How messed up is it that I will scroll through Pinterest, find a bunch of pro-vegan posts and recipes, but then all of a sudden all of the ads turn into Tyson ads?

Currently at Papasito’s in Houston. There are no vegan options except for the black beans (the rice is even boiled in chicken stock). Do not get the corn chips if you’re gluten free… they are so dry and tasteless it hurts. Our waiter was really nice though!

Spoke too soon! Only 10 mins (walk) away from the convention center is an adorable little place called “Leaf and Grain.” I got a huge bowl with kale, quinoa, roasted sweet potatoes, roasted Brussel sprouts, black beans, corn, and gluten free falafel, dressed with avocado vinegarette. It was so delicious! The bowls and lids are certified compostable. If you are ever in Houston, go find it in the shopping center on Lamar Street (M floor).

Currently in Houston for the National Science Teachers Association conference. Cannot find any vegan or gluten free options near our hotel (the Hyatt on Louisiana). It is 8:00, and almost everything is closed, though, so I’ll post tomorrow if I can find anything for lunch ❤️🌱✌🏻

Cloudy With A Chance of Meatballs is one of the most inspiring movies for me… Flint Lockwood made the world willingly go vegan OVERNIGHT.
I mean, the first food item he ever creates is a cheeseburger… made out of exclusively WATER. Sounds vegan to me…

So sad how desensitized people are to what they eat. The proof is in this gift card holder at Arby’s: they acknowledge that what they’re eating was a living creature through the image of the alive animal, and yet the word “meat” and the intent behind the gift card being to purchase part of a corpse to eat connects that living creature to society as a food source. How sad.

Last dinner at Bigfire Grill at Universal! This meal was the best of the trip! I got the Cauliflower Steak (naturally vegan, but ask for gluten free), and it came with roasted shishito peppers, tomatoes, and potatoes with a slightly spicy tomato sauce. This meal was so delicious! I do recommend getting this as a dinner, though, because it was not as filling as a lunch should be at one of these theme parks. Our server, Mario, was the greatest; he really made us feel at home here. Only thing that I didn’t like was that we were seated right next to the open kitchen (it’s meant to be an appeal), and a lot of meat was being cooked, so I was a little grossed out. But other than that, this experience was fantastic and I highly recommend eating here on your next Universal trip!

Breakfast at the Three Broomsticks! Get there a few minutes before it opens at 8:00, and you won’t have to wait at all! I got the modified-gluten-free-vegan pancake breakfast, and it was… okay. The potatoes (that replaced bacon and sausage) were amazing, but the pancakes were a little dry and tasteless. I did, however, discover a way to fix this problem! Order a pumpkin juice (a drink comes with the meal) and dip your pancakes piece by piece into the juice and it fixes the flavor issue and moistens the pancakes enough.

Yesterday at lunch we ate at Mythos. I got the gluten free and vegan Pad Thai (you have to request special order) and it was pretty good. It came with two blocks of tofu (I had already eaten one when I took the picture), a whole lot of rice noodles, and a bunch of vegetables (especially carrots). It was a little spicy, but not overpowering. I ended up leaving half of the noodles because they gave me A LOT of food, and I was stuffed so much that I didn’t need to eat dinner yesterday (and wasn’t very hungry this morning). At $19, this is a perfect meal to share with someone and come out not spending too much.
We also got the lemon hummus to share, and they brought some cucumbers for me instead of peta bread. It was probably the best hummus I’ve ever eaten.

Currently at Universal Orlando Resort for night #1, and we had reservations at Margaritaville. They didn’t have a whole lot of vegan/gluten free options, but the ones they do have are fantastic! We got chips and salsa to split and I got a vegan burger. The burger was a Beyond Meat burger with vegan cheese and Mayo. It was sooooo good! And to top it all off, I heard an Amy Winehouse song (my favorite!) and they use paper straws! Groovy and sustainable!

These Seeds of Change packets are lifesavers! I’m at a Holiday Inn Express, and the breakfast is 100% NOT vegan friendly. I am so glad that I brought a couple of these packets along with me because this will serve as my delicious breakfast!
By the way, I’m on my way to Universal Studios, so I will try to document all of my vegan meals.

No pictures to post because I ate it so fast, but I just tried the Burger King Impossible Whopper and it was so good! I got it as part of a 2 meals for $10 deals, so this amazing gluten free (without the bun) and vegan option is absolutely worth it.

Just found this adorable little shakes and coffee place called Shakespeare The Protein House in the Kennesaw area. I got their Vegan Pumpkin Spice Coffee, and it was so good! Please go check them out! The aesthetic is so adorable and I will definitely be returning!

Visiting KSU for their Open House tour, and I am so happy to see that they have gluten-free vegan options! My meal consisted of all of the pictured foods (soooo good!), and a few options (vegetable fried rice and tofu stir-fry) from their Asian Restaurant. Before, I was worried that they wouldn’t have enough breakfast options, but they have smoothies and cereal with almond or soy milk, so I think I’ll be good.
Bottom line, I am never leaving this place.
