VEGAN OIL-FREE MEE HOON by #RawChefYin🍜 Mr Jazz Guitarist @azsamad asked me if I could make him a mee hoon (rice vermicelli) dish for him as he missed it so I whipped one up with his favourite ingredients including tempeh!😀 . I made this in the Thermomix using the usual mee hoon recipe and just refused to add any oil. He said it tasted wayyyyy better than the ones cooked in oil coz this was so clean tasting and flavourful. Yipppeee! I added in loads of microgreens from @pintsizegreens to keep the raw element there. Also known as vegetables confetti, microgreens are harvested at cotyledon or first true leaf stage. S E D A P Lyn the architect is up from Nelson. As she’s vegetarian, Uncle needed to take her next level up and go Malaysian vegan for lunch at E-PACS SuperMart Cafe. We had Chwee Kueh to start, steamed rice cakes topped with preserved radish (chye poh). It’s a favourite of mine and Lyn took to it like a real connoisseur. E-PACS have a new dish for 2019, Curry Cheong Fun. It’s a famous KL speciality, this vegan version has the rice noodle rolls (Cheong Fun) in curry sauce, topped with crispy rice vermicelli in tofu skin wrap. This is served with pickled green chilli, the perfect accompaniment. Lyn was very happy with her vegan Nasi Lemak, discovering vegan options for the traditional egg omelette, and fish slices, all made from tofu skin. The “fish” had nori for skin. The “lamb” rendang was created with TVP and the “Ikan bilis” from gluten. The nasi was perfectly Lemak with coconut cream and fragrant with pandan. The kitchen didn’t stint on the wok fried peanuts, with skin on + slices of cucumber. As we say, sedapnya! VEGAN FOOD ADVENTURES WITH RAW CHEF YIN - featuring Chin Swee Vegeciting We had to go to @bensindependentgrocer at Publika to get the edible flowers for my online demo on CHEFAJ LIVE on raw vegan fruit tartlets so we decided to check out @chinsweevegeciting. It’s our first time here. But it seems like we tend to order our same favourite dishes at different vegetarian Chinese restaurants. We had: ✅Four Heaven King RM28 ✅Bak Kut Teh RM26 ✅Steamed Brown Rice RM7 (2 bowls) I wanted to try their curry but it had dairy in it. And they couldn’t make it without the dairy as it’s already mixed into the paste. This is a vegetarian restaurant - Items with eggs, dairy, garlic & onion are clearly marked. They’ve also introduced a special menu with tea-infused dishes. I was curious but then again afraid that I would be sensitive to the caffeine in the tea and can’t sleep. Perhaps the next time. The mini hot pot looked good although I didn’t check if it was vegan. Classy setting - it’s the kind of place I would take my mum to so I can impress her with vegan food, hehehe. Staff were great as well - courteous, respectful, friendly and helpful. I was quite surprised that it was easy to find parking on a Saturday at Publika…but maybe it’s because parking charges are high now! Have you been to Chin Swee Vegeciting? Raw Vegan Pizza by #RawChefYin. I know I say I'm not really into pizza but I guess if it's raw vegan, I like them. Was in the mood to make pizza today so here's what I did: — 🍕PIZZA CRUST Zucchini Walnuts Pumpkin seeds Water Calamansi lime juice Hemp hearts from @organiculesuperfoods Flaxseeds from @bobsredmill Thai basil, daun kesom, mint This was dehydrated in my @excaliburdehydrator. I had left over thai basil, kesom and mint from the Vegan Laksa class so figured I'd just add it in. Hence the green looking crust, haha! Does it look scary? — 🍅TOMATO SAUCE Tomatoes Sundried tomatoes Red chilli Salt Coriander — 🧀CHEESE Basic fermented cashew cheese - I teach these at my popular raw vegan cheese classes — 🍅TOPPINGS: I had some lovely cherry tomatoes thanks to @everleafstoremalaysia so I cut them into half and dehydrated them Pink cabbage strips, dehydrated Fresh Thai basil leaves Super yummy! Mr Jazz Guitarist loved it, especially the green crust. Not sure what to call it but I guess it can be a Superfoods Bar by #RawChefYin? Have been wanting to make one of those salted caramel chocolate bars by @avantgardevegan but I still had my salted caramel sauce and also rawtella in my fridge so I decided to use that up instead. For the base, I also had some ground pumpkin seeds which was supposed to go into another recipe so I used that as a base, added some hemp hearts and baobab powder from @organiculesuperfoods, plus water and agave to bind them all together. Added on the caramel sauce, place in freezer to set, then the rawtella layer and then added walnuts, pistachios on top. Sprinkled organic marigold tea from @tais_choice_kitchen delivered by @everleafstoremalaysia. Nom nom nom. Actually Mr Jazz Guitarist ate most of it. No onion, no garlic Thai Green Curry by #RawChefYin. Since some of my students like @tessa_yeo and Catherine don't consume onions or garlic, I decided to try making my Thai Green Curry recipe without them. 🌶️🥕 It still tasted great!! Yayy😀😀😀 What's your take on onions and garlic? To eat or not to eat? I remember speaking to @jemlao about this 2 years ago and his advice was to avoid the 5 pungents. I'm currently torn as I love the taste but some of the research I did today did point towards avoiding garlic... FLOUR + WATER, LESSON 2: CHARCOAL AGNOLOTTI 😍😍😍 My submission of my assignment to @foodfutureinstitute: “I used all-purpose flour as I couldn't find the flours listed out in the recipe. No pasta machine so I rolled everything by hand! No butternut squash either as it wasn't in the grocery PDF list (which I understand has now been updated) so I subbed with orange sweet potato instead. No pastry cutter so I used a pizza cutter. I also have this cake cutter which I tried to use to create the wavy cuts ;) My agnolotti wasn't sealed properly after cutting with the pizza cutter. Can you offer tips on how to make sure it's sealed when cut? Or is it because I didn't have the right equipment and needed a fluted pastry cutter? No sage, so substituted with microgreens. I used a basil butter, hence the green instead.” 🌟Instructor Feedback🌟 “Fantastic work! Yin, I'm sorry you are having trouble finding all these things for these couple of modules. Working with activated charcoal can be very messy, that's why a good cleanliness in the kitchen is essential! You seem to have done great! Yes, the cutter is important to seal them, but I like to use a little water on my fingertips (just as if I was making dumplings ;), to help with sealing). Despite your challenges the agnolotti look like they remained closed, with just the right amount of filling. Lovely substitution of the sage with the micro greens.
