Are Friday fails a thing??? So these lime #dairyfree “margarita” cookies are actually amazing but the recipe is a bit of a fail... 🤦‍♀️ Let me explain. After I made it as I planned, the dough seemed a bit dry. So I added an extra egg. Then it was too wet. So I added more flour - with my hands in pinches. Not ideal. Then I like to keep a certain ratio of sugar to flour so I had to add more sugar - by heaping spoonfuls. Also not ideal. Then after tasting the dough (please don’t do this bc #rawegg is dangerous with salmonella but I apparently live on the edge here) I wanted the lime flavor stronger. So I squeezed some more fresh lime juice straight in without measuring - just by looks. And of course then added a few more pinches of zest. So these cookies are phenomenal. Better than I could have ever expected. And to top it off both of my kids loved them. But who knows if I can recreate them with exactly with the right ingredient measurements??!!
