2 - Medium Baingan 2 - tomatoes 1tsp- Green Chilli Paste 1tsp - Garlic Paste 1tsp - Ginger Paste 1tsp - Garam Masala 1tsp - Dahi (Curd) 2 Tbsp - Oil Half tsp - Hing 1tsp - Jeera 2 - Onions Medium 1tsp Haldi powder 1tsp Kashmiri Mirch Powder 2tsp Dhaniya powder Salt to taste

Walnut-egg plant ravioli
For about 17 ravioli you need:
250 g flour (I chose 125 g rye flour and 125 g wheat flour)
1 egg
1 spoon of butter
about 100 ml water
salt
curcuma
For the filling you need:
1 big egg plant (or 2 small ones)
1/2 onion
4 spoons of walnuts (cut to small pieces)
2 cloves of garlic
Parsley + salt + pepper + oregano # a bit of nutmeg
250 g quark or ricotta
What you have to do:
Start with the filling: Roast onion, garlic, egg plant (everything cut in small pieces). Cut the walnuts and add them to the mixture. Infuse with wine or water and cook until the egg plant is ready. Add parsley, oregano, salt, nutmeg and pepper. Let the mixture cool down.
Start with the ravioli: Put all ingredients together (the curcuma is just for the color), knead until the dough is smooth. Roll it out until it's only about 1/2 cm high, cut out circles.
Proceed with the filling: Add quark or ricotta to the mixture, mix it.
Take a dough-circle and put a table spoon of filling on one half of it, coat one edge with raw egg, fold it together and and squeeze the edges together.
Cook the ravioli in salted water for about 10-12 minutes, until they are ready. You can douse them with melted butter (my choice) or tomato sauce. Bon appetit!
