was starving with zero leftovers in the apartment after getting back tonight. threw together a quinoa flatbread recipe handed to me by a mutual (💚) spruced up to my craving (simultaneously eggplant parmesan (specifically the one i had in new orleans seven years ago), baba ganouj, bread and butter pickles, garden focaccia). added hemp seed + oats to soak w the quinoa for roughly ten mins. then blitzed with nutritional yeast, garbanzo flour, sundried tomato in oil, roasted garlic, obscene amount of gochugaru, coriander, oregano, sumac, tahini and baby kale. if i had pickle brine, would have added some as well. blend with whatever amount of water makes it a batter that seems reasonable to spread out on parchment. bake at 400 until crispy. was too busy to bother with a timer. im in heaven right now

POACHED TUNA WITH ROASTED POTATOES AND OLIVES MAIN—SERVES 2
This mash-up of Niçoise salad and potato salad is great as a main dish, but also works as a side. Please note that we use caper berries, not capers. Caper berries are a larger, milder version of the tiny caper we all know and love. To elaborate further, capers are the buds of the caper bush and the caper berries are what you’ll get if you let those buds turn into beautiful flowers, then let the flowers wilt, fall off, and be replaced by the fruits of the caper bush—the berries!
HOT TIP: BE SURE TO SAVE THAT LEFTOVER TUNA GARLIC OIL TO MAKE A REALLY GOOD SALAD DRESSING—THE CHICORY CAESAR (THIS PAGE), PERHAPS?
½ pound ahi tuna, 1½ inches thick Kosher salt 1 pound fingerling potatoes 1 cup extra-virgin olive oil ¾ cup pitted green olives 4 caper berries 6 cloves garlic, peeled Grated zest and juice of 1 lemon 6 sprigs fresh marjoram or oregano Chopped Italian parsley, for serving
1. Place the tuna in a large shallow bowl and season all over with 2 teaspoons kosher salt. Cover with plastic wrap and let cure in the fridge for 2 hours.
2. Meanwhile, in a large pot, combine the potatoes and water to cover and bring to a boil over medium-high heat. Cook until fork-tender, about 25 minutes. Drain and let cool. Halve the potatoes.
3. In a 1-quart pot, combine the oil, olives, caper berries, garlic, lemon zest, and marjoram and heat over very low heat. Using a potato masher, gently mash the olives, caper berries, and garlic and cook until the garlic becomes soft and browned—about 20 minutes. Remove the pot from the heat and set aside for everything to infuse.
4. In a 10-inch nonstick or cast-iron skillet, heat 3 tablespoons of the garlic-infused oil over medium-high heat. When the oil shimmers, add the potatoes in a single layer, season with salt, and cook them without stirring until they start to brown, about 4 minutes. Stir the potatoes and cook until crispy, about 4 minutes longer. Transfer the potatoes to a large bowl.
5. Discard the marjoram stems and use a slotted spoon to scoop the olives, garlic, and caper berries out of the infused oil and add them to the bowl of potatoes. Cover the bowl with plastic wrap and let cool to room temperature.
6. Heat the infused oil to 200°F (use an instant-read meat thermometer to measure the temp). Rinse the tuna, pat dry, and add to the oil. Poach for 6 to 7 minutes, flipping it halfway through, until barely cooked through. Remove from the heat and let cool in the oil for about 20 minutes.
7. Transfer the tuna to the potato mixture and use a fork to flake it into large chunks. Add the lemon juice and parsley and toss to coat. Taste and add salt as needed. Serve at room temp or slightly warmed.
