Baked Banana.聽Yummy dessert! Sliced a banana open, filled it with almond butter and a dash of chocolate and then wrapped it up in foil and baked it at 450 for 10 minutes. yummy!

Veggie Sandwich!聽Simple veggie sandwich made on whole grain ezekiel bread. Yummy and so healthy. Contents include avocado, alfalfa sprouts, spike seasoning, mustard, tomato and onion. I also had some almond butter and apple slices on the side. yum yum.

Spaghetti Squash This is a totally amazing recipe that I will probably use all the time. I do recommend heating the squash in the microwave (there are plenty of tutorials within google :) ). Couch to 5K

I have been working on my running skills (which were closer to flailing skills :/ ) and am on to week 3 on the couch to 5k (get running) app. Hopefully I can make it through this. I have big plans of running a 5k and then hopefully a 1/2 marathon one day. My mom's been a good support. We have been taking our dogs with us when we run (and tuckering them out too!). Here's a pic of my mom and our pups after one of our runs聽just for funzies:聽

SQUASH/SPINACH/TOFU LASAGNA 聽I found this recipe on a forum online and used yellow squash and what we had of zucchini as the noodles. It was amazing! I am so making this 1,000 times over once we get a veggie slicer. Using a potato peeler for the squash was a bit too tedious for me! I also like to use vegan mozzarella cheese instead and don't add any oil to the pan. Vegetable Plate from The Brewhouse in Santa Barbara, California 聽This was seriously the most exciting the that I have seen on any menu and it was amazing. I didn't know how much I could like eggplant and artichoke by itself. I first saw the plate and was like... meh... then I ate it and was more than happy with my decision. CAULIFLOWER PIZZA CRUST 聽This pizza crust was a bit tedious to make, (because of the grating of the cauliflower) but it's completely worth it! We used vegan mozzarella cheese and some feta instead and it worked out just fine. :) This is amazing and you so don't miss the crust! ZUCCHINI NOODLES 聽I made my spaghetti sauce homemade and used zucchini noodles as a substitute. It was pretty amazing. We do have a special slicer that makes making the noodles a lot easier. The sauce was made from blanced and peeled tomatoes, sliced tomato, sauteed onion, garlic, basil leaves, zucchini chunks, diced celery, mushrooms and some ground chicken. Garlic salt, pepper, oregano and rosemary to taste.聽

RAW PIZZA AND RAW PUDDING 聽These were some of the most amazing dishes that I've ever had. I got them in Sacramento from a restaurant called The Green Boheme. I don't personally follow the raw diet, but it really isn't bad. Zucchini Pizza Crust 聽It's so simple and easy to make and gets the pizza craving a bit. I made pizza with someone and they made a homemade crust while I just used squash as my crust (zucchini and yellow squash). It worked out just fine and was really easy to make real quick. Veggie Stir Fry聽 This is definitely a favorite of mine now. I find that I make stir frys in our electric wok (best investment ever!) all the time now. It really helps to get my veggies in! I throw in my favorite veggies and seasonings (tends to be onions, bell peppers, mushrooms, garlic. asparagus and some liquid aminos) and i'm a happy girl. :)

How I Want My New Diet To Go
These are my thoughts/ideas/hopes for my new dieting lifestyle after the HCG diet
minimal sugar treats, 1-2 per month maybe (in small doses)
breads/carbs maybe once a day, ideally none.
Lots of veggies (ideally organic, at least follow the dirty dozen)!
Fruits ok! Good to use as desert or snack :)
Super limited dairy - switching to vegan cheeses (or goat cheeses) and soy products when I want dairy.
red meats super rarely.. like once a month status, if that. I want to adopt more of a vegetarian lifestyle. About 12 oz or less of other animal proteins (fish, white meat).
Just so you all know where I'm coming from ...

HCG Phase 3 Thoughts and Feelings
I just ended my HCG Phase 3 course today (3 weeks of P3). I went out with a splurge too :/ ... other than that, I think that I did really well. When I weighed myself this morning I was only .7 of a lb over what my last injection weight was and that was after I went for a run and had breakfast so I think that it would have been lower. I was at 136 even during that weigh in. I haven't decided how often I will or will not weigh myself from here. I'm so used to weighing myself every day now! I think that I may have an obsession! eek!
I did really well and only had a sliver of a piece of bread earlier in P3, however today I realized how close I was to the end and splurged with a mini veggie pizza at BJs and a mini red velvet pizookie... though I was way too full to finish it! We will see how it changes my weight tomorrow. Hopefully not too much!
Also, I found that I went crazy on Almond Butter. OMG it's amazing. I think I was eating way too much.. but hopefully i'll get over it soon. [It was organic from Lassens.. no sugars added or anything]
I cut out most of my meat too. I'm working on finding better聽non-animal聽protein sources for my new, ideal diet. Trying to make sure I got 9-12 cups of veggies in a day! Talk about difficult!
I think that's about it of my phase 3 gibber jabber. :P Moving this blog over to a diet/fitness direction since I want to get down to my UGW by diet and fitness from here. I don't think HCG is worth it for the last 16 lbs.
