A visual guide to an eye:

I've made these resin eyeballs first. Made a silicon mold from steel ball (ball bearing ones are perfect), then made a hollow in it (this part required a friend with a lathe).

Painted the iris inside the hollow.

Coated the eye in this UV gel people apparently also use for doing nails. The trick is to apply it in layers to give the eye this bump over the iris.

Cook every layer under the UV light. Then coat the whole thing evenly and cook it again.

Behold. An eye.

I'm trying to make the tiny veins out of wool now, but that needs some more practice. They turn out super messy for now, but they do turn out so it's a start XD
