CHEF ILONA: Make ahead Ham & Cheese Breakfast Bundles

For most of us breakfast can be one of the most challenging meals during the week. Those two snoozes can mean the difference between having a meal and leaving home with a grumbling tummy.
Challenge yourself to do some meal prep for breakfast & save yourself some time and money that you would have to use up hitting the drive-thru.
My Make Ahead Ham and Cheese Breakfast Bundles are hunger busting and BURSTING with flavour!
The wrapping for these breakfast bundles is phyllo.
Phyllo, also known as filo or fillo, is a type of very thin pastry dough used in various cuisines, particularly in Greek, Middle Eastern, and Balkan cooking. These sheets are layered together, often with butter or oil brushed between them, to create a flaky, crisp texture when baked.
Phyllo is commonly used in dishes like baklava (a sweet dessert with nuts and syrup) and spanakopita (a savory spinach and feta pie). The dough is delicate and requires careful handling, as it dries out quickly once exposed to air.

Let's break down what we are striving to make in simpler terms:
We are looking to make a breakfast burrito using phyllo dough instead of tortillas and filling them with eggs, ham and cheese that is bound together with some cream cheese.

Make Ahead Ham & Cheese Breakfast Bundles
Makes 6, but I recommend at least doubling this recipe for maximum benefits
1 package cream cheese, softened
1 cup whipping cream
1/3 cup shredded Cheddar cheese
2 tablespoons grated Parmesan cheese
1/4 teaspoon salt
2 Tablespoons butter
5 large eggs, lightly beaten
1 package deli-style Black Forest ham, chopped
6 sheets phyllo dough (14x9-inch size)
1/2 cup butter, melted
1/4 cup dry breadcrumbs
Topping
Brush with butter and sprinkle with additional cheese and/or sesame seeds if desired.
Directions
1. In a bowl stir cream cheese and parmesan cheese until well-combined. Stir in cheeses, ham, and salt.
2. In a large nonstick skillet, melt remaining 1 tablespoon butter over medium heat. Add eggs to pan; cook and stir until almost set. Stir in ham and the cheese sauce, heat through. Remove from heat.
3. Preheat oven to 375°. Place 1 sheet of phyllo dough on a work surface. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Brush with melted butter; sprinkle with 2 teaspoons breadcrumbs. Fold phyllo in half lengthwise; brush again with butter. Spoon 1/2 cup filling onto phyllo about 2 in. from a short side. Fold side and edges over filling and roll up. Brush with butter. Repeat with remaining phyllo, butter, breadcrumbs, and filling.
4. Place on a greased baking sheet; brush with butter and sprinkle with cheese and sesame seeds as desired. Bake 10-15 minutes or until golden brown.
5. Pop into a zipper seal bag. Reheat the breakfast bundle in an air fryer at 350 F for about 8-10 minutes, or reheat using a microwave until heated through.

CHEF ILONA: Iberian Mussels with Chorizo and White Wine

The Iberian Peninsula is a mountainous region that's most associated with the countries of Spain and Portugal.
When we talk about the flavours of the Iberian peninsula, what are we talking about? The most basic ingredients include eggs, beans, rice, cheese, pork, beef, seafood and a wide range of vegetables.
Chorizo (Spanish) or chouriço (Portuguese) is a pork sausage flavored with paprika that is smoked, often over hickory. The sausage is a flavorful ingredient in egg or bean dishes, soups, casseroles and sandwiches.
Because of the thousands of miles of coastlines in the peninsula, fish and seafood are a very important part of the local cuisines.

Iberian Mussels with Chorizo and White Wine

Serves 4
5 lbs mussels
3 tbsp olive oil
1 large onion, finely chopped
4 cloves garlic, chopped
200g chorizo, skin removed and sliced
1 Tbsp paprika
3 Tbsp tomato paste
½ cup roasted red pepper, chopped
2 cups dry white wine
3 tbsp chopped fresh flatleaf parsley, plus extra sprigs, to garnish
Clean the mussels well, scrubbing the shells and removing the beards. Throw away any which are broken or don’t close when tapped on the side of the sink.
Heat the olive oil in a large pan, add the chopped onion and sauté for 2-3 minutes, until slightly softened. Add the chorizo and cook for a further 2 minutes. Add the garlic and chorizo and cook for another 3 minutes. Stir in tomato paste and paprika and continue to cook for two minutes. Add in the mussels and the wine and season with a pich of salt and black pepper. With a simmering sauce, cover the pan and allow the mussels to cook for 8 minutes or until the mussels completely open.
Throw away any mussels that haven’t opened. Garnish the mussels with chopped parsley and serve immediately.
