Jewish recipes: Bakhsh
I often make this as a meal prep situation so I make a large dish and then we have it for lunches/dinner during the week. Or for Shabbat. This is a Bukharian Jewish dish called Bakhsh, which is a simple dish of rice that's cooked with tons of herbs, usually cilantro and dill, and with meat (most traditional is lamb iirc). I can't get kosher lamb easily where I live at all, so mine is always chicken and it's made in a glass baking dish in the oven. Bakhsh (green rice)
Ingredients:
2 cups rice (I always use short grain bc that is what we have on hand), washed/rinsed, uncooked
4 whole bunches fresh cilantro (or 3 + 1 fresh parsley -- can also add a bunch of fresh dill if desire), chopped
1 cup cubed meat of choice (I always use chicken breast), uncooked
1 diced yellow onion
1/2 c oil (I use avocado)
1/2 c water
1 tbsp salt
1 tbsp chicken consomme powder (I use the Osem brand)
Ground black pepper, cumin, turmeric, and coriander to taste
Instructions:
Line glass baking dish w/parchment paper.
Combine all ingredients in the dish, stir well. Cover with foil.
Bake covered at 400F for 45 minutes, then remove and stir well. Re-cover and bake for 45 more minutes.
Enjoy! The favorite part of this dish in my house is the brown crust that forms on bottom, similar to what we call 누룽지 (nurungji) in Korean (it's the scorched rice I guess that forms on the bottom of the stone pot) -- it's so tasty and crunchy!

top five soups!!!!!!!!
OK SO
#1 is my uncle's chicken matzah ball soup. Its a family legend of a soup. it's essentially a chicken stew and the signature spice is Hawaij: https://en.wikipedia.org/wiki/Hawaij. it WILL stain anything it gets on yellow and its WONT come out. 100000/10 soup. On the application to the college I eventually went to the final application question was "what is one food you would cook for the admission team?" and I put this soup. (recipe will be under the cut)
#2: UDON AND RAMEN. both rank the same. slurp slurp noodles ohmmygod
#3: just a hearty meat and veggie soup plz
#4: spaghettios counts as soup sorry. so i guess cheesy-tomato soup. yum yum.
#5: melted ice cream that I eat like a soup
OK NOW FOR THE LEGENDARY SOUP RECIPE:
Matzo Ball Soup
Recipe from: Mum
Makes:
1 whole 8-piece chicken
1 turnip, chunked
1 rutabaga, chunked
2-3 large carrots, diced
1 onion, diced
1 head of whole garlic cloves
Lots of whole fresh parsley
1 tbsp Osem soup flavoring
1 Manischewitz Matzo Ball Soup Mix
Tons of Hawaij
Put a whole 8-piece chicken in a large pot with water. Bring to boil, skimming off the schmaltz that will gather on the top. (Schmaltz is a foamy-like fatty substance that appears on the rim.) Stop when the foam stops forming on the top of the soup.
While the chicken boils/cooks, chop up one turnip, one rutabaga, two to three large carrots, and one onion (just depends on preference). Add these to the pot along with whole garlic cloves. Add Osem chicken soup seasoning (to taste), about one tablespoon. Note this adds a good amount of salt to the soup. For richer flavor, you can use chicken/bone broth for the base soup as well. If you do this, add less water in the beginning as this will add volume.
Use Manischewitz matzo ball soup mix to make matzo balls (follow its instructions) and add the soup mix to the pot. Add tons of Hawaij (turmeric-like spice from the middle east). Must be Hawaij MARAK (marak = soup). Add in lots of whole parsley.
Note on adding matzo balls to soup: they take time to absorb the soup into the ball, but also get mushier as they sit in the liquid longer. So, add them whenever you decide, weighing these factors.
Optional: after a long time of simmering on low boil, remove the chicken and de-bone so you do not have to deal with that while eating. I do this by shredding it with two forks so I do not have to touch the boiling hot chicken. My mom does this by hand, burning her fingers.
*my uncle also sues potato in this soup but my family dislikes potato in soup so we removed it. feel free to add that back in! add different veggies. it will all taste of hawaij in the end.

🔴 Sun afternoon  - ISRAEL REALTIME - Connecting to Israel in Realtime
⭕ HAMAS ROCKET BARRAGE - CENTRAL ISRAEL
Kfar Saba, Neveh Yamin, Nir Eliyahu, Tzofit, Sdei Hemed, Even Yehuda, Udim, Beit Yehoshua, Harutzim, Yakum, Kfar Netter, Tel Itzhak, Ra'anana, Bnei Zion, Batzra, Hod HaSharon, Herzeliya - Center and Glil Yam, Herzliya - West, Kfar Shmaryahu, Ramat HaSharon, Cinema City Glilot, Gelilot - Pi Compound, Tel Aviv - Across the Yarkon, Herzeliya - Center and Glil Yam, Petach Tikva, Arsuf, Rishpon
Rocket fire FROM South GAZA.
Injury by shrapnel in Herzliya, conflicting reports of child or young man.
Reports of hit on a car (parked) and a field in Kfar Saba.
▪️ATTACK ANALYSIS.. Amit Segal: It is worth paying attention to Hamas's method: its purpose is to make us think that the IDF's action does not help in preventing rockets and therefore there is no point in it. In practice - the number of rockets and launchers dropped dramatically, and most of them were from areas where the IDF did not operate.
Doron Kadosh: the IDF is advancing in Rafah - and towards areas where there are long-range rocket launch areas that Hamas has so far not used. As the IDF advances Hamas uses these rockets to not have them captured unused. This barrage to the center does not surprise anyone in the IDF.
▪️KAPLAN PROTESTORS SAY.. the protest is expected to be successful because international bodies, including the Hague Tribunal, are helping the struggle.  Protest HQ disavows the Facebook text, saying: “The message that was distributed has nothing to do with either Kaplan or the protest headquarters. No briefing like this or in a similar spirit came out of the headquarters of the struggle. We will continue to act in order to replace the government.”
▪️IDF “THINS OUT” RAFAH OPERATION - ROCKETS FIRED SHORTLY THEREAFTER.. The IDF thins out forces in the "limited" operation east of Rafah: the Givati Brigade left early in the morning to return to Israel at the end of two weeks of activity. IDF says: for the purpose of refreshing and returning to fitness. The background: reports on the reopening of the Rafah crossing and the withdrawal of the IDF from it.
Major long range rocket fire on central Israel a few hours later.
▪️MORE ON THE NON-CAPTURE OF SOLDIERS.. Analysis of the video they published saying they had captured soldiers: the body in uniform - details show it is NOT an IDF uniform. Photos show captured weapons - the weapon shown is a CZ Scorpion Evo, which is not an IDF weapon.
▪️ECONOMY - FOOD PRICE INCREASES.. Leiman Schlissel, importer of Luaker, Mentos, Topifi and more, joins Osem, Tnuva, Strauss, Diplomat and other food companies - and raises prices next month.
▪️BEN GURION AIRPORT - EQUIPMENT FAILURE.. Radar problem with spatial aeriel imaging, leading to delays in landings, and therefore holding up take-offs as well.
⭕ Hezbollah ROCKETS at: Avivim, Yir'on, Betzet, Hanita, Rosh HaNikra, Shlomi - 3 rounds, 15+ launches in one of the rounds.
⭕ Hezbollah SUICIDE DRONES at: Idmit, Eilon, Goren, Gornot HaGalil, Hanita, Ya'ara, Arab al-Aramshe

One of Israel’s best-loved desserts is a no-bake cake made with tea biscuits. You’ve likely seen Israeli tea biscuits in your local grocery store kosher aisle; they typically come in a bright colorful plastic sleeve and inside the packets are golden, flat rectangles with ridged edges and a warm hint of vanilla. They are thin and crumbly, buttery and not too sweet.
Israeli biscuit cake (ugat bisquivitim in Hebrew), is Israel’s version of an icebox cake or tiramisu. It requires zero baking and is designed to be thrown together on a whim, with simple products found in most kitchens. Recipes vary from family to family; aside from tea biscuits, ingredients typically include instant vanilla pudding, heavy cream, and milk. Many recipes call for gvina levana, a white cheese we call quark in the States and Europe. Quark is a fresh dairy product that tastes like a cross between sour cream and Greek yogurt, and adds a delicious tanginess to the filling. Instant vanilla pudding offers its unmistakable flavor and helps the cake set in the fridge. While it’s in the fridge, this cake transforms from a loose creamy consistency into a sliceable layered cake. The biscuits soak up and expand with the custard filling, creating a decadent celebration of dairy from the land of milk and honey.
Notes:
Kedem brand biscuits are ideal for this recipe as they are thinner and more delicate, Osem brand biscuits may create a drier cake.
Dipping the biscuits in coffee adds subtle flavor, but you can use milk instead if desired.
If you can’t find quark, full fat 5% Greek yogurt will work as a substitute.
Lastly, brands of vanilla pudding mix vary, any packet that is around 2.8-3.1 oz will work, or you can measure out 5 Tbsp from a larger packet of pudding mix.
