Oranges, grapefruit, and lime all add their own unique flavors to this Citrus Salad, making it a real treat for the taste buds. With toasted almonds and pomegranate seeds on top, it's the perfect mix of tastes and textures.
Ingredients: 2 oranges, peeled and segmented. 1 grapefruit, peeled and segmented. 1 lime, peeled and sliced. 1/4 cup pomegranate seeds. 1/4 cup sliced almonds, toasted. 2 cups mixed greens. 1/4 cup honey. 2 tablespoons olive oil. 1 tablespoon fresh lemon juice. Salt and pepper to taste.
Instructions: The mixed greens, orange and grapefruit segments, lime slices, and pomegranate seeds should all be put together in a large bowl. To make the dressing, mix honey, olive oil, fresh lemon juice, salt, and pepper in a small bowl with a whisk. Pour the dressing over the salad and toss it around gently to coat. Toast some almonds and sprinkle them on top for extra crunch. Serve your refreshing Citrus Salad right away and enjoy it!

This meal, Chicken and Quinoa Stuffed Bell Peppers, is both healthy and tasty. Chicken and quinoa give them a lot of protein, and the vegetables add a lot of flavor. They're a filling dish for lunch or dinner.
Ingredients: 4 large bell peppers, halved and seeds removed. 1 cup cooked quinoa. 1 lb ground chicken. 1 onion, diced. 2 cloves garlic, minced. 1 can 14 oz diced tomatoes, drained. 1 cup spinach, chopped. 1 teaspoon paprika. 1 teaspoon dried oregano. Salt and pepper to taste. 1 cup shredded mozzarella cheese.
Instructions: Warm the oven up to 190C 375F. Cook the ground chicken in a pan over medium-low heat until it turns brown. Put in the garlic and onion slices and cook until they get soft. Add spinach, cooked quinoa, paprika, oregano, salt, and pepper, then mix them all together. Keep cooking for 5 minutes more to let the flavors mix. Fill each bell pepper half with the chicken and quinoa mix. Stuff the peppers and put them in a baking dish. Shred the mozzarella cheese and put it on top. Place in the oven and cover with foil. Bake for 25 to 30 minutes, or until the cheese melts and the peppers are soft. Enjoy while hot!

A delightful vegan pasta primavera bursting with colorful vegetables and fresh flavors. This dish is perfect for a quick and nutritious weeknight dinner.
Ingredients: 200g pasta of choice. 1 cup cherry tomatoes, halved. 1 cup broccoli florets. 1 cup sliced bell peppers. 1 cup sliced zucchini. 2 cloves garlic, minced. 2 tablespoons olive oil. 1/4 cup chopped fresh basil. Salt and pepper to taste. 1 tablespoon nutritional yeast optional, for cheesy flavor.
Instructions: Follow the directions on the package to cook the pasta until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Add the minced garlic and cook for one to two minutes, until the garlic smells good. Put broccoli, zucchini, bell peppers, and cherry tomatoes in the pan. After 5 to 7 minutes, the vegetables should be soft but still crisp. Add pepper and salt to taste. If you are using nutritional yeast, stir it in. Toss the cooked pasta and vegetables together in the pan after adding them. Take it off the heat and sprinkle it with fresh basil. Enjoy while hot!

Ingredients: 8 oz 225g egg noodles. 2 tablespoons vegetable oil. 2 cloves garlic, minced. 1 small onion, thinly sliced. 1 red bell pepper, thinly sliced. 1 green bell pepper, thinly sliced. 1 carrot, julienned. 1 cup broccoli florets. 1 cup snap peas, trimmed. 2 tablespoons soy sauce. 1 tablespoon oyster sauce. 1 teaspoon sesame oil. 1/2 teaspoon sugar. 1/4 teaspoon crushed red pepper flakes optional. Salt and pepper to taste. Chopped green onions for garnish.
Instructions: Cook the egg noodles according to package instructions until al dente. Drain and set aside. In a large skillet or wok, heat the vegetable oil over high heat. Add minced garlic and sliced onions, and stir-fry for 1-2 minutes until fragrant and onions are slightly translucent. Add the sliced red and green bell peppers, julienned carrot, broccoli florets, and snap peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp. Add the cooked noodles to the skillet and toss to combine with the vegetables. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, sugar, and crushed red pepper flakes if using. Pour the sauce over the noodles and vegetables. Stir-fry for an additional 2-3 minutes, ensuring everything is well-coated with the sauce. Season with salt and pepper to taste. Serve hot, garnished with chopped green onions. Enjoy your homemade better than takeout stir-fried veg noodles!
