Rainbow veggie kabobs prepped and ready for grilling! You can use any veggies you like. I used cherry tomatoes, sweet potato, yellow squash, mushrooms, zucchini, and red onions. If you decide to use any kind of potato, boil them until they are a little tender but firm enough that they won't fall off the skewer. As youre prepping the veggies, soak the bamboo skewers in water so they dont burn on the grill. Chop everything into roughly the same sized pieces. The marinade is simply the juice of two lemons, two tablespoons of olive oil, sea salt, pepper, and chili powder. Thread the veggies on the skewers in whatever order you desire. I accidentally made a rainbow my first one and decided it was so cute I did the rest of them the same way. Once you've finished with putting them on skewers, brush them with the marinade. Grill each side for abour 3 or 4 minutes and enjoy! :) Experiment with different veggie combos and marinade spices!

Chocolate Chip Banana Bread Mini Muffins

Long time no recipe! I've got a few planned to post this upcoming week so stay tuned! This one is so easy. And of course, the mini muffin pan isn't necessary, but they're so darn cute, aren't they?
Preheat your oven to 350 while you gather your ingredients
five extremely ripe bananas
one cup of greek yogurt
three eggs
six scoops of whey protein of your choice (vanilla or unflavored work best! but a chocolate or peanut butter would be fantastic as well)
one half  of a package of mini chocolate chops. I used Nestle semisweet morsels
3/4 a cup of whole wheat flour
1/4 cup of truvia baking blend
1/2 teaspoon baking soda
1/2 teaspoon baking powder
two teaspoons of vanilla
a smidgen of nutmeg if desired
Mash your bananas and add the rest of the wet ingredients; yogurt, eggs, truvia, baking soda and powder. Slowly mix in your whey protein and flour. Fold in the mini chocolate chips. Careful not to over-mix.
Spray a muffin tin with a non-stick spray and fill each well about 3/4 of the way full. Bake for about 15 minutes or until a toothpick comes out clean. And that's it! Enjoy :)
And the nutritional profile of one mini muffin
35 calories (47% C, 30% P, 23% F)
1 gram of fat
4.5 grams of carbohydrates
1 gram of fiber
3 grams of protein
Definitely store these in either your fridge or freezer! Since they're so moist they will go bad quicker if you leave them out.

Swamp monster protein ice cream! Still working on this one, but this batch turned out pretty tasty! Used up the rest of my matcha tea, added some cinnamon and ginger, and a drizzle of honey!
