Day 36: Low-FODMAP Steak Tips and Feta Potato Wedges

I really had a dark moment of the soul while I was making this, but it came together in the end. I do think this could all use some tightening up: different potatoes, something else in the sauce, etc. But I barely had any leftovers, which is a sign everyone is happy. Also, it used up a Costco amount of sirloin I bought last week. To the recipe.
Low-FODMAP Steak Tips and Feta Potato Wedges
2 lbs russett potatoes, peeled and cut into wedges
2 lbs sirloin, cut into 2 inch pieces
1/2 c feta crumbles
3 tbsp parsley
2 tbsp chopped chives
1 tsp chopped fresh oregano
1/4 c red wine vinegar
salt, pepper, olive oil
Preheat oven to 475F and position a rack in the upper middle. Toss the potatoes with oil, salt & pepper, and arrange on a rimmed baking pan lined with tin foil. Roast potatoes until soft and browning, about 30 minutes. Sprinkle potatoes with parsley, chives, and feta, and bake until the cheese is just melting, 5 minutes.
Meanwhile, pat steak dry with paper towels and season with salt and pepper. Heat oil in skillet over medium-high heat until just smoking. Add steak and cook until well browned all over and inside temp is 125F. Transfer to plate and let rest for 5 minutes until tin foil.
In the empty skillet, add a tbsp or so of oil, then cook fresh oregano until wilted, 30 seconds to a minute. Add red wine vinegar and cook, scraping up the fond, until the sauce is slightly thickened. Pour sauce over meat.

The potatoes kinda stuck to the tin foil, and I wonder if it wouldn't be better to use parchment, but it wasn't a huge deal. Maybe using a less starchy potato, like Yukon golds, would stick less as well. But then you wouldn't have the French fry vibes of these potatoes, which I really liked. The recipe I adapted this from called for scallion greens, but I didn't have any, so I used parsley and chives, which might have been better? I should have made more; everyone devoured them.
If you think of the sauce made with the pan drippings as a sauce, you'll be disappointed -- it's not saucy enough -- but if you think of it as a vehicle for every bit of browned meat goodness, it's great. And I finally used up all that Costco sirloin!

Day 31: Low-FODMAP Steak Tips with Iceberg Wedge Salad

I got blue cheese and sirloin on the contingency plan the last time I was at Costco, so I nosed through some recipes to see if I could come up with anything. When I saw one that paired iceberg wedges with steak tips, I was like, that's it. Per usual. a lot of this recipe ended up being stuff I already had in the kitchen -- the only thing I had to pick up on the way home was a lettuce head, because I didn't know if the one I had had gone off or not. To the recipe! Allons-y!
Low-FODMAP Steak Tips with Iceberg Wedge Salad
2 lbs sirloin, cut into 2 inch portions
1 c plain Greek yogurt
3/4 c blue cheese crumbles, plus extra for finishing
1 1/2 tsp red wine vinegar
1 head iceberg lettuce, cored and cut into wedges
12 oz cherry tomatoes, halved
6 slices cooked bacon, crumbled
2 tbsp fresh chives, minced
salt, pepper, and maybe oil
Pat steak dry with paper towels and salt and pepper all over. Either cook in a skillet with some oil over medium high heat, or grill until the meat is well browned on all sides and the internal temp is 125F. Tent with foil and rest for 5 minutes.
Whisk yogurt, blue cheese, vinegar, 1/2 tsp salt and 1/2 tsp pepper together in a bowl.
Arrange lettuce wedges and steak tips on 4 (to 6) plates and drizzle with dressing. Top with tomatoes, bacon, more blue cheese if you'd like, and chives.

This came together quickly, looked great, and tasted awesome. There were some complaints about the amount of lettuce and having to cut things up, which whatever. You could certainly cut the lettuce and steak tips up, and arrange the dish more like a chop salad, and no one would be harmed. I got 5 servings out of this recipe, but I live with three big guys, one of whom is a teenager, so adjust expectations accordingly.
As to the FODMAP content, I have seen in a number of places that Greek yogurt is very low in lactose, but if you're worried about it, you could use a sour cream alternative or lactose-free yogurt, if you can source it. Tomatoes are also only low-FODMAP in a single serving -- something like 5 cherry tomatoes -- so don't overdo it. Everything else is fine. I suppose you could sub the tomatoes with cukes or something.
I don't really have anything I'd do differently, and this was basically a perfect summer meal. I grilled the steaks, so I didn't have to heat up the house, and the salad was crisp and delightful. Now I'll just have to figure out what to do with the rest of the ridiculous amount of sirloin.
