3. 2022 Clos Cibonne, "Tradition" Tibouren Rose, Côtes de Provence, France
This is a serious rosé. It's still in the Provençal tradition - light and very dry - but this one edges from summer on into fall with notes of dried currants, cranberries, and bitter almond. It's aged under flor yeast, as Manzanilla sherry is, which minimizes the wine's exposure to oxygen and imparts a slightly salty and nutty aroma. It's made from 90% Tibouren and 10% Grenache grapes.
2. 2021 François Mikulski "Les Meix Chavaux" Meursault, Burgundy, France
I was lucky enough to get to taste this at an event a few months ago. This is an incredible wine from an incredible producer. Completely made from Chardonnay grapes, it's an intense, luscious wine with notes of apricots, peaches, white flowers, and almonds. This basically ruined me for the rest of white Burgundy, it's that fucking good.
1. Vilmart et Cie, "Grand Cellier", 1er Cru, Champagne, France
This is my current sparkling wine obsession. Aggressively effervescent in the way I like best, this has very fine bubbles that attack your palate with flavors of brioche and green apple. I've been telling my mom that I think the most amazing thing to pair with this would be a granny smith apple pie with cheddar melted on top. This is a delicious grower-champagne, a category of wines made not by major producer houses such as Veuve Cliquot, but instead by the wine-growing farmers themselves.
I'm just now realizing all my top picks are French. This wasn't intentional! I really waffled and nearly chose a Catena Zapata Malbec from Argentina or the Fontelloro Super-Tuscan that I'm obsessed with. Oh well

En bouche, on a un vin ample avec une belle rondeur, de la finesse et de l'élégance apporté par l'élevage qui est subtil et bien maîtrisé. Sur des arômes de poires, pêches blanches, nectarines, fleurs acacia. Une bonne longueur en bouche avec une finale sur des notes de fruits secs (noisettes et amandes torréfiées).

Un Côtes de Provence Blanc très aromatique, un vin plaisir à déguster en toutes circonstances entre amis ou même à deux. Un vin avec beaucoup de finesse et de gourmandise. Je vous le recommande.

Depuis 1805, notre famille cultive et donc protège cette vallée, un biotope unique peuplé d’une faune riche : perdrix, lièvre, musaraigne, tortue d’Hermann, renard, lézard… Cet espace naturel, Site Classé depuis 1995, fait depuis peu partie du Parc National de Port-Cros.Au départ c’était une ferme vivant en autarcie, chassant et pêchant, produisant fruits, légumes, céréales, de l’huile d’olive et évidemment du vin. Au fil des décennies, ce dernier est devenu la culture principale. Cet héritage nous donne pleinement conscience de notre rôle dans la conservation de cet écosystème.Ainsi, en partenariat avec un apiculteur, des abeilles accroissent la pollinisation des essences locales. Les moutons, qui viennent paître l’hiver, entretiennent et fertilisent les champs et les forêts. Ces actions favorisent la biodiversité, et protègent la faune locale du feu et de la diversification du maquis. Celle-ci protège à son tour nos cultures des ravageurs. Nous produisons évidemment selon les règles de l’agriculture biologique.
Aujourd’hui, à cheval sur les communes de Ramatuelle et de La Croix-Valmer, nous produisons des vins en AOP Côtes de Provence. 30 hectares de vignes, dont des cépages plus rares comme le Tibouren ou le Muscat, sont ainsi cultivés sur le domaine. Implantés à la porte Sud Ouest de la Presqu’île de Saint-Tropez, la proximité immédiate de la mer garantit un climat venté et tempéré. La diversité unique de nos sols (granit, schiste, argile…), appuyée par l’enherbement spontané et des rendements faibles, nous permet de produire une large palette aromatique.

On the palate, we have an ample wine with a beautiful roundness, finesse and elegance provided by the aging which is subtle and well controlled. With aromas of pears, white peaches, nectarines, acacia flowers. Good length on the palate with a finish of notes of dried fruits (hazelnuts and roasted almonds).

Since 1805, our family has been cultivating and therefore protecting this valley, a unique biotope populated by a rich fauna: partridge, hare, shrew, Hermann's tortoise, fox, lizard... This natural space, a Classified Site since 1995, has recently been part of Port-Cros National Park. At first it was a self-sufficient farm, hunting and fishing, producing fruits, vegetables, cereals, olive oil and of course wine. Over the decades, the latter has become the main crop. This heritage makes us fully aware of our role in the conservation of this ecosystem. Thus, in partnership with a beekeeper, bees increase the pollination of local species. The sheep, which come to graze in winter, maintain and fertilize the fields and forests. These actions promote biodiversity, and protect the local fauna from fire and the diversification of the maquis. This in turn protects our crops from pests. We obviously produce according to the rules of organic farming.
Today, straddling the towns of Ramatuelle and La Croix-Valmer, we produce AOP Côtes de Provence wines. 30 hectares of vines, including rarer grape varieties such as Tibouren or Muscat, are thus cultivated on the estate. Located at the South West gate of the Saint-Tropez peninsula, the immediate proximity of the sea guarantees a windy and temperate climate. The unique diversity of our soils (granite, schist, clay, etc.), supported by spontaneous grassing and low yields, allows us to produce a wide aromatic palette.

Dal 1805 la nostra famiglia coltiva e quindi protegge questa valle, un biotopo unico popolato da una ricca fauna: pernice, lepre, toporagno, tartaruga di Hermann, volpe, lucertola... Questo spazio naturale, Sito Classificato dal 1995, è recentemente faceva parte del Parco Nazionale di Port-Cros.All'inizio era una fattoria autosufficiente, caccia e pesca, producendo frutta, verdura, cereali, olio d'oliva e naturalmente vino. Nel corso dei decenni, quest'ultima è diventata la coltura principale. Questo patrimonio ci rende pienamente consapevoli del nostro ruolo nella conservazione di questo ecosistema, quindi, in collaborazione con un apicoltore, le api aumentano l'impollinazione delle specie locali. Le pecore, che d'inverno vengono a pascolare, mantengono e concimano i campi e le foreste. Tali azioni promuovono la biodiversità, proteggono la fauna locale dal fuoco e dalla diversificazione della macchia. Questo a sua volta protegge le nostre colture dai parassiti. Ovviamente produciamo secondo le regole dell'agricoltura biologica.
Oggi, a cavallo tra le località di Ramatuelle e La Croix-Valmer, produciamo vini AOP Côtes de Provence. Nella tenuta vengono così coltivati ​​30 ettari di vigne, tra cui vitigni più rari come Tibouren o Muscat. Appellation: vin effervescent /Sparkling Domaine: Château Les Mesclances @lesmesclances Cuvée: Zarafa Année / Year: 2016 Cépage / Grape: 80% Tibouren, 10% Grenache, 10% Rolle 🍾 🍾 Here is a wine that I had the opportunity to taste with @anais_beaudouin and @berto_vino_degustation and which was a very interesting moment during the tasting. On the nose there are fruity notes, a little honey and some notes of pastry, it is a rather complex nose. In the mouth the bubble is light, there are notes of roasted dry fruit, fruit, again there is a lot of complexity. The finish is on bitterness, but a very interesting bitterness, which will be more or less present depending on whether the wine is more or less fresh. It is a traditional Provencal method (no expedition liquor but an addition of frozen must) with Tibouren, as much to tell you that it is a wine rather unique in the world. 🍾 🍾 Voilà un vin que j'ai eu l'occasion de déguster avec @anais_beaudouin et @berto_vino_degustation et qui fut un moment très intéressant lors de la dégustation. Au nez il y a des notes fruitées, un peu de miel et quelques notes de pâtisserie, c'est un nez plutôt complexe. En bouche la bulle est légère, il y a des notes de fruit sec torréfié, de fruits, là encore il y a beaucoup de complexité. La finale est sur l'amertume, mais une amertume très intéressante, qui sera plus ou moins présente selon que le vin soit plus ou moins frais. Not enough complexity to make it remarkable. Nowhere near the quality of their rose. Words to live by from Master Sommelier, Laura Maniec, who would pair her basil flecked pizza with a nice Barolo, Frappato, or other glass of Italian red hued goodness. She is one of just 20 female Master Sommeliers in the world (which is so badass it’s crazy). She owns and operates Corkbuzz in Manhattan and Charlotte, North Carolina, where both wine novices and pros can gain vintner knowledge as well as imbibe under one roof. In Vino Veritas at its finest. The Wall Street Journal called Laura “The It Girl” of the NY wine scene, Food & Wine Mag sings her praises as one of the top sommeliers of 2013, and Crains NY and Wine Enthusiast keep her in the company of one of their lauded Top 40 under 40.  I mean….it is for very good reason that I am equal parts in awe of and obsessed with this chick. At just 25 years old, she was named both partner and wine and spirits director for BR Guest Restaurant Group, where she waxed poetic on tasting notes for 20+ restaurants. I say again, she was just 25.If she were a wine, Maniec says she would be a “Clouet Cuvée 1911 from the town of Bouzy in Champagne: fun yet serious, bubbly, unique and warm (as in welcoming, although Bouzy does also happen to be one of the warmest villages in Champagne).” But don’t let the vintage or the fancy pants quality of that bubbly bottle fool you.  She is young and as down to earth as they come – relishing camping trips with friends, and her cheese smothered in (oh no she didn’t!) butter. 2. Wimmer Czerny Gruner Veltliner Fumberg
Wagram, Austria – 2012
This is one of my favorite medium bodied wines for summer that pairs perfectly with the bounty of produce available from tomatoes, to asparagus, to corn. It has flavors of orange zest, tangerines and white pepper and is one of the best pairings with vegetables. ($13.99)
3. Clos Cibonne Tibouren Rose
Cotes de Provence, France – 2012
Made from the local Tibouren grape, it is pale in color with hints of orange and chocolate. During the summer it is a little more serious than the average bottle of rose. It goes well with grilled burgers or chicken or with fish tacos. ($22.99)
4. Ameztoi Stimatum Txakolina Tinto
Getaría, Spain – 2013
Made from the Hondarribi Beltza grape in Pais Basco region of Spain, this slightly fizzy red wine is one of the few low alcohol reds that is perfect for sipping on during the day. It has fruity notes but finishes completely dry and almost looks like a dark rose in color. ($22.99)

2018 Château Miraval Côtes de Provence “Studio by Miraval” Rosé
Gliding into a holiday week with some Provencal rose by Miraval. Apparently this is inspired by a music recording studio that they have on their estate where some bands that you might have heard of (Pink Floyd, AC/DC) have recorded! Peaches, white cherries, stone fruit, lemon, and rose on the nose. Simpler on the palate with peach, cherry, and a hint of strawberry notes.
