Happy birthday to my fiance <3
I bugged her weeks about what to bake for her birthday! Finally, inspiration struck: as a surprise birthday gift to me, she had edited footage from our whole first year of streaming, and I had made these raspberry lemon curd bars she just couldn't get out of her head. She requested her Pokken Tournament main, Braixen, with some extra witchy touches!
I used this raspberry bar recipe and added fiery streaks of lemon curd, super fresh and yummy!

My husband’s company is doing a holiday baking event soon, and he wants to make lemon squares that also have passion fruit in them. I tried a test batch of the curd for Sunday brunch, and I’m pretty happy with it--it’s based on the passion fruit and grapefruit curd from Momofuku Milk Bar, but I’ve added lemon juice and zest to the main mixture rather than teasing out the juice sacs like it’s done in the original recipe. The curd is very tart--exactly what he wanted--and we paired it with some raspberry jam and filled up some crepes with it on Sunday afternoon.
Will report back when we have a proper passion fruit and lemon square recipe worth sharing!
