I ended up using three generous tablespoons of curry paste. The dish turned out very flavorful and delicious, but a little bit too spicy for me. But that’s what rice is for lol. I suspect I’ll make this pretty frequently, and next time I’ll do a more strict three tablespoons and I think it’ll be perfect. I’m so excited by how flavorful this is! I think the lesson I learned is that Thai kitchen brand curry paste just isn’t that good lol. I think using maesri this time really helped.

Thinking about sharing here my granny's Chiles en Nogada recipe.

Not to be mean or arrogant, but sharing would be pointless, because I'm sure you don't have or the talent or the ingredients to make them.

#for talent I mean maneuvering hot *boiling* chilis with your hands and patience at working on something that can take 3 days #for ingredients I mean fresh authentic acitrón #most people won't make them; they prefer to buy even if they are expensive #normally at restaurants *average; nothing fancy; they cost around 20-25 usd per unit *not a full meal; only the chile en nogada*#when they are well made they worh the price #also there is lore behind them #nah I will share them with you people; they are not fun to make but they are delicious #I will share cursed ingredients to use as alternative; not that I would recommend it; but you need to try these at least one time 🥺#also there are alternatives to handle the chiles but they are time consuming :(#still; it's possible to make a *poor* version of them abroad #grandmacore

#go to spain or italy and you can get a bottle of wine for less than €4 #Going to other eurozone countries makes me realise how expensive ireland actually is #I'm going to dublin as soon as I get back from spain and I think I'll actually die if I see the prices 😭#you pay €3 for one scoop of mediore ice cream and you can get 2 scoops of the most beautiful gelato for like €2 #anyways ignore my complaints about inflation #i am drunk off cheap wine #it's actually difficult for me to get this drunk off wine in ireland cus it's so expensive #my aunt and I got a glass of wine each which came with complimentary crisps in a nice restaurant #and it was #€7????

#I literally ordered pizza from my fav place today and it got here in 40 minutes #it’s in River north and I’m on the west side so I don’t mind #BUT DUDE YOU LIVE IN SOUTH LOOP/PRINTER’S ROW #a: most drivers are from the burbs or Indiana so don’t know the city #b: you are ordering from chain restaurants in Chicago (a notorious pizza city)#c: this is not related/related but you suggested POTBELLYS as a place to get ‘good food’ in Chicago #all your food recs are insane and limited to the most expensive part of the city #also it’s now personal because they said Chicago is a ‘trash city for pizza’#ALSO NEWSFLASH: MORE PEOPLE DONT LIVE IN THE LOOP #there are more people because of tourists but not residents #west loop is 54k #the whole loop is 54k #south loop is 54k #literally how the population maps are drawn for aldermen and districts #this city is MASSIVE and a VERY small percentage (less than a %) live in the loop #I have like nearly pinpointed where they live based on food clues because they make me so mad #‘good pizza is within walking distance of me’ I bet it’s fucking Aurelio’s which is notoriously bad #and I bet it’s not just ANY Aurelio’s but the one on Michigan Ave and Roosevelt Rd #you are literally 500ft from Flo and Santos and people choose Aurelio’s #victory tavern!!!! it’s right there!!!#I’m fucking fuming #99% of the city: lives outside of the loop #people living the loop: but EvErYoNe LiVeS hErE #also they’ve lived here…10 years???? but not very enmeshed in the city outside of the loop #which is a shame #not to pull street cred but like #my family has been here since the 1800s #my relatives helped build this city #I have a LOT of civic pride #thoughts? thoughts

Work is flying me to Boston so we can have an employee dinner. I'm thinking of just... not telling my family. I'm not even sure why, I don't think they'd try and come to see me. I guess I just want to microdose on being totally free of them. Not having to tell them anything, not having to think about them, not having them know what I'm up to.

#anyway my work is very nice #pretty sure most tiny nonprofits can't fly all remote employees cross country and pay for hotels #just so we can all go to a fancy restaurant together #but hey we don't really have expenses other than our employees #so they can afford this kind of thing
