Keep us updated on those sweet, sweet sandwiches.
As you wish. Here are some more I got, please enjoy the bounty!
-so 4 chicken salad u do celery, green and red onion, mayo, paprika, cayenne, black pepper, green bell pepper, and roast ur chicken with the dill and lemon and dont listen to anyone telling u u need to have skinless chicken i dont understand it, if u put apples in it so HELP me god !!!!!!! then u half a baguette and toast it in the oven and spread ur chicken salad on it, maybe put a little butter lettuce on it for fun but NO PICKLES
-okay here's the 2nd best sandwich in the world: turkey panini, american cheese, cream cheese, banana peppers, tomato. (best sandwich in the world can only be found at the Birds View cafe near North Cascades National Park after a 4 hour flight and a 2 hour drive. it's bacon, blackberry jam, jalepenos, and swiss cheese on sourdough. to make it yourself might be an insult to god)
-toasty up some cream cheese brioche with some thin bits of maple brie raspberries or just do cream cheese w strawberries cucumber and a swiggle of honey its picnic time babey
-turkey, swiss cheese, bacon, apple slices, honey mustard (has many names but i stole it from the homophobic bakery my ex got fired from)
-uhhhh grilled chicken, cheese, bacon, and pineapple is very good on a Hawaiian bun
-Roast beef grilled cheese. Butter your bread liberally. Add 3 large slices of roast beef followed by as many large slices of Swiss as you like. Or sharp cheddar. Add Romanian zacucas spread to top half bread. Grill on low heat until cheese is visibly melted.
-not a sandwich but a taco. you take a corn tortilla, put some cheese, add a second tortilla. make a gringo quesadilla. then smear refried beans on top. mix shredded cabbage with vinegar, salt, pepper, add that. add cotija (the crumbly white cheese), fresh lime juice, and as much hot sauce as you can stand before you piss your pants
-this isn’t a bread sandwich. tomatoes. slice and drain on paper towels. cover with cream cheese (salt pepper basil oregano paprika). make a lil tomato sandwich, cream cheese in the middle. dip both outsides in flour, egg, breadcrumbs. then fry in hot oil for about 4 mins each side. better than bread!
-do a quesadilla with scrambled eggs avocado sauteed spinach onion pepper and hot sauce instead
Also I have questions about this: -did you know english people just put a slice of toast between two slices of bread and call it a sandwich and then have the nerve to be okay with occupying my country

27
I recently turned 27, and in true Bailey fashion, I made the most of that! My birthday fell on a Monday so I decided to take both the Friday and the Monday off work and make a long weekend of it.
Tumblr media
So on Friday, me and Sam grabbed a coffee and headed over to Katikati to go on the famed Haiku walkway. Both the Haiku's and the walkway were actually disappointing, but it was still good to get out there, it was a beautiful day and the scenery was lovely.
Tumblr media Tumblr media
After our walk we went to Majestic Tea Bar for lunch, unfortunately I wasn't feeling very well so I couldn't over eat as much as I wanted to, but I had some delicious wedges!
Tumblr media
That evening Casey, Reagan and I met with Dad and Deb to have dinner for Dad's birthday. We went to Neighbourhood, and it was delicious, and very good to catch up. I had chicken bao buns and a superb sticky date pudding.
Tumblr media
Saturday was party day, which fortunately was still pretty relaxing for me. Me and Kate started the day at the Farmers market, then strolled down to Love Rosie for breakfast. I decided to mix it up from my usual brioche choice, and I got a sausage roll, and a pear frangipane tart which was delicious! I spent the rest of the day cleaning the house and getting ready for the party.
Tumblr media
And then it was time for the annual Bailey's Birthday Murder Mystery Dinner Party! (TM). This year was a wild west theme which I was really keen on. As expected, everyone dressed up and looked absolutely on point and it was a really great time.
Tumblr media Tumblr media
Sam took the head on organizing this year which made it nice and relaxing for me! On the menu, we had a cheese board and baked brie for starters, home made baked beans, corn bread, and beef quesadillas for mains, and I made a massive apple pie for dessert. It was  a super fun night with all my favourite people and I'm already excited to do it all again next year!
Tumblr media Tumblr media
Sunday was a pretty chilled day, and also mine and Casey’s 2 year anniversary. I did a few odd jobs, and had a nice cup of tea with Kate. Sunday night was my birthday dinner (are you noticing a food theme here?) with Mum, Reagan and Mark, and Casey. We went to Iki Bar and had a waitress that I was not a fan of, but all the food and drinks were delicious! Me and Casey shared Korean fried chicken, chicken skewers, a duck bao, a crab bao, and some kumara fries. Would definitely head back there again.
Tumblr media
Then Monday was my actual birthday! I had been wanting to go for a walk in the Karangahake gorge, but unfortunately I got one of the bad weather autumn days as opposed to the usually beautiful ones so we had to change plans. However, I still had an awesome day and got to see all my best friends, even though it was a week day! After a sleep in, Casey made me orange ricotta chocolate chip pancakes, and we had vanilla iced coffee. Sam came around, and while we were chatting Ash sent me some beautiful flowers which was so nice! We then met with Kate for lunch at Good Local - I shared with Casey a spicy beef burger, and a philly cheese steak - it was soooo good! Then we went to visit Ash in papamoa. We had takeaway roast for dinner and just chilled out in the evening. It was such a lovely day.

Nothing tricky about any of my marmalade recipes, but still impressive taste of Amazing Rhubarb, Strawberry and Vanilla Marmalade. This is the base, which you can spice up or flavour up with an aromatic alcohol or herbs. No limits to imagination. Let’s start! #gallery-0-25 { margin: auto; } #gallery-0-25 .gallery-item { float: left; margin-top: 10px; text-align: center; width: 100%; } #gallery-0-25 img { border: 2px solid #cfcfcf; } #gallery-0-25 .gallery-caption { margin-left: 0; } /* see gallery_shortcode() in wp-includes/media.php */
Rhubarb and strawberries are coming into the season, and as I’ve previously mentioned these 2 are one of my most favourite ingredients. I am a child of the month July, therefore, strawberries have always been related to my celebrations. The rhubarb was, on the other hand, quite a new vegetable for me to process. However, I happened to like it a lot and use it in many other dishes, preferably cakes and pies. Check out my rhubarb recipes in here. Yummy!
#gallery-0-26 { margin: auto; } #gallery-0-26 .gallery-item { float: left; margin-top: 10px; text-align: center; width: 100%; } #gallery-0-26 img { border: 2px solid #cfcfcf; } #gallery-0-26 .gallery-caption { margin-left: 0; } /* see gallery_shortcode() in wp-includes/media.php */
Rhubarb, Strawberry and Vanilla Marmalade is suitable for kids from the age of 2 because of the amount of sugar. The myth about rhubarb being poisonous or unhealthy, I do not follow. Buy ripe red stalks and cut the leaves off properly. Once processed and warmed up, it is delicious and even healthy. It needs a pinch of sugar and cinnamon only. Offer smaller amount, you don’t have to eat the whole jar of this vegetable. Bon appetit!
Total Time: 1.5 hour of cooking + an overnight sit of the rhubarb and strawberries

Shopping List
800g of uncleaned ripe rhubarb stalks, cleaned, washed and chopped (it makes around 650g of cleaned vegetable) 1.5 kg of washed and cleaned strawberries, chopped 1 teaspoon of vanilla paste ½ lemon Homemade vanilla sugar (superfine caster sugar laid with a couple of dried vanilla beans) Gelling sugar 2:1

Instructions
One day ahead
#gallery-0-27 { margin: auto; } #gallery-0-27 .gallery-item { float: left; margin-top: 10px; text-align: center; width: 100%; } #gallery-0-27 img { border: 2px solid #cfcfcf; } #gallery-0-27 .gallery-caption { margin-left: 0; } /* see gallery_shortcode() in wp-includes/media.php */
Place all the rhubarb into a large deep pan casserole and generously sprinkle with some vanilla sugar. Add ½ of the amount of the gelling sugar, just to smell it out and cover with strawberries in 2 layers. Repeat. Vanilla sugar and gelling sugar. Do not mix, just cover with a lid.
#gallery-0-28 { margin: auto; } #gallery-0-28 .gallery-item { float: left; margin-top: 10px; text-align: center; width: 100%; } #gallery-0-28 img { border: 2px solid #cfcfcf; } #gallery-0-28 .gallery-caption { margin-left: 0; } /* see gallery_shortcode() in wp-includes/media.php */
Leave it in a cold place, not fridge, an overnight.
Next day
The Cooking
#gallery-0-29 { margin: auto; } #gallery-0-29 .gallery-item { float: left; margin-top: 10px; text-align: center; width: 100%; } #gallery-0-29 img { border: 2px solid #cfcfcf; } #gallery-0-29 .gallery-caption { margin-left: 0; } /* see gallery_shortcode() in wp-includes/media.php */
Stir in 1 teaspoon of vanilla paste and mix it up well.
#gallery-0-30 { margin: auto; } #gallery-0-30 .gallery-item { float: left; margin-top: 10px; text-align: center; width: 100%; } #gallery-0-30 img { border: 2px solid #cfcfcf; } #gallery-0-30 .gallery-caption { margin-left: 0; } /* see gallery_shortcode() in wp-includes/media.php */
Next, always place 3-4 large soup spoons of the fruit & vegetable with their own juices into a smaller deep pan and cook on low heat.
Add 1 teaspoon of lemon juice. Stir occasionally.
First, it starts foaming, then, it becomes more homogenous and afterwards, it starts to turn into a gelling process. At this stage you can mash it a bit with a potato masher and taste. If it isn’t sweet enough, add some more gelling sugar.
Make a test of consistency by placing a little bit of marmalade onto a small porcelain plate. Wait for a couple of seconds and see the texture. If you are content, you are good to go. The whole process of these smaller amounts takes about 30 minutes. Repeat until you have nothing to process.
#gallery-0-31 { margin: auto; } #gallery-0-31 .gallery-item { float: left; margin-top: 10px; text-align: center; width: 100%; } #gallery-0-31 img { border: 2px solid #cfcfcf; } #gallery-0-31 .gallery-caption { margin-left: 0; } /* see gallery_shortcode() in wp-includes/media.php */
In the finale, mold the vanilla marmalade into clean glass jars. Close them tight and wrap upside down in a blanket. Let them cool down entirely and store them in a dark and cold place.
#gallery-0-32 { margin: auto; } #gallery-0-32 .gallery-item { float: left; margin-top: 10px; text-align: center; width: 100%; } #gallery-0-32 img { border: 2px solid #cfcfcf; } #gallery-0-32 .gallery-caption { margin-left: 0; } /* see gallery_shortcode() in wp-includes/media.php */
This vanilla marmalade is gorgeous just like that. You can also serve it with a butter brioche and Brie cheese, or on a slice of a good bread with some layer of butter, or with my favourite pancakes or waffles. Cheers!
Makes 6 medium jars.
