Ingredients: 1 cup dried lentils. 6 cups homemade vegetable stock. 1 cup water. 1 onion, chopped. 1 cup chopped celery. 1 cup chopped carrots. 2 tsp minced garlic. 1 can 14.5 oz diced tomatoes. 1 tsp dried thyme. 1 tsp dried oregano. Salt and pepper to taste.
Instructions: Rinse lentils and add them to a large pot with vegetable stock and water. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
