These pumpkin pie pancakes are the perfect fall breakfast treat. They are fluffy, full of warm spices, and topped with a sweet and aromatic cinnamon honey sauce. Perfect for a cozy morning at home!
Ingredients: 1 cup pumpkin puree. 1 1/2 cups all-purpose flour. 2 tablespoons brown sugar. 2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/4 teaspoon salt. 1 cup milk. 1/4 cup plain yogurt. 2 large eggs. 2 tablespoons melted butter. 1 teaspoon vanilla extract. 1/4 cup honey. 1/2 teaspoon ground cinnamon for cinnamon honey. Cooking spray or additional butter for cooking.
Instructions: Add the pumpkin puree, brown sugar, milk, yogurt, eggs, melted butter, and vanilla extract to a large bowl. Use a whisk to mix the ingredients together well. Put the baking soda, ground cinnamon, ground nutmeg, ground cloves, and salt in a different bowl. And mix them together. Slowly add the dry ingredients to the wet ones while stirring them together. Don't mix the batter too much; it's okay if there are some lumps. Melt butter or cooking spray on a griddle or large skillet and place it over medium-high heat. For every pancake, put 1/4 cup of batter on the hot griddle. Once the top starts to bubble, flip it over and cook the other side until it's golden brown and done all the way through. Add the honey and ground cinnamon to a small bowl and mix them together. Do this while the pancakes are cooking. Put the cinnamon honey sauce on top of the hot pumpkin pie pancakes to serve. These Paleo-friendly pumpkin pancakes can be made without flour. These are free of dairy and gluten, and they taste deliciously of warm pumpkin spice.
Ingredients: 1 cup pumpkin puree. 2 large eggs. 2 tablespoons almond butter. 1 teaspoon vanilla extract. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/4 teaspoon baking soda. Pinch of salt. Coconut oil or ghee for cooking.
Instructions: In a mixing bowl, combine pumpkin puree, eggs, almond butter, and vanilla extract. Add cinnamon, nutmeg, cloves, baking soda, and salt. Mix until well combined. Heat coconut oil or ghee in a skillet over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes on each side until golden brown and cooked through. Repeat with the remaining batter. Serve warm with your favorite toppings.

Ingredients:
1 cup all-purpose flour

1/2 teaspoon salt
1 teaspoon ground cinnamon

1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 cup canned pumpkin puree
1 cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
Butter or oil for cooking
Maple syrup, whipped cream, or chopped nuts (optional, for serving)
Instructions:
Prepare the Dry Ingredients: In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, and all the spices (cinnamon, nutmeg, ginger, and cloves). Make sure they are well combined.
Prepare the Wet Ingredients: In a separate bowl, combine the pumpkin puree, buttermilk, egg, melted butter, and vanilla extract. Mix until everything is well incorporated.
Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps in the batter are okay.
Heat the Griddle or Pan: Heat a griddle or a large non-stick skillet over medium-high heat. Add a small amount of butter or oil to grease the cooking surface. You can use a paper towel to spread it evenly.
Cook the Pancakes: For each pancake, ladle about 1/4 cup of the pumpkin pancake batter onto the hot griddle. Use the back of the ladle to spread the batter into a round shape.
Flip and Cook: Cook the pancakes until bubbles form on the surface, and the edges look set, which should take about 2-3 minutes. Flip the pancakes and cook for an additional 1-2 minutes on the other side until they are golden brown and cooked through.
Keep Warm: As you cook the pancakes, you can keep them warm on a baking sheet in a low oven (around 200°F or 93°C) until all the pancakes are ready.

🇺🇸 I’m getting pretty close to being done with pumpkin this season. 🎃 Just bear with me a bit more, and perhaps try out this seasonal and bright pumpkin spice pancake recipe while we’re all anxiously waiting for the election results. It’s quick, wholesome and smells divine. Just blend 1/2 banana with 2 tbsps of pumpkin purée and some 1/3 cup of water or plant based milk, then mix in about 3/4 cup of oat flour and a heaping tsp of pumpkin pie spice, add 1/2 tsp of baking soda. Let the better sit for a bit and then just bake your sunny pancakes! 🥞 It will seem like you’re actually eating pie for breakfast, lunch or whatever!
