God, this entry is really a master class in how to show the fallibility of a direct POV and how to tell the character in question is ludicrously oblivious.
The lethargy grows upon her, and though she seems strong and well, and is getting back some of her colour, Van Helsing and I are not satisfied. We talk of her often; we have not, however, said a word to the others. It would break poor Harker's heart—certainly his nerve—if he knew that we had even a suspicion on the subject. 
Jack. This man lived for two months with four active vampires. He knows. And he knows you know. He did not just magically un-learn all the facts and leave you and your idol alone on top of ‘Me, An Intellectual’ Mountain. 
Van Helsing examines, he tells me, her teeth very carefully, whilst she is in the hypnotic condition, for he says that so long as they do not begin to sharpen there is no active danger of a change in her. If this change should come, it would be necessary to take steps!... We both know what those steps would have to be, though we do not mention our thoughts to each other. 
Jonathan knows those steps too, Jack. He read about Lucy, Jack. He can tell when Mina is being Different, Jack. He knows what you and Abe are thinking of, Jack. 
We should neither of us shrink from the task—awful though it be to contemplate. "Euthanasia" is an excellent and a comforting word! I am grateful to whoever invented it.
Jonathan ‘Never Puts Down His Kukri Knife’ Harker is so glad you agree, Jack! Raise one hand against Mina and you’ll see just how into it he is.
It’s just...wow. Whether Stoker intended it or not, he perfectly encapsulated the ‘Would Never Make It to the End of a Horror Movie’ characterization.

my biggest dracula movie/tv adaptation gripe is that they never. Ever. get jack seward right. and they seldom get arthur and quincey right. but nobody does jack the way he should be: young, handsome, charming, smart, deeply observant, driven by curiosity, and devoted to a fault.
the hero boys commonly feel like an afterthought by directors and screenwriters - like they're interchangeable, easily omitted or substituted, swallowed up by abraham van helsing's significance. it's really unfortunate, especially since they each feel, in the book, so lovingly created and characterized. they each have importance and i wish more people understood that.

Van Helsing: "It is er... contagious."
Though yeah we're joking about Van Helsing not letting Lucy take a lil bite, but Arthur needs to be aware that her kiss is not going to be normal or not infected. He's going blind to this like Jonathan was, while Jonathan now has full awareness due to experience (and thus can have informed consent)
The reflex of not letting the newly transformed Lucy take a bite out of Arthur was quite quick. However, what we can read in the scene is how Van Helsing never explained to Arthur why he can't kiss his beloved on the brink of death, which Jack also notices. Arthur is not aware of the why he can't kiss Lucy, he was forcibly separated for his own good, at least if Van Helsing had said that this illness is contagious the action wouldn't have been so shocking.
Also:
but at that instant Van Helsing, who, like me, had been startled by her voice, swooped upon him, and catching him by the neck with both hands, dragged him back with a fury of strength which I never thought he could have possessed, and actually hurled him almost across the room.
