tiny tw for ed's
I need to vent a little about my housemates bc i love them, i do, and also i love making food for them, and they're all amazing friends. I would marry every single one in a heartbeat, im not joking.
And also, I have some food and disability needs, and about two or three times a week at least i get something or prepare something that than is completely eaten either the next morning or a few hours later. And thats okay, but usually they dont let me know were now out of that thing, and they dont safe stuff for me, and now I have to rethink all my meals for today and i cant stand up for very long to go grocery shopping (again) or prepare new stuff from scratch. The grocery money is also kind of piling up. Like i share the costs with my partner but i feel like our housemates dont buy anything except for the soymilk they drink, and the other day my partner bought like 10 packs of soymilk so not even that anymore.
I do say things about it but they keep interpreting i as that Specific thing like if i take this specific thing out of the freezer for the next meal, and they eat all of it before that meal, Then i want them to tell me theyve eaten it. But then they dont do it for any other item.
Anyway i got a bunch of bakebreads for this week for easy meals yesterday evening and this morning it was all gone. Like they told me they had baked a lot of bread if i wanted some, i said yes, i went to pee, and when i came back theyd eaten it all and also no bread was left.
Im not super upset about the individual things but it keeps happening and i feel like its derailing my whole internal mealplan more often than is healthy for me.
Cant wait to live on my own in a few months
Going to ask my housemate to do groceries today, feel like that is a good solution for me to the "i need food" and "i dont feel supported" and he is super okay with doing housechores when i ask him.

Honey Wheat and Rye Sourdough Bread

Here’s what you’ll need…
Ingredients
8 Grams (2 Teaspoons) Dry Active Yeast
240 Grams (1 Cup) Warm Water
85 Grams (1/4 Cup) Honey
56.8 Grams (4 Tablespoons) Butter, Melted
113 Grams (1/2 Cup) Sourdough Starter Discard
178 Grams (1 3/4 Cup) Rye Flour
344 Grams (2 1/4 Cup) Whole Wheat Bread Flour*
10 Grams (1 1/2 Teaspoon) Fine Sea Salt
1 Large Egg
*If you don’t have whole wheat bread flour, you can make your own with this substitute:
326 Grams (2 Cups Plus 2 Tablespoons and 3/4 Teaspoon) Whole Wheat Flour
18 Grams (2 Tablespoons and 1/3 Teaspoon) Vital Wheat Gluten
Strong bread flour or vital wheat gluten are essential for a recipe like this one.  The extra gluten keeps your bread together and helps it keep its shape.
Additional Equipment
Kitchen Scale
KitchenAid Standing Mixer
Measuring Cups, Bowls, and Spoons
4 to 6 Quart Container with Lid
9-inch by 5-inch Baking Pan
Aluminum Foil
Wire Cooling Rack
Oven Mitts
Instructions
In the bowl of a standing mixer, combine warm water, honey, and yeast. Stir until all grains dissolve. Let proof for 10 to 15 minutes until yeast is puffy.
Add the sourdough starter discard to the yeast mixture and stir until well incorporated. Let proof for another 10 to 15 minutes.
In a separate container, whisk together the rye and wheat flour (and vital wheat gluten if needed) and salt.
Add the flours to the yeast and use the dough hook on low to combine.
While the dough hook is running, add the egg and melted butter. Mix for 5 to 10 minutes until the dough pulls away from and cleans the sides of the standing mixer bowl.
Turn the dough out onto a lightly greased surface and shape into a round.
Transfer the round to a lightly greased container with lid. Cover and let rise until doubled in bulk and the dough is light and puffy, about 2 1/2 hours.
Turn the dough out onto a lightly greased surface. Shape into a sandwich loaf, and transfer to a lightly greased 9-inch by 5-inch baking pan. Cover with plastic wrap and let rise until dough breaches the lip of the pan, about 1 hour.
Preheat oven to 350° Fahrenheit (176° Celsius).
Bake loaf for 20 minutes. Tent with aluminum foil to prevent browning, and bake for an additional 25 minutes. Internal temperature should read between 195° to 200 °Fahrenheit (90 to 93° Celsius), bottom of the loaf should sound hollow when thumped, and crust will have a nice light golden color.
Turn out loaf onto a wire cooling rack and allow it to cool completely before slicing and serving.
Slice, serve, and enjoy!

Whole wheat sourdough sesame - not long ago I dreamed of making delicious sourdough bread, moist and chewy and holey on the inside with a flavorful crackly crust. Loaf of cranberry and pumpkin seeds.
Ingredients: 
-1 kilo of wheat flour. -1/4 tablespoon yeast. -1/2 tablespoon salt.-200 gr cranberries. -150 gr pumpkin seeds. -350 milliliters water.
Preparation:
**Before the preparation, in a little recipient add yeast and a little quantity of hot water, mix well and add some sugar to feed the yeast, this step makes more and better bread alveolis.** -In a big bowl, make a kind of volcano with dry ingredients and in the middle add the liquid ingredients, add only the water that you think it's necesary. -Knead until activate the gluten, leave to stand for 12 hours (could be more time, I left it like 32 hours and that gave it a more concentrate flavor). -After, fold it and leave to stand 1 hour. -*Pre-heat the oven at 437°F (225 °C).*   -Pre-heat a casserole for 15 minutes. In this time you can make the form (it's round like the picture). -Bake it for 30 minutes with the casserole's lid. -Take off the lid and bake for another 10 minutes.

There’s baking going on! Days one and two of baking for our holiday packages and individual items. There’s dough being made, the yeast is proofing, the shaping and actual bake followed by packaging. Tony bakes cinnamon rolls for us as we worked. In photos 1 and 2 you can see cinnamon rolls without icing but one is topped with toasted pecans. A roll with the coffee was excellent. Photo 4 is a pan of 1 dozen rolls ready for their second rising. They are in the frig until time to bake. It’s so hard to resist all the goodies around like that #sweetpotatopie . Our campers ordered loaves of bread that went out to them this morning and we’re baking for the orders to be picked up today. We will do more tomorrow for the Wednesday orders that include giveaways thanks to the donations that are coming in to support our community members. Thank you all so much. Ingredients
260 Grams (2 Cups Rice) Flour
20 Grams (5 Teaspoons) Baking Powder
100 Grams (1/2 Cup) Sugar
6 Grams (1 Teaspoon) Salt
4 Eggs
113.4 Grams (1/2 Cup) Melted Butter
Additional Equipment
Measuring Cups and Spoons
Large Mixing Bowl
Mixing Spoon
8-inch by 4-inch Bread Pan
Oven Mitts
Wire Cooling Rack
Instructions
1.  In a large mixing bowl, stir together the flour, baking powder, sugar, and salt.
2. Fold in the eggs and melted butter. Stir until everything is incorporated.
3.  Transfer the batter to your loaf pan and preheat the oven to 375 degrees Fahrenheit (190 Degrees Celsius).
4.  Bake for 45 minutes and allow the bread to cool in the pan for 10 minutes.
5.  Use a knife to loosen the bread from the pan and transfer to a wire rack. Allow it to finish cooling.
6. Slice and enjoy!
