How to Make Delicious Homemade Fish Cutlets
Who doesn��t like fish cutlets? With their tantalising aroma, tender and flavourful interior, and crispy exterior, they form the essence of every starter meal. I have explained the recipe for fish cutlets in my Kalavara Youtube Channel.
One of my fond memories of having guests during holidays was the particular aroma of the fish cutlets. Once again, it was my mother with her culinary delights, and she never failed to surprise us with her special recipes. However simple the dish may seem, she always managed to make it special. We always had cutlets for different occasions at our house, be it Onam, Christmas, a birthday party or a family gathering. Sometimes, it would be chicken cutlets, sometimes beef and very often fish cutlets. Especially when my mother gets hold of very good salmon, kingfish or mackerel.
In this blog, I would like to revisit those memories as we journey through the art of making fish cutlets and regale you with stories on the origin and history of the dish, followed by cooking videos Malayalam recipe on how you can prepare this lip-smacking side dish. Take 250 grams of Neimeen or Kingfish. I cooked the fish with water, salt and half teaspoon of pepper. Heat a pan, pour oil over it. Once the oil is hot, add one and a half teaspoons of nicely cut ginger, two green chillies, 5-6 curry leaves (leaves only), two onions, also nicely cut. Saute them well. The onions have to become tender and translucent.
Once the onions are cooked well, we can add enough masala powders. Lower the flame, add one-fourth teaspoon of turmeric powder, half teaspoon of crushed pepper powder, half a teaspoon of fennel seeds, three-fourth teaspoon of garam masala powder, one teaspoon of soya sauce.
Add one and a half cups of cooked and thoroughly mashed potato. Make sure the potatoes are mashed well, with no pieces.
Taste and add salt, sauce or spice, if needed Take an egg and separate the egg white and yellow. The white you can use for dipping the cutlets and frying. The yellow can be added to the cutlet mix.
Shape the cutlets. You can decide whichever shape you want, or use a mould. Now dip the cutlet in egg white and in the bread crumbs before frying. The egg white and breadcrumbs must be evenly coated before they are fried. Fry on medium flame.

My 2020 Southeast Asia Trip Recap
Another quick vacation trip in the books! This winter’s trip to Singapore and the Philippines, with a side of Taipei, was a fun, productive trip despite everything going on in the world with the coronavirus. As I have mentioned before, it’s always nice to travel to very different countries so that you can explore two contrasting cultures, peoples, and landscapes. I felt that Singapore and the Philippines contrasted each other beautifully and that it was a joy to experience both countries and cultures side by side in one trip. The western-like city of Singapore and the more third-world-type country in the Philippines. Between those places, I got to see different sights and scenes, from Garden Rhapsody at Gardens by the Bay in Singapore to El Nido at sunset! I got to eat all sorts of delicious foods, from a Michelin-starred hawker stall in Singapore to a nice, traditional Filipino restaurant in BGC! I got to take part in various different outdoor activities, from canyoneering in Badian to island hopping in El Nido! And I also got to meet some nice people here and there and meet up with an old friend to briefly catch up. All without breaking the bank and paying a ton of money.
But despite all the great memories and experiences I had, the trip wasn’t perfect by any means. There were things on this trip that were limited due to concerns over the coronavirus. The trip was crammed tight and there wasn’t as much time to lounge and rest. The heat and humidity were fierce enemies. And traveling with convenience wasn’t as much a luxury when traveling alone as it was when traveling with family or your significant other, making conserving energy and photography even harder.
With the coronavirus pandemic, shows were canceled in Marina Bay in Singapore and flights were changed and airport lines were long due to changes. Luckily, the pandemic hadn’t come to a head yet when I was traveling, at least allowing me to have a successful, productive trip, one that was quite tight as I tried to cram in as much as I could in a short twelve day stay in Asia. Because of the schedule, I didn’t get to enjoy tropical island paradise life as much as I wish I could’ve. I wish I had more time to eat more foods and not be tired all the time from the heat and humidity. And I wish I could’ve hung out on a hammock sipping a mango smoothie under some palm trees on the beach. Ugh, the time constraints of a medical resident.
Heat and humidity were also a problem. Being in SoCal the last couple of years made me forget how hard it is to travel in Southeast Asia. At times, it was super hot and humid. At other times, it was muggy and rainy. I forgot how difficult it is to make a lot of headway when traveling in the heat and that walking everywhere isn’t the best idea when it’s super hot outside. I forgot what it was like to not have a car at your disposal and what it was like to be able to go everywhere and anywhere without feeling the strain of a large, heavy camera bag and tripod on your shoulders, back, and legs. Additionally, I forgot that landscape photography is much easier when you are able to drive wherever you want without the limitations of being in a single place because when you’re dealing with public transportation and tours, you travel at their pace and on their schedule, which gives you less freedom.
As I get older and travel more and more, I also find that I sometimes miss traveling with a companion or companions. Despite having the opportunity to meet other travelers and learn about their journeys when traveling solo, I miss traveling with Cynthia and my family. I miss traveling with them because paying for convenience while in a group makes the trip more comfortable, affordable, and less tiring. You don’t have to worry about staying at a hostel and sharing bathrooms and sinks. Instead, you can rent out an AirBnB or hotel room where you have total control over everything without worrying about strangers and where you have maximum comfort. You don’t have to necessarily worry about figuring out buses and taxis and how far you can physically walk in the heat because you can rent a car and expand your travel radius and itinerary to capture other areas that might be more remote but more fitting for memorable experiences and landscape photos. Also, when traveling with Cynthia or my family, I am at ease and relaxed and rested. I don’t have to spend energy to socialize if I don’t want to. I can split driving duties with others so that I can comfortably and safely rest, thus conserving energy for adventuring.
But even with all of these sour grapes, it was still a fun trip and I hope to have an opportunity to see and explore more of Southeast Asia in the coming years, hopefully in a more convenient but equally as exciting way! And to finish off this reflection, here is a little word dump of the words that best summarize my twelve days in Asia! Followed by my trip superlatives! Here they are! Here I bring you another kid’s favorite , Crispy Honey Chilli Potatoes made with their favourite Potato fries. Sweet and Spicy potato fries goes well with any juice or beverage.
Crispy Honey Chilli Potatoes are one of the favourite appetizers or starters especially for vegetarians. Served at parties and restaurants this crispy sweet and spicy snack is a filling and delcious appetizer. Kids especially love these and you can adjust the spice level as per their taste.
For vegan-friendly version, use Agave Nectar instead of Honey.
These Crispy Honey Chilli Potato fingers are the second in series for Kids Party Starters that I am linking to the group Blogging Marathon#102 for week 4 Day 2 for the theme Kid’s Birthday Party Treats.
These are very easy to make and can be made with store bought fries or homemade fries. If you are making these for a big party or get-together, you can make from the store bought frozen potato fries.
These taste best when served hot these can become soggy. Reheating these in microwave is a strict no no from my side.

How to make Crispy Honey Chilli Potatoes
Crispy honey Chilli potatoes as mentioned above, can be made with store bought fries at home.
The main thing that one should keep in mind when making these at home is that they should remain crispy for long and don’t get soggy as soon as these are served.
Key to make Crispy fries at home ..
Cut all the fingers of almost of the same size,
then keep freshly cut potato fingers in cold water for about 30 minutes.
fry the potato fingers twice coated in batter of cornflour.
For Store-bought Frozen Potato Fingers..
When running short of time pr planning a big party, make these crispy snacks with store bought frozen french fries or potato finger pack.
Store-bought frozen potato fingers are already fried once and packed, all we have to do is fry the frozen fries till crisp then coat in the sauce mix with sesame and chilli. Do not thaw the frozen fries before frying. Add to very hot oil, fry till golden brown and crisp, and then cook in sauce mix with sesame and chilli. Be very careful while frying as the hot oil sputters when we add frozen fingers to hot oil.
Let’s see in detail how to make Crispy Potato fries at Home and with Store-bought Potato fingers..
Crispy Potato Fries
Crispy Honey Chilli Potatoes, crispy fried potato fingers coated in Sweet and Spicy Chinese/Asian sauces and served as snacks or starters.
For Homemade Potato Fries
3 Potatoes (preferably large sized)
3+3 tbsp Cornstarch or Cornflour (add more if required)
1 tsp Red Chilli Powder (optional)
1 tsp Black Pepper (Freshly Ground)
From Store-bought Frozen Fries
1 pack Frozen Fries
Sauces and Other Condiments
2-3 tbsp Soya Sauce
2 tbsp Tomato Ketchup
1 tbsp Chilli /Sriracha Sauce (adjust as per preference)
2 tbsp Honey/Agave Nectar
1 tbsp Chopped Garlic
1 tsp White Sesame Seeds
1 tsp Chilli Flakes (optional)
¼+¼ Salt (or as required)
Spring Onion Greens for garnish
For Homemade Potato Fingers
Wash nicely and peel Potatoes.
Cut into long strips just like you cut for french fries or like wedges. Neither too thin nor too thick.
Wash potatoes nicely by rubbing, you will see lot of starch in water.
Wash 2-3 times.
Drain and dry on a kitchen towel and pat dry.
Mix cornstarch, red chilli and salt. Sprinkle cornstarch mix and coat the dried fingers with it.
Meanwhile heat oil in a heavy bottomed pan and fry until potatoes are just cooked. These should not start turning golden brown.
Take out from oil and keep on paper towel or tissue for extra oil to absorb.
Once these are cooled, again coat in cornstarch mix(cornstarch+black pepper+salt) with some red chilli and a pinch of salt. Coat nicely.
Heat oil again and fry these in hot oil till light golden brown and crisp. Frying in batches will give you more crispy fries.
To make from Frozen Potato Fingers
Fry frozen potato fingers in very hot oil. Do not thaw before frying.
Take out on an absorbent kitchen towel.
Meanwhile, mix all the sauces, once potato fingers are fried, heat oil in a pan.
Add finely chopped garlic to it. Saute for few seconds till raw smell goes away, do not fry garlic for long.
Add sauce, cook for a second and then add fried potato fingers.
Lightly mix and coat well with sauces. Sprinkle sesame seeds, red chilli flakes if using and finely chopped spring onion greens,
Serve hot.

More and more people are interested in following vegetarian or vegan diets or reducing their use of animal products. A shift away from animal products is getting easier with more fortified and nutritious plant-based foods available. A person may try a vegan diet for health, animal welfare, or religious reasons. In 2016, the Academy of Nutrition and Dietetics stated that a vegetarian or vegan diet could provide all the nutritional requirements of adults, children, and those who were pregnant or breast-feeding.
Even so, getting enough protein and essential vitamins and minerals can be harder for people who do not eat meat or animal products. A person must plan ahead to ensure they get enough protein, calcium, iron, and vitamin B-12, which people on an omnivorous diet get from animal products.
Read on for a list of some of the best plant-based foods for protein. We also discuss the differences between animal and plant proteins, and whether plant-based protein powders can be good sources of protein.
Fifteen best plant-based proteins The right plant-based foods can be excellent sources of protein and other nutrients, often with fewer calories than animal products.
Some plant products, such as soy beans and quinoa, are complete proteins, which means that they contain all nine essential amino acids that humans need. Others are missing some of these amino acids, so eating a varied diet is important.
The following healthful, plant-based foods have a high-protein content per serving:
1. Tofu, tempeh, and edamame
Soy is a plant based protein Soy products such as tofu, tempeh, and edamame are among the richest sources of protein in a vegan diet. Soy products are among the richest sources of protein in a plant-based diet. The protein content varies with how the soy is prepared:
firm tofu (soybean curds) contains about 10 g of protein per ½ cup edamame beans (immature soybeans) contain 8.5 g of protein per ½ cup tempeh contains about 15 g of protein per ½ cup Tofu takes on the flavor of the dish it is prepared in so that it can be a versatile addition to a meal.
People can try tofu, as a meat substitute, in a favorite sandwich or soup. Tofu is also a popular meat substitute in some dishes, such as kung pao chicken and sweet and sour chicken.
These soy products also contain good levels of calcium and iron, which makes them healthful substitutes for dairy products.
2. Lentils
Red or green lentils contain plenty of protein, fiber, and key nutrients, including iron and potassium.
Cooked lentils contain 8.84 g of protein per ½ cup.
Lentils are a great source of protein to add to a lunch or dinner routine. They can be added to stews, curries, salads, or rice to give an extra portion of protein.
3. Chickpeas
Cooked chickpeas are high in protein, containing around 7.25 g per ½ cup.
Chickpeas can be eaten hot or cold, and are highly versatile with plenty of recipes available online. They can, for example, be added to stews and curries, or spiced with paprika and roasted in the oven.
A person can add hummus, which is made from chickpea paste, to a sandwich for a healthful, protein-rich alternative to butter.
4. Peanuts
Peanuts are protein-rich, full of healthful fats, and may improve heart health. They contain around 20.5 g of protein per ½ cup.
Peanut butter is also rich in protein, with 8 g per tablespoon, making peanut butter sandwiches a healthful complete protein snack.
5. Almonds
Almonds offer 16.5 g of protein per ½ cup. They also provide a good amount of vitamin E, which is great for the skin and eyes.
6. Spirulina
Spirulina is blue or green algae that contain around 8 g of protein per 2 tablespoons. It is also rich in nutrients, such as iron, B vitamins — although not vitamin B-12 — and manganese.
Spirulina is available online, as a powder or a supplement. It can be added to water, smoothies, or fruit juice. A person can also sprinkle it over salad or snacks to increase their protein content.
7. Quinoa
Quinoa is a grain with a high-protein content, and is a complete protein. Cooked quinoa contains 8 g of protein per cup.
This grain is also rich in other nutrients, including magnesium, iron, fiber, and manganese. It is also highly versatile.
Quinoa can fill in for pasta in soups and stews. It can be sprinkled on a salad or eaten as the main course.
8. Mycoprotein
Mycoprotein is a fungus-based protein. Mycoprotein products contain around 13 g of protein per ½ cup serving.
Products with mycoprotein are often advertised as meat substitutes and are available in forms such as "chicken" nuggets or cutlets. However, many of these products contain egg white, so people must be sure to check the label.
A very small number of people are allergic to Fusarium venenatum, the fungus from which the mycoprotein brand known as Quorn is made. People with a history of mushroom allergies or with many food allergies may wish to consider another protein source.
9. Chia seeds
Seeds are a good plant based protein Chia and hemp seeds are complete sources of protein that can be used to make smoothies, yogurts, and puddings. Seeds are low-calorie foods that are rich in fiber and heart-healthy Omega-3 fatty acids. Chia seeds are a complete source of protein that contain 2 g of protein per tablespoon.

Similarly to chia seeds, hemp seeds are a complete protein. Hemp seeds offer 5 g of protein per tablespoon. They can be used in a similar way to chia seeds. Hemp seeds can also be bought online.
11. Beans with rice
Separately, rice and beans are incomplete protein sources. Eaten together, this classic meal can provide 7 g of protein per cup.
Try rice and beans as a side dish, or mix rice, beans, and hummus together then spread on Ezekiel bread, which is made from sprouted grains, for a savory, protein-packed meal.
12. Potatoes
A large baked potato offers 8 g of protein per serving. Potatoes are also high in other nutrients, such as potassium and vitamin C.
Add 2 tablespoons of hummus for a flavorful snack that is healthier than butter-covered potatoes and increases the protein content. Two tablespoons of hummus contain about 3 g of protein.
13. Protein-rich vegetables
Many dark-colored, leafy greens and vegetables contain protein. Eaten alone, these foods are not enough to meet daily protein requirements, but a few vegetable snacks can increase protein intake, particularly when combined with other protein-rich foods.

Ezekiel bread is a nutrient-dense alternative to traditional bread. It is made from barley, wheat, lentils, millet, and spelt. Ezekiel bread is an excellent choice for bread lovers who want a more nutritious way to eat toast or sandwiches.
Ezekiel bread offers 4 g of protein per slice. Get even more protein by toasting Ezekiel bread and spreading it with peanut or almond butter.
What about protein supplements?
Some protein powders are plant-based. Depending upon the plants used to make the powders, they may be complete or incomplete proteins.
The position of the American Dietetic Association is that while food supplements can help people meet their daily nutrition goals, eating a wide variety of nutrients rich in protein is usually a better strategy for meeting daily goals.
Some protein supplements may also be high in sugar or sodium to improve the taste, so it is important to read the nutrition labels.
Plant vs. animal protein
The Academy of Nutrition and Dietetics recommends a minimum daily protein intake of 0.8 grams (g) of protein per kilogram of body weight, or about 60 g for a person who weighs 165 pounds. People aiming to build muscle, pregnant or nursing women, and older adults may need more protein.
Animal products such as meat, eggs, and milk are naturally high in protein, which is an essential nutrient made up of amino acids. This makes it easier for people who consume animal products to meet their daily protein needs.
The human body creates 11 amino acids but must get another nine from food. Animal products are complete proteins, meaning they contain all the amino acids. Some plant products, such as soya beans and quinoa, are also complete proteins while others are incomplete proteins.
A person following a vegan or vegetarian diet should eat a varied diet of plant-based foods to get the required range of amino acids. This includes high-protein foods, such as tofu, tempeh, lentils, nuts, seeds, and quinoa.

Plant based protein lowers health risks A meat-free diet can lower the risk of heart disease, some cancers, and type 2 diabetes. A diet free of animal products requires planning and research to ensure a person's nutritional needs are met. For others, it can prove challenging and lead to nutritional deficits.
The Academy of Nutrition and Dietetic notes that a vegetarian or vegan diet can lower the risk of some diseases, such as certain forms of heart disease and cancer, and may promote weight loss.
A study from 2014 looked at the nutritional intakes of 1,475 people and found that people with a vegan diet consumed less saturated fat and less dietary cholesterol than those on omnivorous diets. But they also had the lowest protein, calcium, and energy intake scores. Vitamin B-12 levels were normal, possibly because people used fortified foods.

Please, please I am only 18 months old. Please don’t kill me. Snot poured from his round pink pig’s nose dropping onto the straw in streams onto his bed - you have already murdered my brothers. I hear them screaming far into the night. I tried to push straw into my ears to blot out the sound the little pink creature sobbed- heartbreaking huge heaves, whatever have we done to you do deserve this standing in front of me with that huge knife. I know what you will do with it, slit my throat from ear to ear I saw my mother last when I woke up int he morning hanging on the barn wall dead, dead as a doorknob.You brutal heinous murderers just came in and cut her poor throat from ear to ear after I had gone to sleep- then hung up by the feet . I can still smell the blood, now it still makes me vomit, you even collected her blood in a bucket to make into your despicable, fried breakfasts. Isn’t it enough that you take our eggs to eat and feathers to keep you warm, milk from our sisters and keep them pregnant for life when you could so easily drink almond milk or soya milk or all manner of milks from plants.
Plants don’t talk and their vibrations can’t mean that much to you, so surely you can’t put them on our level.. look at me, we have eyes like you to see with , tongues like you to taste with, ears to hear with- so many similarities in our physics. The Chinese even use us pigs for their experiments instead of humans like you people here do –because we are so similar to you, our skins ..how do you think we feel, you know we tell each other too..you know.
Hmph. We know last week you went to the pasture to kill a calf. The mother and aunties begged you for its life, a little infant, their rhetoric was heart breaking. They crowded round their little one. So you blasted the stun-gun into its head. The whole place has heard their weeping and wailing for their child. They watch you with their big soft eyes, waiting, waiting, waiting..
The farmer outside of the door yelled to his labourer—get on with it jack, we haven’t got all day. Time costs money you know, farming isn’t a game you know--and the van is coming soon to take the carcasses downt o the butchers to be sliced and sorted. You will have to go with them jack, to make sure they don’t rob too much of the trotters and ears to put into their aspics. I once knew a butcher who would hide a whole head under the table...Anything to reduce our profits and increase theirs .
Jack looked down at the rolly polly, little pink piglet, its curly tail had lost its wave.
I am so sorry, he said softly. I have a living to make, we have orders to follow I’ ll be quick he muttered to himself I hate this part of my job we eat nut cutlets in our house now. I can’t bear the look in their eyes as I do it-and the glassy film as the lights go out in their lives. The piglet, immature , did not bow its head to fate, as older animals did, but screamed to the last moment of its young little life.
The van came – took the carcasses carefully stored and hung on hooks on the sides of the walls, and Jack down into the village, to the butcher it and the other s killed that week. Piglet hadn’t been the only one and all had pleaded pitifully for their lives.
The famer seeing the van off rubbed his hands—that should bring in a good profit for a new tractor may be. I ‘ll just have a wander round and a count up.
Up the path he went, whistling cheerfully as he walked, hands in pocket!
The chickens saw him coming and ran into their coups, chattering all the while, run hide. He’s coming to get us, though the farmer wasn’t carrying a knife.
Only the cock crowed defiantly from the roof of the coup to warn all the other animals what was approaching.
The cows heard him and the sheep bleated to each other, running quickly up the hill:..confuse him , hide in every crook and cranny, run—spring lamb shoulder is what he is after.
The cows stared balefully at him as he approached their meadow pasture, their little infant calf still fresh in their memories mingled with sadness. Send him to Coventry, murderer, killer, infanticide and bunched together faintly alarmed initially.
An old lady at the back whispered to her younger sisters—He has gone too far. Action girls!
The farmer turned to go. The cows at the front jerked opn the latch on the gate muzzling it with their noses, and surrounded him, making sure he could not escape.They frog marched him down the lane. Each time he tried to sprint out of the circle, one would block his path. All the way down to the filthy pig yard, which had not been cleaned for a while and had a haze of fresh blood rose from it. He doesn’t roll in filth so why does he think we want to?
Up to the netting and a sharp push into the muck on the other side.
On the other side the pigs were waiting:.. thanks sisters, they said, we will take it from here ..
The cows marched in a solemn procession back to the meadow pasture .
In the evening Jack the farmhand returned. Searching for the farmer he shouted in all the stable.
Not here giggled the mare with glee! You shut up, snorted the stallion at her. Are you sure asked jack, looking her straight into the eyes..
Better go down to the pasture and give him his money, rather than take it home for the evening, he will be waiting for it.
As Jack passed the pig sty, he shook his head, must clean that out tomorrow- what a mess, food mulched up with muck.
Whatever has that man been feeding the pigs to save money, jack muttered to himself...if I don’t do it, no one will, some people only do the fancy jobs.
He searched and searched all evening and all night, at midnight he fetched the police.
Next day all chaos broke loose .
The day after that, the tv announced:
farmer falls into pig –yard. Seems he was eaten by accident, by his own pigs. When questioned by the police the pigs had nothing to say...
