Lemon and Apricot Lamb Tagine

This fragrant and spicy Lemon and Apricot Lamb Tagine elevates your leftover Easter roast into a more-ish and comforting North African stew, warming you up from these April showers! Happy Thursday!
Ingredients (serves 3 to 4):
2 tablespoons olive oil
1 1/2 teaspoon Ras-el-Hanout
1/2 teaspoon dried thyme
1/4 teaspoon cumin seeds
1/4 teaspoon ground chilli
6 plump cardamom seeds
1/2 large onion
1 garlic clove, minced
1 large lemon
1/2 cup dried apricots
1/3 cup almonds
1/2 teaspoon coarse sea salt
1/2 teaspoon freshly cracked black pepper
Leftover Herb Lamb Roast  with plenty of meat on the bone, along with 1 cup of its Roasting Juices, congealed
3 cups water
2 heaped tablespoons good pure honey
1 teaspoon demerara sugar
In a large Dutch oven, heat olive oil over medium-high heat. Add Ras-el-Hanout, dried thyme, cumin seeds and ground chilli, and fry, 1 minute.
Crush cardamom pods, and add them to the Dutch oven. Fry, 1 minute more.
Peel and finely chop onion, and stir into the Dutch oven, coating in spices. Fry, a couple of minutes.
Add minced garlic and cook, 1 minute.
Cut lemon into quarters, and cut each quarter in half. Add lemon pieces to the Dutch oven, along with dried apricots and almonds. Cook, 3 minutes. Season with coarse sea salt and black pepper.
Add leftover Herb Lamb Roast to the Dutch oven, and brown briefly, on all sides. Then, stir in its Roasting Juices, until melted. Add water, and bring to the boil.
Once boiling, cover with the lid, and simmer, one hour, until the Lamb meat fall off the bone. Stir in honey and demerara sugar until melted.
Serve Lemon and Apricot Lamb Tagine hot, onto Lemon Semolina.

Can anyone give me some language/word help? I'm not sure of the correct word for the following bit of writing:
Homemade, not by me. I could follow a recipe and make something decent, but Abuelita Lupe who lives over on the corner is way better. I get a big pot from her every few months or so and freeze it. That's most of what's in my freezer. [granny] Halima's lamb tagine, Nona Michela's tortelini, that kind of thing.
the internet leads me to believe that 'jadda' is the Arabic word for 'grandma', but I can't figure out if that's actually what you'd call an unrelated older woman who likes to go by [granny] [name]

What’re we eating kids?
I’m just about to mix up a French 75 which is by far one of my new favourite drinks. I haven’t quite got the recipe perfected yet (hence why I need to uh, keep making them) but it’s honestly heaven and so refreshing and hits like a Mack truck. All my fave things.
It’s a beautiful day today so tonight is just a grill night--some already-marinated pork chops from Costco, their crunchy dill pickle salad (I could eat it every fucking day), and some asparagus with lemon.
I took out some old cookbooks--namely, Jamie Oliver’s 15 Minute Meals one--and put some of those recipes on the menu this week. In reality, I’m not the biggest fan of his cooking--I love his aesthetic, the messiness of it all, I love the look of his food--but it just never seems to have any flavour. He really skimps on the seasoning (there’s a recipe in this book for a lamb tagine and like, the only seasoning is two teaspoons of garam masala? what?) and I do find his portions are ridiculous--in his most recent show, he did one teeny, tiny striploin and said it was more than enough for two people and like, my brother in christ I almost cancelled him right there.
In any case, I always WANT to like his food more than I actually do but I digress. That recipe book doesn’t have a SINGLE meal in there that takes 15 minutes or less to cook and even worse, every recipe seems to use EVERY FUCKING BOWL, PAN, AND KITCHEN UTENSIL YOU HAVE--but I digress.
It’s like he thinks we enjoy washing dishes.
Anyway, I’m trying the greek chicken with ‘cous and his hoisin beef noodle bowls but I may actually make mine with tofu, since I’m trying to eat vegan at least twice a week.
