The Mediterranean diet lays a high focus on…

Classes & Campus
I haven’t written about the classes I am taking since the 11-week semester began, so this post will be all about my classes and what my week looks like! I have four courses that started on February 27th and end on May 10th. All of my classes are in English but taught by Italians.
My Monday class is called Wanderlust: The Physical and Emotional Art of Walking, and it is a philosophy class that counts as a humanities credit for my Carolina Core. We meet on Mondays from 3:20 to 6:45, although we usually end earlier. Every week, we walk the streets of Florence and discuss topics such as nature, pilgrimages, and migration. I really enjoy the time we spend outside and how much I learn about the city. We also always take a snack break which usually means I get gelato!
Tumblr media
We walked the length of the river when we discussed pilgrimages.
On Tuesdays and Thursdays, I have Health and Fitness in the Mediterranean from 9:55 to 11:40, which transfers over as HPEB 321, and Ethics and Justice in Food Systems from 1:15 to 3:00, which transfers as a humanities credit. In my health and fitness class, we learned the benefits of the Mediterranean diet, power walking, and cycling. To go along with these topics we have done two power walks and biked to Cascine park.
Tumblr media
Biking! We did 8 miles during class.
We also did a tasting of balsamic vinegar, Parmigiano-Reggiano cheese, and Parma ham when we learned about the production processes. Up next is rowing in the Arno River and visiting the national soccer museum!
In my ethics and justice class, we learned about food deserts and inequality in the agricultural industry. We visited the Mercato Centrale and have three cooking labs. We also had the owner of the Women’s Coffee Project in Florence as a guest speaker to tell us about his organization.
Tumblr media
My classroom for Ethics & Justice in Food Systems.
Tumblr media
Eggs we made in our cooking lab! We have two more cooking labs coming up.
On Wednesdays, I take ceramics to fulfill my art credit. The class is from 3:20 to 6:45 and is my only Wednesday class. It is perfect to have in the middle of the week since it is a relaxing activity.
Tumblr media
The mug I am making and attempting to decorate with strawberries. It's a beginner class so as long as I do my best, that is what counts.
My course load is not bad. I wasn’t sure if it would be manageable since I travel on weekends and usually do not get any work done then, but I can get everything done each week before I leave. My homework typically consists of readings and short reflection assignments. I think it helps that I have a lot of free time since I don’t have three classes a day; I only have one or two.
None of the classes I am taking are for my major, but I am enjoying switching up my courses! I find them very interesting and look forward to them. One of my favorite things about my classes is that we do activities, and they are very interactive and more engaging than a traditional lecture.
The Florence University of the Arts campus is spread out among six different academic buildings. I have classes in three of the six. I go to the main building, the hospitality building (which also has a pastry shop), and the art building. The classrooms are very nice and modern.
Tumblr media
The main campus building is so pretty in the spring!
Tumblr media
Courtyard where I do work before meeting for class on Mondays.
The campus is very beautiful; I love to sit outside in the courtyard at the main campus building or in the garden of the pastry shop. The university also has many amazing amenities like a spa and gym!
Tumblr media
The garden at Fedora, the pastry shop.
Tumblr media
I like to get lunch in between my classes on Tuesdays at the pastry shop!
I am learning so much in my classes and getting to know Florence better through all of our activities in and out of the classroom. I have midterms coming up and I can’t believe I am almost done with the semester, I am going to miss being here.

Amazingly Healthy KALE Mix Seeds , Organic, Heirloom, Open Pollinated Non-Gmo B25 Kale is a member of the brassica family and a cold-tolerant, easy-to-grow, highly nutritious green. Kale may be the hardiest of the cabbage kin. It excels in cold weather, tasting best after frost has kissed the tender, succulent, superfood leaves. This mix is the rare, flavorful kale variety you will want to grow in your garden. Convert your garden to an epic garden. You can even use these hardy green veggies as ornamental flowers and still benefit from their green leaves all spring, summer and autumn long till December actually. Able to withstand frost and cold climates, kale often symbolizes the coming winter season. Is there any dish that can't use a flavor and nutrient boost from kale? This blend of amazing healthy kale mix provides a variety of colors, textures, sizes, and flavors. Harvest baby greens in just 25 days and allow some plants to grow to maturity. This frost-hardy crop is a rock star in the garden even as other vegetables are winding down. Count 25 Botanical Name: Brassica oleracea and B. napus Days to Maturity: 25–55 days Days to Germination: 3-10 Seeding Depth: 1/2" Plant Spacing: 12-18" Row Spacing: 24" Plant height: 12-18" Growth Habit: Leafy upright Soil Preference: Nitrogen-rich, loamy, well-drained Temperature Preference: 45-70 °F Light Preference: Full sun - partial shade Pests and Diseases: No serious diseases but monitor regularly for aphids, cabbage worms, flea beetles, and thrips. Hardiness: Biennial grown as an annual, kale is very cold hardy, and may overwinter in milder climates. Plant Dimensions: If left to grow to maturity, the varieties in this mix will get up to 4' tall, but for baby greens should be picked at 2"–4". In the spring, sow seeds 8-10 weeks before the last frost. For fall harvest, sow seeds directly from July-September for a late fall crop that will taste super sweet after a bit of frost exposure. Kale requires good moisture and full sun. Set plants out or thin to 12- 18 inches apart. Plant seeds ¼ deep. Ideal germination temperature is 45-85 F. Germinates in 6-9 days. Heirloom NON-GMO, Perennial, Easy to Grow, Rich Flavor Attracts Pollinators Attracts bees and butterflies Repels pests Aromatic Kale is believed to be more similar to the original wild cabbage ancestor than more refined brassicas like cauliflower and Brussels sprouts. It hails from the eastern Mediterranean, as well as Asia Minor. The ancient Romans were responsible for dispersing kale and collards to Europe where they were quickly embraced as a cold-loving crop perfectly suited to the Northern European climate. Most people would choose something sweet over something green any day of the week. But if you’re looking to improve your diet or perhaps drop a few pounds, the more cruciferous vegetables you eat, the better. And if you’ve yet to discover kale, it’s time to give this green, leafy superfood a try — not only because of its low calories but also because of the health benefits you’ll receive. USES: Many culinary uses Kale is a perfect beginner gardener’s crop, and it requires very little care to thrive. Kale can tolerate an impressive amount of cool weather. In mild climates, it can be grown year-round, perhaps with a lull in the punishing heat of summer. In cooler climates, kale is considered one of the best crops for season extension. With a bit of protection, it can be grown late into the fall. PESTS/SPECIAL CONSIDERATIONS In some areas, cabbage worms will wreak havoc on all cabbage relatives. Try a clove of homemade garlic and hot pepper spray to discourage these pests from munching your plants. A Boon for the Old Ticker: My Review of the Healthy Heart Solution Kit (eBooks)
Having always been health-conscious, a growing awareness of heart health settled in as I got older. With a bit of a family history on the heart side of things, I decided to be proactive and take better care of my old ticker. That's when I came across the Healthy Heart Solution Kit (eBooks).
Knowledge is Power: A Library for Your Heart
This digital kit is a veritable library in itself, bursting with downloadable e-books that cover a wide range of topics related to heart health. Thankfully, it's not a dry read filled with medical jargon. The authors, who seem to be a team of cardiologists, nutritionists, and wellness specialists, have done a fantastic job of making complex topics clear, concise, and even engaging.
Tumblr media
Food for the Heart (and the Soul)
One of the e-books that truly stood out for me was the "Heart-Healthy Recipes" section. Let's be honest, sometimes healthy food can be a bit, well, bland. This recipe book, however, is bursting with delicious and nutritious meals that cater to a variety of tastes and dietary needs. From vibrant Mediterranean salads that pack a flavour punch to hearty whole-grain pastas and even some guilt-free sweet treats, there's something for everyone. I particularly liked the inclusion of vegetarian and vegan options, making it perfect for those with specific dietary restrictions.
Finding Your Perfect Fit: Exercise Made Easy
Another valuable part of the kit is the "Exercise Plans" e-book. It acknowledges that a one-size-fits-all approach to exercise just doesn't work. The book offers a variety of exercise plans tailored to different fitness levels, from gentle yoga routines for beginners to high-intensity interval training for the more active individual. This flexibility allows you to find a program that seamlessly integrates with your lifestyle and current fitness level.
Nature's Helping Hand: Exploring Natural Remedies
The kit goes beyond just diet and exercise. There's also an e-book titled "Dr. Saunder's Natural Remedies Guide," which delves into the benefits of certain herbs, spices, and even everyday foods that can contribute to a healthy cardiovascular system. It's important to remember that this section shouldn't be taken as a substitute for professional medical advice, but rather a springboard for further discussion with your doctor.
A Heartfelt Recommendation
Overall, I've been thoroughly impressed with the Healthy Heart Solution Kit (eBooks). It's a comprehensive and informative resource that empowers you to take charge of your heart health. The delicious recipes, practical exercise plans, and exploration of natural remedies provide a well-rounded approach to maintaining a healthy heart. Whether you're just starting your heart-healthy journey or looking to refine your existing routine, this digital toolkit is a fantastic addition to your well-being arsenal.
