Introduction to ice cream ingredients
Ice cream consists of many different ingredients and has a certain ratio to produce high-quality ice cream. How much do you know about its composition? In today's article, Wuxi Danxiao Machinery will briefly learn about the composition of ice cream. If you are interested, just watch it with me.
Ice cream has the following ingredients:
a) According to the legal definition, milk fat is greater than 10%, and the fat in some high-quality ice creams is usually between 10% and 16%.
b) 9% (without fat) 12% milk solids, which contains the protein (casein whey protein) and carbohydrates (lactose) found in milk.
c) 12% to 16% sweetener, usually a combination of corn syrup sweeteners based on sucrose and glucose.
d) 0.2% to 0.5% of stabilizer emulsifier is added. Unfortunately, these necessary components have unfamiliar pronunciation names, and these names occupy three-quarters of the space of the ingredient table to be described later. The rest, usually 55% to 64%, is water and comes from milk. The composition of ice cream milk is very similar to ice cream, but by definition, the milk fat content is 3%-5%. Lightweight ice cream contains 8% to 10% milk fat.
The ingredients used to provide this composition include:
a) The source of concentrated milk fat, usually cream or butter.
b) The source of concentrated non-milk solids, usually evaporated milk or milk powder.
c) Sugar including sucrose "glucose solids", which is the product of partial hydrolysis of the corn starch component in corn syrup.
d) Milk.
The fat component increases the flavor, increases the smooth texture, makes the body slippery, melts, and increases the taste when consumed. Non-dairy solid ingredients also contribute to the flavor, but more importantly, by providing some "chewiness" to improve the ice cream's ability to retain air, thereby improving the texture of the ice cream. Sugar gives the product a typical sweetness and palatability, and enhances the perception of various fruit flavors. In addition, sugars including lactose in the milk ingredient will cause the freezing point to decrease. Therefore, ice cream will be accompanied by some unfrozen water at very low temperatures (-15°C to -18°C), which are usually used. Without this unfrozen water, ice cream will be difficult to fish out.
The lowering of the freezing point of a solution is a coefficient related to the number of dissolved molecules. The lower the molecular weight, the greater the ability of the molecule to lower the freezing point. Therefore, the ice cream produced by monofruit acids (such as fructose or glucose) is much softer than non-fructose (such as sucrose). This limits the types of sugars that can be successfully incorporated into the formulation.

Banana island day 1
So, I am calling this day 1. I have been trying to start this for the past 5 days, and while I have consumed mostly bananas, on those 5 days I ended up eating cooked non vegan food for dinner.  SO....lets say I had 5 days of prep during the holidays :) For this blog, I will be writing what I eat for each day, how I am feeling, any detox symptoms, any exercise i am doing, etc. so that anyone who wants to embark on a similar journey will be able to see the process from my point of view. This post is going to be a little longer since I'm giving some backgrounds, but most probably won't be as long. 
A little about me- I'm 25 years old, 5'4, and 253.5 lbs (as of 12/27). I am breaking my monofruit diet on my 26th birthday.  I'm married and live with my mother and husband. All of us eat the standard american diet, and all of us are overweight. It is very hard for me to try to eat healthy when others are eating unhealthy around me, though I am trying to steel my willpower to make it through the next 30 days without messing up too terribly often. Remember that if you're in the same situation, make sure to talk to the people around you to tell them what you are doing and why, and to ask them to be considerate.  I was getting depressed because my family would continually offer me foods that I did not want to eat, until I sat them down and told them my feelings on the matter, and they promised to try to be better about it. (although only time will tell) :) While I do not have any typical health conditions (ie high blood pressure, diabetes, high cholesterol, etc), it does run in my family, and I would like to avoid it.  I have had occular melanoma in the past, and next year marks my 5th year cancer free, so it is my goal to make it my healthiest year yet.  That being said, I hate being so unfit, and I hate being overweight.  It caused my self confidence to plummet and I have a lot of anger and depression focused towards myself because of it.  Although I know there are probably underlying issues there, I'm hoping that a decent portion will dissipate as I get healthier. 
Why I chose a monofruit diet, and why I chose bananas-  For anyone reading this who is unsure what a monofruit diet is, it's basically where you pick one fruit and eat either completely or primarily that fruit for your desired length in time.  Keep in mind that this is not a long term diet change- most monofruit diets last for 7-21 days. I simply chose 30 because I wanted to go until my birthday.  The basic concept behind a monofruit diet is that because you are only eating one thing, it is easier for your body to digest, and instead of focusing its energy primarily on digestion, your body can relax and focus on healing itself instead.  Because our world is so flooded with preservatives, toxins in the air, addatives, and just not so great things that we typically consume without thinking about it, the goal of monofruit diets is typically to help eliminate any of those toxins that are stored.  Although your body can filter out the great majority of these toxins, because of the amount we typically consume, our body is usually overworked and giving it a chance to take a break is never a bad thing :) Monofruit diets can be done with any fruit that you like, but  I chose bananas because they are cheap, easy to digest, full of minerals and vitamins and even protein, plus I just really like bananas.  
So, for my day today- I had 10 bananas today and probably close to a gallon of water.  I know that this is not enough bananas, but I woke up late and have had a very lazy day. Typically you should be consuming between 15-30 bananas, just depending on how active you are and how hungry you get throughout the day.  Monofruit diets are not meant to be restrictive towards calories in any way shape or form, you should be eating as much as you want to.  Listen to your body and give it what it needs :)
My body measurements-  I will probably be updating weight loss or gain each day, but only doing body measurements each saturday (as that is when my transition days started, when i took my original weight, and when i took my measurements). These measurements are from the 27th, I haven't weighed myself today and I typically like to do so in the mornings, so I will be updating my current weight tomorrow.  weight: 253.5 neck-16 inch Upper arm Left 17.5 inch, right 18 inch Lower arm Left 11.4 inch, right 12 inch Above bust- 43 inch Bust-48 inch Below bust- 42 inch Waist- 40.5 inch Hips-54.5 inch Butt- 53 inch Thigh- left 30 inch, right 31 inch Calves- both 16 inch
