Back to school and excited to start cooking again. I'm enjoying this last bit of summer with this simple and easy roasted tomato-basil caprese. Happy cooking!

My friend and I went on a shopping spree on Buganda Road today. I have to say I like these crafts shops much more than the ones behind the National Theatre. There is a wider selection here and you also get a better price. The vendors are so nice and are easy to negotiate with. Therefore, i went a little crazy ha. How can I ever leave Uganda and its beautiful cow horn jewelry?

Healthy eating in Uganda
Believe it or not, ever since I have arrived in Uganda, I feel that my heath has improved a whole lot! The food here is so organic, natural and hardly processed in anyway. Their produce is wonderful. In fact, I have never seen avocados this large before! They are so sweet as well. Ugandans cook mostly with salt, never sugar, and their food is rarely oily. Local food comprises of side dishes like chapati (thick flour pancake) and rice, veggies such as matoke (mashed bananas that taste similar to potatoes), sweet potatoes, pumpkin, Irish potatoes, yams, and cassava, and bean, chicken, fish, beef, or ground nut sauce. Ugandans call it sauce but it is more similar to soup in our definition.聽
The picture I include above is a typical meal in Uganda: matoke, rice, bean sauce, and ground nut sauce. (You usually choose only one type of sauce, but I wanted to try them both)

I'm in Uganda!
Don't frown at the sight of these grasshoppers just yet. They are so yummy and they are a great source of protein. They taste just like little shrimps. You just have to build up the courage to slip one in your mouth and before you know it, you will find yourself craving this tasty snack!

It is spring break here at Princeton. Let the Spelman 17 cookathon begin with my lemon cake!
(I got A POUND worth of lemons from my grocery plan last week. Better get rid of them before they go bad, right?)
