Okay I was wondering how they were going to do the Demeter Logs in today’s entry but it was great! The way it so briefly captured the horrors and emotions of the voyage without feeling too redundant was incredible! I don’t think I would have done it any other way!

Weather fine, all sails set.
So someone with more knowledge about traditional sail feel free to jump in and correct me, but...
The main manpower requirement on a traditionally rigged sailing ship is in setting or furling the sails: that’s when you need the raw strength of all hands working together. The only other time you’re likely to need all hands is to work the pumps during or after a storm.
Further, the main reason to set or furl sails is a change in the weather: if the weather turns foul, they will have to reduce sail -- otherwise they’ll be at risk of losing the ship. And as previously mentioned, foul weather will also require the pumps to be manned, as a wooden ship will almost always take on water during a storm.
But if the weather continues fine like this, they won’t need much manpower -- the sails are fine as they are, requiring only just minor changes in attitude to respond to a change in wind or course. Nor are the pumps needed, as long as the weather continues fine!
Which is to say, as long as the weather continues fair, Dracula can eat the crew with impunity. Hell, with his superhuman strength (and depending on the remaining course changes ahead of them and the exact rig of the ship), he can possibly handle the course adjustments himself -- just like when he was making the beds and cooking all the meals himself.
Which is to say, “weather fine, all sails set” is NOT an optimistic statement that all is well. It’s a threat. At this point Dracula can eat almost anyone he likes (with the possible exception of leaving a navigator until the bitter end), and get away with it.
