of dressing as lentils are flavour sponges. Allow this salad to sit for a while. Lentils will absorb all the flavours of your dressing as well as the juices from the other ingredients like cucumbers and apple.
The feta cheese adds a sharp saltiness that pairs wonderfully with these lentils. For a vegan version of this lentil salad, simply omit feta and use some crumbled smoked tofu instead.

Substitutes for whole masoor in this lentil salad with feta — If you don’t find whole masoor outside of India, you can substitute it with Puy lentils.

Lentil Salad with Feta Yum
Instructions
To prepare the lentil salad with feta, start by cooking the lentils. Drain the soaked masoor. Cook on stove top / pressure cooker or Instant pot until just cooked and retaining its shape. For pressure cooking, place masoor with enough water to cover, a bay leaf and 1/2 tsp salt. Close the pressure cooker lid and remove the weight. After a few minutes, steam starts escaping from the nozzle. Switch off after 5 minutes.
Open lid and drain the cooked lentils in a colander. Allow to cool for a bit.
Wash and dry the greens (spinach or any other).
In a shallow bowl, layer half the lentils. Scatter spinach leaves, beet, cucumber and apple over this. Top with the remaining lentils.
Scatter feta cubes over the salad.
In a small bowl, whisk the lemon juice, olive oil, turmeric and salt vigorously until thick. Pour this all over the salad.
Garnish with toasted cumin seeds and nasturtium petals.
Recipe Notes
If using regular cucumber, peel and discard seeds before cutting into thin batons.

Ingredients: -Mash daal (White lentil) ½ Cup (washed & soaked overnight) -Chana daal (Split chickpeas) ½ Cup (washed & soaked overnight) -Moong daal (Split yellow lentil) ½ Cup (washed & soaked overnight) -Masoor daal (Split orange lentil) ½ Cup (washed & soaked overnight) -Pani (Water) 4-5 Cups or as required -Instant oats 1 & ½ Cups -Pani (Water) 1 & ½ Cups or as required -Hari elaichi (Green cardamom) 4-5 -Badi elaichi (Black cardamom) 2 -Baadiyan ka phool (Star anise) 2 -Darchini (Cinnamon sticks) 2-3 -Sabut kali mirch (Black peppercorns) 8-10 -Zeera (Cumin seeds) ½ tbs -Saunf (Fennel seeds) ½ tbs -Tez paat (Bay leaf) 2 -Lal mirch powder (Red chili powder) 2 tbs or to taste -Haldee powder (Turmeric powder) 1 & ½ tsp -Jaifil powder (Nutmeg powder) ¼ tsp -Javatri powder (Mace powder) ¼ tsp -Salt or Pink Salt ½ tbs or to taste -Oli of your choice ¼ Cup -Pyaz (Onion) sliced 2 medium -Lehsan (Garlic) crushed 1 tbs -Adrak (Ginger) crushed 1 tbs -Chicken boneless cubes ½ kg -Prepared spice mix 2-3 tbs or to taste -Dahi (Yogurt) whisked 1 Cup -Pani (Water) 2 Cups -Salt or Pink salt to taste -Pani (Water) 1 Cup (if required for desired consistency) Assembling: -Hara dhania (Fresh coriander) -Adrak (Ginger) julienne -Lemon juice -Chaat masala
Directions: -In pot,add white lentil,split chickpeas,split yellow lentil,split orange lentil and water,mix well and bring it to boil,cover & cook on low flame until lentils are done (approx. 45 minutes). -Add instant oats and mix well. -Add water and mix well,cover and cook on low flame for 10-12 minutes & keep stirring in between. -In spice mixer,add green cardamom,black cardamom,star anise,cinnmom sticks,black peppercorns, cloves,cumin seeds,fennel seeds,bay leaves and grind to make a fine powder. -In bowl,add grinded powder,red chili powder,turmeric powder,nutmeg powder,mace powder,salt or pink salt and mix well.Daleem spice mix is ready! -In wok,add oil,onion,mix well and fry until onion are brown. -Add garlic,ginger and mix well. -Add chicken,mix well until chicken changes color. -Now add prepared spice mix and mix well. -Add yogurt,mix well and cook for 2-3 minutes. -Add water,mix well and bring it to boil,cover and cook on low flame for 8-10 minutes. -In boiled lentils & oats,add prepared chicken qorma and mix well. -Add pink salt and mix well. -Switch off the flame,blend the whole mixture with the help of the blender. -Switch on the flame,add water and mix well,cook until desired consistency. For assembling: -In serving bowl,add oats & lentil daleem,fresh coriander,ginger,lemon juice,chaat masala & serve.

Directions: -Pot mein mash daal,chana daal,moong daal,masoor daal aur pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per daalein gul janay tak paka lein (approx. 45 minutes). -Instant oats dal ker ache tarhna mix ker lein. -Pani shamil karein aur ache tarhan mix kerna ka bad dhak dein aur halki ancch per 10-12 minutes kliya paka lein aur bech bech mein chamcha chalatay rahein. -Spice mixer mein hari elaichi,badi elaichi,baadiyan ka phool,darchini,sabut kali mirch,laung,zeera,saunf aur tez paat dal dein aur grind ker ka fine powder tayyar ker lein. -Bowl mein grinded powder,lal mirch powder,haldee powder,jaifil powder,javatri powder aur salt or pink salt dal ker ache tarhan mix karein.Daleem spice mix tayyar hai! -Karhai mein oil aur pyaz dal ker ache tarhan mix karein aur pyaz ko brown hunay tak fry ker lein. -Lehsan aur garlic dal ker ache tarhan mix ker lein. -Chicken dal dein aur chicken ka rang tabdeel hunay tak ache tarhan mix ker lein. -Ab tayyar spice mix dal ker ache tarhan mix ker lein. -Dahi dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein. -Pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per 8-10 minutes kliya paka lein. -Boiled daalein & oats mein tayyar chicken qorma dal ker ache tarhan mix ker lein. -Namak or Pink salt dal ker ache tarhan mix karein. -Chulha bund ker dein aur hand blender ki madad sa mixture ko ache tarhan blend ker lein. -Chulha on karein aur pani dal ker ache tarhan karein aur aur desired consistency tak paka lein. For assembling: -Serving bowl mein oats & lentil daleem,hara dhania,adrak,lemon juice aur chaat masala dal ker serve karein.
