maybe i'm just not used to actors actually having chemistry these days, but something about carmy's conversations with sydney just feel more genuine and (to quote ayo) more intimate than the conversations they have with other people. they both just seem so open and ready to know more about each other. carmy consistently prompts her keep talking and asks questions and neither of them really seem to have reservations about sharing their vulnerabilities and worries. like they can just talk to each other with full honesty and openness and just a natural desire to know more about the other person and i really love that.

It's perceived that Sydney's struggle this season was learning to be a leader and wanting a successful business because of Sheridan Catering.
That could be it. But I think deep down her struggle lies in loneliness. She wanted all this because she wanted to do this with Carmy.
I think about the beginning of 2x03 Sundae when she asks if Carmy is sending her home to find inspiration. The question was laced in disappointment that she would be alone in her dad's house. I think Sheridan Catering reminds her of a lonely period in her life, and she realized in 1x08 how much they need each other.
Another scene that stands out, of course, is the table scene. When Sydney fixes her side and Carmy asks what she's afraid of she first says that I don't have what it takes to not fuck this up. But a beat changes, she pauses and let's out her deepest fear.
You could do this without me.
The point of coming back and opening The Bear has to do with Carmy. They're only focused on each other, building together, getting a star together.
I think the ending will point out that it's not about the star, the restaurant, or Sheridan Catering. They could possibly lose what they worked towards. The worst could happen where The Bear catches fire, and it doesn't matter. As long as they're together.
This is all for Carmy, like he's doing it all for her- because he expressed how much he needs Sydney.

saw some discussion about how the message of s2 seems to go against s1 in that s1 was about the toxicity of the fine dining industry as a whole while s2 undoes all of that work, and id just like to write down some thoughts about that.
it definitely is true that the fine dining experience for many a chef sucks ass. this is perfectly portrayed in carmy, who is a ball of anxiety due to chef jeff winger (and his family but thats a different conversation for a different day), and sydney, whose trauma from her catering business and the to-go order debacle serve as the root of her debilitating fear of failure. but despite all of that, the ptsd the panic attacks the health issues the lack of a social life, they still love food. every chef at the beef/the bear does. you can see it in the way that tina is genuinely excited to hone her skills, the way sydney delights in making the simplest dish for a friend in need, and in the way carmy tries so hard to not fuck everything up. even richie, loud crude shithead richie, finds purpose as a server/host.
so while there is so much to be said about how the restaurant represents carmys past, that isnt the main social commentary of s2, and neither is the sentiment of “fine dining is the standard.” where s1 exposed all of the dark nooks and crannies hidden inside of a restaurant, s2 serves to remind us what a restaurant is supposed to be about, that it is so much more than what the industry has twisted chewed and spit it out to be. to work in a restaurant is to put your blood sweat and tears into pots and pans, put it on a plate, and then give it to someone. plain and simple. it is the oldest act of service, and is exactly what richie comes to respect in ep7, where chef terry tells him something along the lines of how she wants people to see all the work that went into one dish just to make them happy because it makes them feel special and people should be able to have that experience. to be a chef, to be a server, and to be a part of all of the work that goes into making and sharing a meal, is to love. 
ultimately, the overarching plot of changing the beef into the bear is not saying that simple sandwich shops made by regular people arent good enough. season 2 is a reminder that as dark as the fine dining industry can be, if you go into it with an actual love for the craft, an aptitude for service, and remember that everyone is a human being before they are an employee, working in a restaurant can be beautiful.
tldr: the “deep” social commentary of s2 is that capitalism and competition ruins food service by turning it into something horrible when its supposed to be about showing and receiving love through a good meal. the end.

alaska is way too cold most of the time for jesse, the harsh wind irritates the chemical burns on his hands and the cold makes the slipped disks in his spine hurt and the snow feels too heavy to walk thru sometimes, but there's genuinely nothing, NOTHING, better than the feeling of coming in from the cold and getting under the electric blanket and cuddling up next to demi and warming up the freezing, wet, sad little thing that lives in his chest instead of just letting it sit there shivering. demi rubs his sternum as if to pet it, to tell it that she sees and loves it, and jesse gets to melt

My prediction for s3 is that Carmy will run after Syd. Not sure why but he will run after her because he’s wanted to do it since s1. In the above GIFs, you can literally see how much he is restraining himself from following her so he can beg for her to come back.
You know that scene in a romantic comedy where the girl goes to the airport so the guy quickly gets into a taxi to run after the girl so he can stop her from getting on the plane??? That’s going to be Carmy in s3. This man wants a romantic airport scene with Syd so bad. This is not Love Actually, Carmy. This is not a romantic comedy, sir.

I think s2 is a really beautiful and overall quite good expansion and deepening of the themes and arcs of season 1! however, as for my dumb little romantic heart feelings, there is just nothing like the way carmy looked at sydney when she first showed up at the restaurant and looked again. straining the stock after she tells him her history. her eyes watching him as he tries her food. him looking through her notebook. family style? two tops, booths.

so do we all agree that syd was remaking her favorite dish for marcus is 1x08? That carmy's dish the chilean sea bass with the tomato confit etc etc? idk maybe it's just me but the way she pauses after marcus asks what her favorite dish was, as she's serving the plate, feels very weighted to me. There's a beat, the two thoughts are not connected, and then syd adds the lemon and we're distracted from the point. and maybe I'm just reading too much into her expression, but she seems a little disappointed when all she gets for a review is 'really, really, good'.
But then!! when marcus asks her what her favorite dish was again and she admits that carmy made it, all she says about the meal specifically is that it was 'really, really, good,' obviously a direct call back to marcus's review of her dish!! and again, I'm probably just reading too much into ayo's wonderful microexpressions, but syd does seem disappointed that her dish hasn't given marcus that same feeling
and idk. there's just something about syd making her favorite dish for someone else, and then not being able to give them that same feeling that she had. breaks my heart a little bit ya know?

i just read an interview with vince gilligan where he said he got so sick of walt in the later seasons that he started saying things like “walt is such a bastard, he’s such a shit” on set, TO BRYAN CRANSTON but stopped because he didn’t want to influence his performance. which is like funny in and of itself… but the idea of bryan taking that as genuine direction and going in to shoot like “okay. i can do this. i am such a bastard I AM SUCH A SHIT” is probably even funnier
god that's so fucking funny, i know its like His Show and Obviously but i feel like vince has such a great understanding of his own characters and the way he like gets sick of them and loves them is so refreshingly sincere because he sees them as like fully formed individuals. so of fucking course he was sick of walt!! i love the idea of vince just offhandedly being like "god walt's such a dickhead" to bryan as if they're talking about a real-life coworker. and maybe bryan did take it as legitimate direction!! he was clearly aware of how much walt sucked and really leaned into it in s5. just imagine shooting the finale scene where walt dies in the meth lab and everyone on set clapping and cheering because that miserable fucker is finally dead
