ISO 2.0 = perfect time to make some of the random recipes in my Pinterest folder! These are chickpea choc chip cookies 🍪 they are #vegan and #glutenfree and you really can’t taste the chickpeas! These are a great snack if you’ve been eating a lot of chocolate lately and want to keep doing that but also make it slightly more nutritious (hello chickpeas! 🤣). Based on a @detoxinista recipe 💖 I started by whizzing up a 1/2 cup rolled quinoa and oats (make sure to use gluten free oats or just the rolled quinoa if you are serving to a someone celiac). Tipped them out of the blender then added a drained tin of chickpeas, blend those, add 3/4 cup maple syrup, 3 tablespoons coconut oil, vanilla extract, pinch salt, 1/2 teaspoon baking soda and tea spoon apple cider vinegar. I also had to add some extra gluten free flour since the original recipe used coconut sugar rather than maple syrup. Add 3/4 cup choc chips or chop up a block of vegan dark chocolate and stir into the mix or Bake for around 18 minutes at 180 degrees C (350 F). Lockdown baking is off to an experimental start with rockmelon and coconut cupcakes with cream cheese icing. . Celebrating blossom time, although on a very small scale. I painted a black wooden platter with a coat of @anniesloanhome chalk paint in LemLem for a fresh green background, then added sprigs of blossom with acrylics, inspired by the last pieces of my childhood tea set. Once the paint is dry, I'll give it a couple of coats of wax. I also made Pink Blossom cupcakes, flavoured with rose water and with ground almonds in place of some of the flour. Continuing on with the success of my last few loaves this is a more or less equal white/wholemeal/rye loaf with sage and rosemary. 75% hydration.

I baked this to go with pumpkin soup that was made with home grown pumpkins 😊. It smells so good it's hard to wait for dinner.
