Mimi's Smoked Salmon Chowder Smoked salmon stars with potatoes, celery, onion, herbs, and spices in this hearty chicken stock-based chowder that's pure Pacific Northwest comfort food. 1/4 cup white wine, 1 pound potatoes - peeled and cubed, 1 teaspoon dried dill weed, 1 tablespoon fresh lemon juice, 1 tablespoon olive oil, 1 cup half and half, 1 teaspoon fresh-ground black pepper, 1 teaspoon dried tarragon, 2 cloves garlic chopped, 1/2 teaspoon paprika, 8 ounces smoked salmon cut into 1/2 inch pieces, 1 teaspoon salt, 1 cup chopped onion, 2 tablespoons butter, 1 teaspoon dried thyme, 1/2 cup all-purpose flour, 6 cups chicken broth or vegetable broth, 1/4 teaspoon hot sauce, 1/2 cup chopped celery

Corn Chowder

Every time I went to Mimi's Cafe, I’d order the corn chowder. It’s warm, sweet, savoy, basically the perfect comfort food. I've had their recipe for several years and love to make it at home but like everything else I've modified it to make it plant based.

Ingredients 1/4 cup vegan butter 1/2 cup onion chopped 1 cup celery, large dice 3 cups hot water 2 1/2 cups raw potatoes, peeled and cut into 1/2 cubes 16 oz bag frozen corn (white or yellow) 1 Tbsp sugar 2 tea salt 1/2 tsp white pepper 5 Tbsp flour/gluten free flour 5 cups of plant milk (I use hemp milk) Fresh ground pepper

Directions: In a large pot or dutch over, melt vegan butter. Add onion, celery, simmer until softened but not browned. Add water potatoes, corn and seasonings. Cover and simmer 30 minutes or until tender. Whisk flour into 1 cup of plant based milk and stir into soup. Add remaining plant milk, adjust seasoning if needed. Simmer 15 minutes, until soup thickens. Add salt and pepper. To thin add a little more milk, to thicken simmer 5-10 more minutes. Serve with fresh ground pepper. Enjoy!

Background

Cecillia was born in Oakland, California alongside her older brother and raised by their grandparents. Though her brother practically raised her as well. 

Their parents died protecting their wards when Cecillia was still a baby and to this day she barely remembers either of them. Only knowing about them through stories from her grandparents. When she was younger her feelings about her parents were complicated, to be honest they’re still complicated but in a more positive way.

They learned young how to take care of the house especially doing the cooking and cleaning. Cici wished to ease the burden on her grandparents and her brother, both out of love and out of guilt. The latter feeling they keep repressed.

Cecillia has a knack for juggling multiple things at once. School, studying and homework, after school clubs, and even a part time job were all things she did her best to keep up with when she hit 16. Though her part time work was just walking their neighbor’s dogs each day after school. Their love of animals began here.

Soon they would volunteer at the local animal shelter. Cici realized that she had a way with animals. Like a lightning bolt striking her twice they had the inspiration to take her schooling towards animal care. Particularly an animal trainer and/or a vet. 

At least that was her plan and they had begun to prepare to head off to college when her invite to Acadia Academy finally came to her. Cici had heard tons of things about the Academy from their brother and had initially dreamed of attending before. Yet Cici thought about declining the invite since they already had a plan in motion, but after more research she found out as a Dhampir she could specialize in Animals. Including magical creatures!

She accepted and had headed to the academy almost instantly. And so far she’s loving it!

This is an excerpt from Island Whimsy - Designing a Paradise By the Sea by Celerie Kemble. I mentioned in my post from a few weeks ago - This & That From Bald Head Island that I had ordered this book and I’m so glad I did! I’ve been sitting on the porch pouring over it and reading every word! As you can see by the pictures, it’s an extraordinary book and so inspiring for anyone who loves decor and island living!

If you don’t know Celerie Kemble…she is a decorator with Kemble Interiors, a design firm founded in Palm Beach by her mother, Mimi McMakin. ... A tastemaker known for her approachable design advice. Celerie has several decor books including Black & White and a Bit In Between, and To Your Taste - Creating Modern Rooms With a Traditional Twist, that are almost as inspiring as this one!

As you can see from the pictures, the decor at Casa Guava is very whimsical and not at all fancy or formal. The rooms are livable and beach friendly with unusual and repurposed items and colorful upholstery! Much of the fabric (such as the chairs above) comes from Celerie Kemble's line for Henredon.

When initially flipping through the book, this copper bathtub was one of the first things that caught my eye! What fun would it be to put my 3 grandsons in that tub for a scrub after a day at the beach! I think books like this inspire us all to make our surroundings more beautiful and that’s the beauty in buying them and revisiting them for ideas!

As Baldy and I get older and our family continues to grow…a playroom like this one seems like a good idea! What child wouldn’t love to play in here! Kemble designed the ceiling fixture.

I can only imagine hours spent on this porch swing, reading and relaxing…

Vintage garden chairs surround the dining room table and the Antique Victorian circus tent paintings that flank the doors are fabulous and whimsical, which was a dream of Kembles when designing the space.

I absolutely love the botanical prints combined with the different colors and prints in the room. It looks collected over time rather than decorated, which is very visually appealing and so interesting!

Island Whimsy is full of so many more beautiful images as well as a winding story of how the house cam to be! This is a book worth buying that’s filled with timeless ideas and inspiration that you’ll return to over and over again!

I’m kinda new to the US and What goes in a garbage disposal?? I thought it was all things organic but both celery and banana peels killed it??

I would only use my garbage disposal for small bits of food, like some noodles that accidentally fell on the floor and whatever bits are left on your plate or bowl. A little lemon peel won’t hurt. Larger organics can go in a compost bin! I keep my compost in a bag in the freezer so it doesn’t smell, then I take it out to a place that collects compost every few weeks. Not all cities do compost, but some do! You could also make your own compost and use it on plants– Mimi
