Speculaas are up today. I generally enjoy cinnamon based cookies, so I'm optimistic. I went with Hellema speculaas for these.

These are dry and crunchy, with strong cinnamon flavor. These aren't very sweet though, and I do much prefer a sweeter cinnamon flavor. They're still good, and dunk quite well.

Speculaas Cookies or Spicy Sinterklass Cakes I received a mold along with this traditional Dutch cookie recipe 20 years ago. A translation of the Latin word speculum is speculaas mirror. A carved mold is used to press the dough into to create wall decorations. The image becomes its mirror image when spread out onto the cookie sheet, thus the name. They range in size from huge, thick men and women weighing up to one pound known as lovers, to those the size of two-thirds of a cookie. If molds are not accessible, roll out the dough to the desired thickness and cut shapes with a gingerbread man or other cutters. Because they keep well for a long time, making them in advance around Christmas is fantastic. 1/4 teaspoon salt, 1 teaspoon ground cloves, 1/2 cup slivered almonds, 2 tablespoons chopped slivered almonds, 2 cups sifted all-purpose flour, 2/3 cup butter, 2/3 cup dark brown sugar, 1/4 teaspoon baking powder, 1/2 teaspoon ground nutmeg, 2 tablespoons milk, 1/2 teaspoon ground ginger, 1 teaspoon ground cinnamon, 2 tablespoons chopped candied citron

Speculaas keks Potreban materijal: 360g brašna 2 kašičice cimeta 1/2 kačicice mlevenog muskatnog oraščića 1 kašičica mlevenog đumbira 1/2 kašičice mlevenog klinčića 1/2 kašičice sode bikarbone 1/2 kašičice soli 1/4 kašičice belog bibera 170g maslaca 110g tamnog muscovado šećera 80ml mleka Priprema: Prosejati brašno i dodati so, sodu bikarbonu i začine. Maslac sobne temperature penasto umutiti mikserom, postepeno dodavajući šećer. U maslac dodati 1/3 mešavine brašna, začina i mleko. Sve sastojke dobro sjediniti, pa sipati ostatak brašna i zamesiti testo. Testo uviti u foliju i ostaviti najmanje 2 sata u fružideru ili preko cele noći. Ja sam zamesila pre podne, a pekla ih baš kasno uveče, oko 24h. Testo izvaditi iz frižidera 45 minuta pre pripreme. Spremiti dva velika pleha od električnog šporeta i obložiti ih papirom za pečenje. Rernu zagrejati na 180C. Omekšalo testo podeliti na dva dela. Uzeti jedan deo pa ga razvući tanko, svega par milimetara na pobrašnjenoj površini. Vaditi modlicama oblike po želji i ređati na pleh, sa malim razmakom između. Ostatke testa skupiti, opet zamesiti i ponoviti postupak sve dok ima materijala. Peći 10-15 minuta. Kada blago poprime boju možete ih vadite iz rerne. Čim krajevi počnu da dobijaju boju mogu se vaditi. So, a Dutch Yuletide tradition was that during the second night of Yule, New Years, the coming of the new year was celebrated with laughter, singing, drinking, and lots and lots of noise.
On the first morning of the new year, people would rush to their loved ones houses to bring them dried boar or pig, which would bring blessings and good cheer for the coming year. This might have been a holdover of the sacrifices done for Freyr.
I am a vegetarian, but was charmed by this idea! Nowadays the giving of meat has changed to giving a marzipan pig, or a speculaas (a type of spiced cookie) pig. I don't like marzipan, and although I looked, I couldn't find a pig shaped speculaas mold. But! Pinterest gave me a cute idea of making a pig out of pink cookies!
Roze koeken (pink cakes, or glacé) are also a Dutch staple by now, so I got some roze koeken, stacked them, and added candy eyes and sugar paste ears. I enjoyed them as our first snack of the new years with my wife, and they turned out so freaking cute!
