I’ve been wanting some good take out for a bit now, but that’s hard to come by, so I made my own! Tonight we had @mrsvitale Chicken and Mixed Veggie Stir Fry over basmati rice and it totally hit the spot. I used chicken thighs rather than breast and I think it made a huge difference. The meat was super tender and wonderfully flavored. For the veggies I chose fresh broccoli, carrots, red bell pepper, shallots, baby carrots and water chestnuts. I cooked my veggies in water for about 5 minutes so they would get semi tender but still have some crunch but the best part of this dish was the sauce. It was the perfect balance of sweet, tangy and salty. I’d you’re craving Chinese food, you gotta make this! As you all know yesterday was father's day and quite warm and I wanted something simple and cool for dinner. That's all the excuse I needed to make sushi, I love the stuff. I made both crab and shrimp sushi and served it topped with homemade spicy sauce. With homemade kimchi, pickled ginger, and soy sauce on the side. Since I got a bit carried away and made too many I also had enough left for my dinner tonight. This was not a hardship, not at all A lot of people overcomplicate sushi but unless you're using actual puffer fish you don't need any special training. Just do it and worry about getting better as you go. There are an abundance of YouTube videos teaching you how to make sushi. And if you can't find special sushi rice just use medium grain rice, it'll be just as tasty. It doesn't have to be fancy, YouTube and sushi go perfectly together. Teriyaki Chicken tonight! I’ve been wanting to make this @mrsvitale recipe ever since she posted it and I am SO glad I finally did! Not only is this super easy, but the flavor just wants to smack ya across the face, it’s so good! I used chicken breast because that’s what I had on hand, and I really wish I would have used chicken thighs. The breasts just got a little too dry, but ya live and ya learn. I paired it with the broccoli recipe that came with the teriyaki chicken and brown basmati rice.
