This year's Christmas baking: decorated sugar cookies, a take on Austrian linzer cookies, and spiced cookies speculoose-ly based on Dutch/Belgian speculaas/speculoos (hehe). All vegan except for the sprinkles, which contain beeswax and shellac. To celebrate the New Year I made these beautiful poppy seed window cookies. Inspired by a linzer cookie, this tender, buttery cookie hit all the right marks for me! I much prefer making cookies that take time and precision over simple cookies. 

@susanspungen recently featured this @nytcooking recipe, but they were already on my cookie-bucket list. Their version features blood orange jam sandwiched between the cookies - I used seedless raspberry. They are SO good they melt in your mouth! And because I can’t ever find fault with homemade vanilla buttercream, you can see I filled a few cookies with that, as well. Also delicious!

OK, Linzer cookies attempt #2 is a success! Approximate size of the cookie above is 1.5 inches / 40mm. Filling is seedless raspberry. Topped with powdered sugar and sparkle sugar.

Oof. Those are an enormous amount of work & time. They better taste like eating heaven. I accidentally left out the cinnamon (?) called for in the recipe. On the plus side, I didn’t break any while making them. Honestly, a bit of a surprise, given how fiddly they are. Mine are thicker than they should be, perhaps because I was hand-flattening that dough. And didn’t have a ruler handy. Because these are so small, I had to get creative with the center cut-out. I didn’t have a cookie cutter small enough, so used a tiny lid I had handy (about 0.55 inches / 12 mm).

Lessons learned: when it says refrigerate the dough, do it. When it says 1/8th of an inch thick, do it. Proportion the size of the cookie to the smallest center cut-out you have. Either sift that powdered sugar super fine or use granular sugar / sparkle sugar instead.

Still have a bit of dough left over, which I will try and mix into my Mardi Gras cookies.

Lemon almond linzer cookies with black cherry preserves for a neighborhood happy hour event a couple weeks ago. Cookies adapted from a Bake From Scratch (@thebakefeed) recipe. These were phenomenal!
