haven't been able to cook something rlly good or eat my favorite foods in the way that I like them recently and it's doing horrors for my mental health. I would honestly settle for Kraft mac n cheese and dino nuggies rn (I don't like Kraft brand mac n cheese and much prefer homemade but that's ridiculously expensive and dino nuggies are fine I guess but I prefer something crisper like popcorn chicken or McDonald's nuggets)

Dear diary 🧸,
today was a big day for me as it was the annual award ceremony at school for the previous academic session of 2023 - 24. i received a prize for English and Maths, for which i was given two certificates, one book and one scholar badge. last year i had received one scholar badge as well, and it felt so good to add this new one to my collection! parents of the prize receivers were also invited and my mom had come as a part of the audience.
afterwards, she and i went for lunch at a nearby restaurant. i had italian white sauce pasta and mango milkshake (both of which were SUPER DELICIOUS) and she had veg cheese grilled sandwich. then while returning home, we bought ice-creams to have later, because summers are all about them!!

this week i’ll be making :
- crispy pork belly tacos w pickled red onion + smoky lime cream sauce, a copycat from a local restaurant my gf and i adore
- rosemary rhubarb olive oil cake OR olive oil cake w blackberry buttercream + orange curd (would love any input on which of these i should make)
- chili butter grilled shrimp + grilled lemony asparagus, im typically a shrimp hater bc the texture freaks me out but i had a realization that maybe i’ve just only had overcooked shrimp so i wanna give it a shot
- pan seared salmon of some kind ?? w miso maybe + spicy cucumber salad
- cheesy smash burgers to use up my homemade pickles and buns from making chicken sandwiches last week, my new roommate is wanting to make them so i may delegate this one !
- marinated chicken to top some cold crispy lettuce and lemon tahini roasted veg, eaten cold
i want to bake something else too, but i’m not sure what, any input is appreciated :) i also have a generous amount of goat cheese and smoked salmon to eat this week so i’m sure there will b some Toasts!!

idk about anyone else but I feel like the portions in general at erc make no sense and are too small. I'll probably get anon hate telling me I'm not sick for this but literally dinner tonight was a grilled cheese and a peach cup. that just. doesn't seem like enough?? other examples include 4 small pieces of broccoli being a veg exchange, a hummus + veg sandwich being a full meal, and a quesadilla and an apple being a full meal. also one single B snack (b snacks could be like. a bakery style muffin or a bowl of goldfish crackers) supplement is equivalent to an entire meal. idk something just isn't adding up esp compared to other programs I have been to. I mean I am fine with not being very full at every meal but still. I have eyeballs.

Low Spoon Meals
- Overnight oats - just mix rolled oats, milk and your choice of fruit, toppings, thickeners etc. I like this because it’s easy to just dump things and you can prep it in advance during times you have more spoons.
- Sandwiches - Again, can be prepped ahead of time and requires little assembling. Your choice of bread, sauce, veg and protein. I like wholegrain bread with spinach, deli turkey, guacamole and spicy mayo. You can simplify or fancy it up as much as you like. Ham and cheese works too. You can also toast them and them bam you’ve got a toastie. Sandwich presses are your best friend.
- Frozen fish and frozen veg - Get a sheet tray. Put some foil or baking paper on it. I like to add a frozen fish fillet (but you can use fresh or chicken), and a bunch of green beans (or veg of your choice). Drizzle olive oil. Add spices (I use garlic powder, paprika and salt) and then I usually put in the oven for about 20 minutes at 225 C (440 F). If the fillet is smaller, check it at 17 minutes. Best part? Just remove the foil/paper for easy clean up.
- Wraps - Take a tortilla, a veggie, a protein and some sauce. My favourite is a wrap with tuna, shredded carrot, spinach and spicy mayo. I buy my carrots pre-shredded to make it easier.
- Grilled cheese and tomato soup - Empty a can of tomato soup into a microwave safe bowl and zap it, taking it out and stirring every 45 seconds. Then toast two pieces of bread and stick some cheese between those bad boys. Once the soup is ready, zap the grilled cheese in the microwave for 10 seconds to make sure it melts. Or if you don’t own a toaster, just microwave the whole thing. Then enjoy!
Noodle soup - In a pot, boil water. Add a chicken bouillon cube, some frozen veggies and hokkien or udon noodles. You can also add frozen dumplings. Just boil it for a few minutes then done. I pre-boil my water in an electric kettle and add it to the pot to save time.
Eggs - Pretty good. Can quickly scramble them, hard boil them. Can even cook them in the microwave.
Some meals to have on hand for really bad days
- Instant mac ‘n cheese - Not everyone likes this stuff and it’s not the healthiest, but it’s good in a pinch. I always keep some on hand. To make it gourmet, add some garlic powder to it.
- Instant powdered mashed potato - Again, not everyone’s favourite, but it’s so good and easy. Just add boiling water to powder and bam you’ve got mashed potato. Add butter to make it gourmet.
- Instant noodles - Goes without saying.
- Frozen bread - Did you know you can freeze bread? Take a slice of frozen bread and zap in the microwave 10 seconds for quick sustenance.
- Microwave rice - This is good by itself but also great to add an extra something to meals without too much extra effort.
- Frozen dumplings - if you have a rice cooker, you can put water in the pot and steam these in the top with a steamer. Or you can boil them in water. Or you can put them in a bowl with water and nuke them in the microwave.

Little Meals on the Aerie, Week of 1/8
I love meal prepping, so I'm going to share what's on our table this week! I pack breakfast and lunch for us to take to work. For dinner, I make ahead nearly all of this to reheat the day of. I don't often get home until 6pm, so I want dinner on the table in fifteen minutes flat!

Considerations this week: Ground beef is a decent price. It's also cold and I want comfort food. We were going to rely a lot on a homemade rotisserie chicken for dinners, but the meat we had for our family dinner on Saturday went off so I had to replan everything.

Breakfast: Blueberry muffins, yogurt, artichoke-spinach egg bites.
Lunch meal prep for the Spouse: Broccoli beef with extra broccoli and a little rice instead of noodles.
Lunch meal prep for me: Chopped apple, pecan, and bleu cheese salad with ham, pickle, and cream cheese grilled cheeses (these were surprisingly good). Meatballs and leftover weekend grilled veg.
Little snack - is it just a California thing, or does everyone else like eating mixed rice/refried beans on tortilla chips like a dip?

Monday: Chicken pad thai, my beloved.
Tuesday: Tuna sandwiches with salad leftovers.

Bugbear favourite sandwiches? I'm kind of a harvarti, bologna, mayo, and spicy mustard kind of person myself, all on white bread from the local bakery. If we have lettuce I put that on too. I hate egg sandwiches and omelettes. I want to kill them.

Bark's, to the surprise of absolutely no one, a meat guy. Doesn't totally matter the type (bit more preference toward red meat, because BEAR, but he'll take what he can get!), give him a sandwich with some meat in it and he'll be happy. You could also get away with holding the bread and the veg, honestly. 😂😂😂
Jewel's a bit harder to nail down, mostly because I project onto her too hard and I'm not a big sandwich person. Toasted cheese/Grilled cheese's probably my favorite. Also I've tried the cucumber sandwiches Prof Pickle won't shut the fuck up about in Sonic Unleashed and they're actually pretty great! Perfect for the oppressively hot summer days where it's too hot to exist. I also love a good chicken sandwich occasionally, and a BLT.
I HATE Mayo though. I hate it, it's nasty, get it away from me. Not big on mustard either, but at least there it's just a flavor thing. I hate Mayo for every reason. Its flavor, its texture, its coloration, the sound it makes when you shake the jar, everything. Mayo upsets me greatly. 😂😭
But I love egg sandwiches and omelettes myself, so to each their own.
I got distracted, back to BugBear. The point before I derailed myself is I don't know if I'm giving Jewel my same screwy tastes or not, so her fave sandwich is probably a bit more nebulous. But Bark's easy: slap some meat in-between some bread and he's good. 😂😂😂
