Frying up some fermented onions and garlic- for a pot of black beans I’m making for the week. The onions are pink due to being in the left over red and green cabbage potato brine from my New Years kraut. I later took that brine and pickled some cucumbers, which is when I added the onion and garlic. Last week, I finished off part the kraut by adding it to a lentil soup I made- and the results were crazy good (a friend confirmed this- I’m not trying to be egotistical!). This is my second time making my own miso. It’s actually very easy to do. The most basic recipes require just three ingredients besides water— soy beans, sea salt, and koji (fermented grain, usually rice, which I buy online). Some of mine will age for two months before I eat it, some for at least two years. Last time I made this was two years ago and I’m just running out of my supply. Angelic ruby red sauerkraut just pulled up. This time I changed up my technique by not beating the cabbage up too much and relying more on an external brine to do its work. Usually I salt the cabbage, beat the hell out of it to get the water out, and then submerge it. This time I lightly salted the cabbage, barely worked it, and used a combination of brines from a couple other krauts. New Years Ferment! Started the new year with a big new batch. Adding mashed potatoes is a new found revelation that went really well in my last kraut. The main batch I made today is carrots, Brussel sprouts, green cabbage and red cabbage. I cut and salted each as I went along, then added cooled mashed potatoes- and a salty brine to keep it below liquid. Then I had leftover big pieces of cabbage that I submerged in the rest of the brine, mixed with a tiny bit of potato (for the starch), plus a little onion- and a capful of apple cider vinegar.
