Loaded Nachos with Lentil salad + Indian Tamarind and Coriander Chutneys! 
These nachos are loaded with protein-rich seasoned lentils, beans, chickpeas and topped with two mouth-watering Indian chutneys!
We all love Nachos! But Nachos with super yummy toppings and dips and chutneys is what we’re dealing with here now. These Loaded Nachos make a wonderful Snack and appetizer. The chutneys enhance the flavour a lot and adds a tang & juiciness to the dish.  The chutneys I made are two very staple North-Indian chutneys. The first one that is the tamarind and jaggery chutney easy sweet and sour chutney with a tiny amount of spiciness. The other one that is the coriander and mint chutney is more on the sour side with a refreshing feel to it.You can make these chutneys in advance and store them in your fridge and they will live happily in there for a month!

JELLY-FILLED THUMBPRINT COOKIES! MERRY CHRISTMAS!!!🥰🎄🎅🎄 Christmas is here and all I am doing is eat biscuits and cake all day😂😑. Here is a recipe for these flaky, crispy on the outside, soft on the inside Jelly-filled thumbprint cookies that I absolutely adore😍! These are easy to make, bakes within minutes, and are super yummy. You can fill them with jam, chocolate ganache or even marmalade. They are gonna be delicious either ways. RECIPE INGREDIENTS • 50 gm. Unsalted Butter (1/4 cup) • 60 gm. Caster sugar (1/4 cup) • 1 small egg • 1/4 tsp. Vanilla extract • 90 gm. All-purpose flour (2/3 cup.) • 1/4 tsp. Baking powder. Instructions - 1. In a bowl sift in the flour and baking powder. 2. Cream the butter and sugar together for around 4-5 minutes until fluffy. 3. Add egg and Vanilla extract and beat for another minute. 4. Fold in the flour mixture on low speed till it formed a dough. 5. Using your hands, collect the dough and shape it into a small square, wrap in cling foil and chill in the fridge for about an hour. 6. Make small balls out of small pieces of the door and imprint your thumb on them. Fill these spaces with jam/ preferred feeling. 7. Bake at 170 degree Celsius for 10 to 12 minutes. LEMON CAKE WITH WHIPPED CREAM FROSTING🍋 I love the bright flavour of the zest, the scent, and the whole overall taste of lemon cake. And whipped cream is literally the frosting on top of the cake. I noticed that many people use cream cheese frosting on lemon cake but I still stick to whipped cream as my preferred frosting because of the lightness of it. Honestly when you start eating cake every 4 days you start preferring the lightest thing possible😑. It's a really fun dessert. You can make it with your friends, family, kids and have so much fun doing the piping part specially😁. INGREDIENTS •Salted Butter - 70 gms. •Sugar - 70 gms. •Whole eggs - 2, large •Lemon zest - 2 medium sized lemons •Lemon juice - 1/2 medium sized lemon •All purpose flour (maida) - 100 gms. •Baking powder - 1 tsp. •Whipped cream frosting - 1 cup. INSTRUCTIONS 1. ‌Seperate the whites of one of the eggs and whisk it till it forms soft peaks. 2. ‌In a bowl, cream the butter and sugar together for 5 minutes. Add in the leftover eggs (2 yolks and 1 white), lemon zest and juice and whisk for another 1 minute. 3. ‌Sift in the flour and baking powder in 2 batches and mix in with a spatula only till well-combined and there are no visible lumps. Do not overmix. 4. ‌Pour the batter into a parchment lined 6" square baking tin and bake in the oven @180°C for 35 minutes or until a toothpick inserted in the centre comes out clean. 5. ‌Prepare your vanilla whipping cream with the desired sweetness. 6. ‌Cut the cooled cake in 4 equal pieces. ‌TIME TO GET CREATIVE. INSTANT KALAKAND WITH CONDENSED MILK! Who doesn't love diwali sweets? And one of my favourite diwali sweets is Kalakand. Now I know that the preparation of kalakand is a long and tedious process that requires just stirring the milk on the heat for about an hour or two. So yesterday, I tried to make an instant version of kalakand using condensed milk and cottage cheese (paneer) and it turned out to be pretty yummy. And that's why here I am sharing this recipe with you 😂 INGREDIENTS - Sweetened Condensed milk (Milkmaid) - 200 gm. Grated Cottage cheese (paneer) - 100 gm. Milk powder - 1 tbsp. Cardamom powder (optional) - 1/2 tsp. INSTRUCTIONS - In a heavy bottom saucepan or a kadhai, heat th Condensed milk, paneer, milk powder and the cardamom powder on medium-high heat . Mash the paneer. Keep stirring the mixture to keep it from sticking to the bottom. After about 7-8 minutes, the mixture will start to thicken. Cook for another 3-4 minutes and take th pan off the heat. Pour the mixture in a greased tin and let it set in the refrigerator for minimum 30 minutes. Although it will be set and ready to eat, Its still a good idea to let it chill in the fridge for another 2-3 hours because that will let the flavour to seep in properly. Your kalakand is ready! JALEBIS!!! The title don't even need more explaining. Yes, JALEBIS. Yes, I love them😍.  These jalebis are super yummy with a perfect crunch and perfect sweetness in them🤤. It was my first time making jalebis but along with my mum's help I went along just fine.  INGREDIENTS For Jalebis  •All-purpose flour(Maida) – 1 cup  •Wheat Semolina (Sooji/Rava ) – 1 tbsp.  •Baking powder – ½ tsp.  •Yellow food colouring – ¼ tsp.  •Yoghurt – 2 tbsp.  •Water – 1 cup  •Vegetable oil  for frying (about 500 ml) For Sugar Syrup  •Sugar – 2 cup •Water  – 2 cup •Saffron – 12 to 15 strand  •Lemon juice  – 1 tbsp. (or freshly squeezed juice of 1 whole lemon) INSTRUCTIONS  •In a bowl mix all the ingredients of the Jalebis. Let the batter sit for about an hour. •Heat th sugar, water and saffron strands to make sugar syrup. Squeeze the juice of a lemon to prevent crystallization. •Whisk the batter and put in piping bags. Pipe the batter in hot oil and cook for about 2 minutes on first side and 1 min. On the other side. Immediately, remove the Jalebis from the oil and place in sugar syrup for 30 seconds. Remove from the syrup and place them on a tray.  •Your Jalebis are ready. These Shahi toasts are going to be the sweetest, creamiest, richest and the most delicious toast you will ever eat! Every year on Eid, my family makes a ton of sweets and delicacies; and one of them is The Shahi Toast. Now just in case you are wondering what shahi toast is, Shahi toast means Royal Toast and it is a recipe to increase your blood's sugar level within a minute. LOL, I'm joking😂😂. Shahi Toast is fried bread dipped in sugar syrup, poured over with a creamy Rabdi or reduced milk and topped with dry fruits🤤. Shahi toast holds a special place in my heart. All our families have these recipes and dishes that are made on special occasions and are being passed down from generations. For me, it's Shahi Toast. My papa tells me how every eid his father (my grandfather) would make them. Farthest down my memory lane, I remember my papa and me and my sister making shahi toasts the night before every eid, while my mum would be preparing for the next day. And our whole family, all my bademamas and badepapas (aunties and uncles), we all would be doing pretty much the same thing at our homes. The next day, we would just visit each other, eat what they made and have so much. Not surprisingly, We continue the tradition to this date😁.
