Chicken Tortilla Soup III The base for this chicken stew with Mexican seasonings is made by combining chicken broth and salsa with half-and-half and condensed cream of chicken soup. BTS MOMENTS: Taehyung & Grace - Jinny's Kitchen

Taehyung was getting proud of his cooking and even if they were simple Korean dishes, he was getting more confident. The cooking lessons had clearly paid off as well as watching Seokjin in the kitchen and then his personal cooking lessons with Grace before he had left for Mexico. 
Right now he was making what Grace called an essential meal for everyone - a casserole. She had grown up in England and had lived on homemade food, including casseroles, and that followed her to South Korea where she would cook food for the rest of bangtan and sometimes their crew so now Taehyung was repaying the favour for Jinny’s kitchen.
She had made Mexican chicken casserole as a lesson before Taehyung had left and together they had followed the recipe, though she let Taehyung do most of it so he left confident enough to do it on his own. 
He glanced up from where he was cooking onion, jalapeno and garlic then added the already pre-cooked chicken with black beans, corn, a bit of salt, chilli powder, cumin and ground black pepper and he cooked that, stirring occasionally. 
Realising he had been quiet from what he was doing, Taehyung adjusted the mask he was wearing and leaned away from the skillet in which he was stirring. “Noona taught me how to make this to make for everyone while we were quiet and right now we’re not open yet so I wanted to make this casserole for everyone to enjoy,” he explained as he added tomatoes and a can of cream chicken soup. 
“It looks a bit odd right now, but it was amazing when I cooked this back home with noona. She made me do everything so I felt confident but she always there in case I was unsure. I’m going to ask her to teach me how to bake when I go back,” he added as he stirred before grabbing the dish Grace had sent along.
He spread half of the chicken mixture on the bottom, then he topped it with half of the crushed tortilla chips, cheddar cheese and another type of cheese. He then repeated it until he skillet was empty then popped the casserole in the oven. 
“I can’t wait to send Noona a photo of this,” he said as he turned to wash the dishes he had used. The camera soon cut to the casserole being pulled out of the oven and the subtitles over the screen read, ‘Thank you Grace-noona for your food. From everyone at Jinny’s kitchen. Please come out and feed us next season.’
In return, Grace uploaded the recipe to weverse for everyone to enjoy.

Now, I'm sharing just because I'm saving MY recipe here and for the ones who would like to eat some decent fucking Mexican food.
INGREDIENTS FOR THE 3 LITERS OF SOUP. 
6 big tomatoes
4 garlic cloves
1 big ass onion
2 chiles guajillo (dried mirasol)
2 chiles de guisar/ancho (dried Capsicum annuum)
120g of chile chipotle 
1 chicken leg (or just a chicken bone... any bone)
2 chicken breast
carrots to taste
potatoes to taste
Cucurbita to taste (that green veggie)
2 Avocados
Fresh cheese to taste (when I mean fresh, I mean; go and buy it from your local market, not the shit that has probably 6 months in a fridge, this needs a cheese that breaks once you slightly press it between your fingers) if you can't get it, use mozzarella.
15 tortillas (please use tortillas made of CORN, but if you don't have them... well then the dish you will prepare can't be called "Aztec," but hey, you have my permission to use bread or even those shitty nachos BUT YOU CAN'T USE DORITOS... or I'm personally chasing you over and murdering you.)

METODOLOGY!!
1) Bring half a liter of water to boil, turn the energy down (fire or ignition WHATEVER!), and add there the dried chilis (this will help them soften.) Leave them to rest. (just look how sad they look and how happy they turn after a nice hot bath 🥺✨ if you are weak and can't tolerate spicy food take away the seeds and the little veins, Omacatl is going to curse you without friends bc of your puny palate.)
2) In a pot, add 2 liters of water, add salt to taste, and put there the chicken; (as it cooks, take away all the foam.) Cook medium-high heat for 35 min.  
3) Cut the tomatoes and the onion into big chunks, and peel the garlic cloves (do it with your fingers pretend they are the eyes of your enemies and release some anger.) 
4) in a very hot comal (or if you are basic, in a nonstick pan,) put your tomatoes and onion to cook, DO NOT USE OIL!! just let them cook on a hot surface.

c: STFU YOU WEAK HUMAN, THEY NEED TO LOOK LIKE THIS if they don't look like this you are doing it wrong; if you don't do it like this the nearest Mexican human corpse is going to haunt you down.
5) Take away the chicken from the broth, and put it in a bowl.
6) Take away from the jacuzzi those dried chilis and put them on the mixer, add the cloves of garlic, tomatoes, and onion you just cooked, the 120g of chipotle chilis, and now my fellas, dear colonizers reading this, pay attention, this is crutial THIS IS WHAT MAKES IT TASTE GOOD:
add a pinch of: 
salt, black pepper, cinnamon, powder of cilantro seeds, brown sugar, thyme, AND 3 PINCHES OF DELICIOUS GLORIOUS CARAWAY. Add a liter of water and mix it well, once looks as homogeneous as it can be, pour it into the chicken broth.

Just look at how pretty that looks!!! That looks like decent food, that looks like something my ancestors would be proud of!!! *honestly I got some tears after tasting this, ABSOLUTELY DELICIOUS!!!*
7) Use any method you like to make eatable those chunks of meat, I like to separate the meat with my hands.
8) Add the meat again to the chili-spicy/broth and add the minced veggies 
9) cook for 40 min, low heat.
10) Mince the coriander
11) If you are a cool decent human cut the tortillas into small rectangles and fry them until they are hard 🔥😏 2 to 3 tortillas per serving. If you are not cool use your shameful nachos.

12) TIME TO FUCKING SERVE AND TASTE THE FRUIT OF YOUR 3 HOURS OF WORK!! 
In a bowl, serve the meat and veggies, add some chili broth, put in the center your tortillas, around the tortillas the cheese, on top the minced coriander, and decorate with slices of avocado.

21. Do they enjoy domestic life?
yes! they get an apartment together when logan’s halfway done his residency, and they enjoy making it their own. olive spends more time there bc she often does counseling appointments from her home office, but its very much both theirs. 
22. Are they comfortable joking around with each other and being silly/playful?
definitely. the number one way to know that olive likes you, is she teases you. she likes to playfully make fun of her friends and logan is no exception. his name in her phone for years, is boybander. 
23. What are the defining characteristics of their relationship? 
they are both incredibly headstrong. both smart as hell, logan being traditionally booksmart and olive being very emotionally smart. both of them grew up in single parent families so they have a strong belief in family and taking care of family. olive is chaos while logan is calm. 
24. How do their personalities affect their relationship? Do their characteristics compliment each other, or clash often? 
like i’ve said before, they are both incredibly headstrong/stubborn. they butt heads quite a bit, but ultimately whoever is right usually wins the argument. they both don’t like fighting, logan grew up seeing james’ parents fight all the time and it made him hate confrontation, and olive grew up with her parents and wren fighting over custody of her, so she hates it when people start to use things against her. 
25. Do they share a room/house? If so, what does it look like and how does it compliment their personalities?
yes! when they are around 26, logan gets an apartment not too far from the USC campus and olive moves in with him about three months later. he’s halfway through his residency and she’s in grad school to become a youth counselor. their apartment looks like this in my mind. it’s their home for a solid four years before they end up moving to a two story house closer to where kendall is living. 
26. What sacrifices do they make for the other?
olive sacrifices getting to see logan bc of how much he’s working while they are in college/university. logan sacrifices seeing his mom for a while bc of olive’s want to stay in la. they compromise and go back to minnesota for christmas and his mom’s birthday. 
27. How do they say “I love you” non-verbally? 
olive, in true woman of colour fashion, shows her love nonverbally in one way. through food. either she’s cutting fruit for logan to apologize to him or she’s begging wren for her Chicken Tortilla Soup recipe. logan leaves little notes around the house with encouragement. he’s also known to spoil olive, so it’s not unusual for her to wake up and find that he bought her some new clothes or that he got that bookshelf that she’s been eyeing for a few months but didn’t have the money for. 
28. Who’s the better chef? Do they  cook for the other? 
they’re both pretty good chefs. olive grew up with wren teaching her traditional mexican food, so she’s got a pretty good handle on that - no taco bell in the lolive household i fear. and logan in true midwestern boy fashion, is good at grilling. their house is definitely the house for barbecues. 
29. Describe their nighttime routine. 
okay!! so if it’s a day where logan gets home at a reasonable time, they usually eat dinner together around 7:30/8:00. after dinner, olive usually goes and sits in the living room while logan does the dishes. she cut her hand on a knife once when she was twelve and now is too paranoid to do the dishes herself. after the dishes are done, they usually sit together on the couch. sometimes they cuddle, sometimes it’s just them vibing in each other’s presence. usually around 8:30 olive goes to shower and brush her teeth and logan usually follows after her. they shower together in the evenings more often than not - and no it’s not for those reasons get your head out of the gutter. they just like being around each other, and olive maintains that one of the most romantic things your partner can do for you is to wash your hair. 
30. What are their respective love languages? Do their love languages work well together?
olive’s love language is quality time! she likes spending time with logan, especially on weekends when they both aren’t working and can rest with each other. logan’s a words of affirmation and acts of service guy. he likes being told that he’s loved and cared for, and he also appreciates the nonverbal ways of showing that. 
31. Do they often go out on dates? What are these like? 
they try to! they both have fairly busy schedules as adults. their usual date is a movie and then a new restaurant. as teenagers, they hangout in 2I or 2J and watch movies and tv together or go to the local arcade. 
32. Do either of them drink? If so, who’s the lightweight, and how does their partner care for them?
they both do. olive’s family has some history of addiction, so she’s a better regulator. the second she starts to feel too woozy or feel too impulsive she’s cutting herself off. logan’s a lightweight tho. get him a mai tai and he’s down for the count. olive will drag him home and let him sober up before teasing him relentlessly in the morning about it. in the few occasions where olive’s gotten drunk enough to make herself sick, logan’s holding her hair back and making her breakfast in the morning. 
33. How do they flirt? Who’s the worse flirt?
snark. snark all the time. they both like teasing each other. olive bugs logan about how smart he is, and he teases her about how short she is. there’s also a lot of touching. olive (like i said already lol) isn’t really a pda girl but when she’s interested in someone she’s always on them. holding hands, sitting beside each other, pressing shoulders and knees against each other. she likes being in logan’s personal space. basically, they’re this audio. 
34. Do they have any inside jokes? 
hot dogs or cold dogs. banilla shakes. wrenabeth. hortense the horse. the list goes on lol. 
35. Is their relationship a secret? If so, why? 
initially yeah. olive and camille are finally on somewhat good terms, and she doesn’t want to cause drama with the other girl knowing that shes dating her ex. on logan’s side, it’s bc rushers can be… intense and he doesn’t want fans digging up olive’s past and throwing it in her face. 
36. How do they feel about having kids? Are they in agreement?
they both want kids some day. olive is a bit more hesitant bc she’s afraid of fucking her kids up. the way her parents abandoned her really did a number on her for many years (as expected). logan’s neutral on it at first, but after being uncle to carlos’ kids, he’s like oh this is something i’d really want. i think they’d be more likely to adopt over having kids biologically. 
37. Who’s more emotionally sensitive/cries more often?
olive. she has a mood disorder and also her adhd means her rejection sensitivity dysphoria can get pretty strong. 
38. Who’s got a quicker temper? 
also olive. ied + adhd babeyyyy. she’s gotten better about handling it since she was a teenager tho. 
39. When and how did they admit that they loved each other? If they haven’t yet, why?
okay!!! so there’s technically two times. once where olive admits, and once where logan admits. olive admits it during big time reality, but logan thinks that she’s just putting on a show for the cameras and doesn’t take her seriously. logan admits it in big time decision while he’s doing love science on kendall. he realizes that he’s not with camille for the right reasons. 
40. Do they have any regrets in their relationship?
not really! logan regrets not trying with olive first in terms of his relationships. he wishes he could have saved olive some of the heartbreak she experienced of watching him and camille being together. olive regrets not being more upfront about her feelings.

Soon, a bouncy salsa started playing.  Trent wiped his hands on his apron and pulled Santana into an impromptu dance.  She laughed and played along for a few seconds only.

"My pozole," Santana said, smacking him on the arm as she pulled away to return to the stove.  "Don't you dare make me ruin my Abuela's recipe.  Find another dance partner."
Santana's pozole, the recipe of which was handed down to her by her beloved abuela, was simmering on the stovetop.  That was to be partnered with her father's cochinita pibil.  Warm hand-made tortillas sat folded carefully in a towel, ready to be brought to the once dinner was about to be served.
Trent had a Caprese salad in the refrigerator, prepped and ready to serve.  He was putting the finishing touches on an impressive charcuterie board, abundant with tidbits that made even Kurt's mouth water.  Trent had also just taken out some herb parmesan biscuits out of the oven that he had baked.  Kurt had been particularly eying Trent's appetizer version of his parent's boxty recipe that was laid out on a silver serving tray.
As for dessert, that, of course, was left to Kurt.  His addition to the meal were the apple hand pies that were his mother's own recipe and his father's favorite dessert ( when he was allowed to have a treat from his usual heart-healthy diet), an assortment of cookies, as well as some mini dark chocolate tartlets sprinkled with sea salt.

Today I have Made Soup again and this time it’s one of my favorite recipes which I’ve discovered is only available on the Wayback machine.  So I’m gonna repost it here for posterity.
Tex Mex Chicken and Rice Soup

Ingredients:
3 tablespoons olive oil
divided coarse salt and fresh black pepper
1 pound boneless chicken breasts, cut into small cubes
1 small onion, diced
1 red or green bell pepper, diced
1/2 cup finely chopped black olives
3 cloves garlic, minced
1 + 1/2 teaspoons chili powder
1 teaspoon dried oregano(preferably Mexican), crushed between fingertips
1/2 teaspoon dried thyme
1/2 cup uncooked long or medium-grain white rice, rinsed well in a wire strainer with cold water
5 cups low-sodium chicken broth
1 cup salsa
2/3 cup fresh or frozen corn
for serving:
fresh chopped cilantro
lime wedges
shredded sharp cheddar cheese
sour cream
tortilla chips
Instructions
In a large soup pot heat 1 tablespoon of oil over medium heat. Season the chicken well and cook, stirring often so all sides get browned. Remove to a dish and set aside.
Add 2 tablespoons of oil to the pot over medium-low heat and saute the onion, pepper, garlic and olives together 5 minutes, season well with salt and pepper and stir often.
Mix in the chile powder, oregano, thyme and rice, cook 3 minutes.
Stir the chicken back into the pot and add the broth, salsa and corn. Bring to a simmer and cook 30 minutes. Stir and taste often - seasoning as needed.
Serve with toppings like cilantro, cheese, sour cream, lime and tortilla chips if desired.
This soup is really adaptable.  I usually make it with leftover chicken or turkey (like right now) rather than from raw.  The veggies also can be subbed for whatever you have/like. (I like adding chopped zucchini in the later half of cooking to replicate this one soup from a restaurant I love.)  I added black beans this time cause forgot to get corn and also don’t have a lot of leftover turkey.  You can also use fresh herbs if you have them/prefer.

Caldo de res
Prep time: 1hr 25min
Ingredients: chuck pot roast beef
Celery
Carrots
Cabbage
Squash (optional)
Golden potatoes (I forgot to take pictures of but they're a great addition)
corn
White enriched long grain rice
1. So you cut the beef into smaller but grabble pieces (as pictured above) and cook them in a pot on either a 6/7 above medium but below high for about 30 minutes. It has to start cooking until it reaches the point where there's foam that I implore to you that you must remove as I did.
2. After removing the meat foam, and when you feel comfortable enough about the beef being tender or soft enough to your liking, add the veggies into the pot!! Allow them to cook on 6-7 for about 1hr but check on them throughout the span to make sure it doesn't overflow and to mix ingredients together
Oh almost forgot: you can add spices as you please: I add cumin, salt, onion powder and black pepper.
While the caldo de res is cooking, cook white rice on a separate pan.
I put in consomate that's why it came out reddish/orange in color. It's just flavorful for me
ANDDD viola!! That's how it basically turns out!
You are free to enjoy with tostadas, corn tortillas, or BREAD!!
It's pretty simple to make, but requires patience.

Caldo de pollo con calabaza
I couldn't write down a recipe because I've only cooked it once and it was with the help of my mom!! She's currently at work so I can't ask her nor do I want to delay this response as well.
The recipe calls for boneless chicken thighs, but honestly, you can throw in a whole chicken (cut into pieces!!) in there.
I like the juice to get thicker so I usually add a little bit of flour as well. It's all about finding YOUR recipe, ya know.

I am plotting, planning, prepping for a Family Road Trip, a Bro Trip - In General PTO/Vacation, a Short Term Meal/Diet Challenge, Next Year's Challenge (52 in 24), Possible Birthday Party for Myself, and What my First Real Cheat Meal is going to look like January 1st, 2024...
That's what's rolling through my head - helps me pass the time.
Beyond that - I don't feel like much is going on - Feel like I am in a limbo. I definitely feel better than I did last week - teetering back to neutral - hopefully moving towards the "positive".
Found a new respect/passion for reading comics... I've enjoyed them in the past but found some nice trades recently that have increased the flame.
Movie-wise - I am fizzling out. Nothing looking good - sitting good lately. Hopefully Barbie can rekindle my love.
In other news I've been taking naps during my work lunch. They have been greatly needed and cherished but haven't cured my sleep pains.
Had another plateau in weightloss - no sweat - been feeling good about my body lately.
