Sommerfrühstück! Nichts fühlt sich für mich mehr nach Sommer an als bei herrlichem Sonnenschein zu frühstücken. Mit Kaffee, frischem Obst und Tomate-Mozzarella auf frischem Baguette. Mit dem Baguette kann ich leider noch nicht dienen aber dafür mit einem unglaublichen leckerem veganen Mozzarella. Die liebe Sofia von @isshappy hat mal wieder gezaubert und herausgekommen ist ein super frisches und leckeres Rezept dass nicht nur ohne Cholesterin daherkommt sondern durch die Cashewkerne und Flohsamenschalen sogar noch viele gute Aminosäuren und Vitamine mitbringt. Na wenn das mal kein guter Start in den Tag ist. Auf Facebook und im Blog verlinke ich mal dieses tolle Rezept. Unbedingt nachmachen. Ohne Salz übrigens auch super lecker für Kinder. Mein Sohn mampft fleissig mit (und versucht mit dem Hund zu teilen 🙈). Allerdings würde ich euch empfehlen zum Verarbeiten von Nüssen immer einen starken Mixer zu nehmen. Er sollte mindestens 800 Watt haben. Sonst macht das einfach keinen Spass. Who would have known that I would ever be as obsessive over food as I was music. Having a number of health issues including an acoustic neuroma which is a benign brain tumour, dodgy knee from an accident (not my fault as yes I won), bad back, list goes on..I wasn’t going to let it dominate my life. I already had been vegetarian for 31 years but with reflux and a dodgy stomach didn’t realise dairy and eggs are no great contributor to well being. I started going more plant based and not only have my energy levels boosted, so have my moods and I feel happier and more settled into who I am and what I do.

I started looking at Instagram vegans and got some inspiration from there, but started immediately creating my own renditions of breakfast, curries, spaghetti bolognaise, tofu scrambled, smoothies, homemade hummus.

I would invest in a nutrition bullet. They are about 60-80 quid, but I’d say you more than get your money’s worth. I use it nearly everyday.

Targeting women over 50 especially, but this applies to all ages. Try having a ‘vegan Monday ’ and see how you feel. I cannot advocate it enough. I had a serious operation four years ago which made my hair thin and break. It wouldn’t grow either. With the correct ‘colours’ in food along with the right vitamins, you’ll reap the rewards. I’ll talk about skincare next blog. I have been looking after my skin since I was 12 and between your diet and skincare, you’ll see minimal ageing @. Tune in next week. Turkish Kuru Fasülye with pilau rice . White beans in a tomato based sauce .We enjoyed this last night! I love this dish because the whole family devours it in minutes 😁 it’s super healthy and cheap too , it’s a winner all round .🤩 I’ve changed the pilau slightly this time and I’ve added some şehriye pasta too . Ingredients 250 gms of dried haricot or similar beans. 2 onions finely chopped . 1 tablespoon of tomato purée. 1 carrot – sliced. 20 mls olive oil. Salt and pepper to taste. 1 teaspoon of paprika. Rice Turkish baldo rice is the best. 1 small handful of şehriye pasta 1 cup of rice soaked in hot water for two hours. 1 and a half cups of boiling salted water. 1 tablespoon of butter or vegan butter. Method Soak white haricot or similar beans overnight in salted water remember to change the water two or three times if possible . Simmer for 30 minutes then rinse . Fry the onion in the olive oil untill translucent and add the tomato purée and cook for a further minute or two. Add the carrot and then place all the ingredients together in a slow cooker , cover with hot water and cook for six hours . Or cook in a normal saucepan untill the beans are soft , 2 - 3hours approximately. Or in a pressure cooker as instructions recommend. Rice Melt butter in a wide pan , add the water when it bubbles add the pasta and sauté gently untill a deep golden brown , then add the rice turn down to medium cover and cook untill water is absorbed. Check to see if cooked if not add a small amount of boiling water and check again .
