A mouthwatering vegan burger that combines the creaminess of avocado toast with the zesty flavor of cilantro lime cashew cream. It's a nutritious and delicious meal that's perfect for any time of day.
Ingredients: 4 whole grain burger buns. 2 ripe avocados, peeled, pitted, and sliced. 1 large tomato, sliced. 1 red onion, thinly sliced. 1 cup baby arugula leaves. 1/2 cup roasted red pepper strips. 1/4 cup pumpkin seeds, toasted. 1/4 cup sunflower seeds, toasted. Salt and black pepper to taste. 1 batch Cilantro Lime Cashew Cream see instructions below.
Instructions: Set your grill or griddle on the stove to medium-high heat to get it ready. To make the Cilantro Lime Cashew Cream, blend the following ingredients until smooth while the grill heats up: 1/4 cup fresh cilantro leaves, 1 garlic clove, 1 tablespoon lime juice, 1/2 teaspoon salt, and a pinch of black pepper. Soak the cashews in 1/2 cup of water for 1 hour. Toast the burger buns on the grill for about one to two minutes, until they get a light brown color. Take it out and set it aside. Slice the avocado and put it on the grill. Cook for one to two minutes on each side, or until grill marks show up. Take it out and set it aside. Put the burgers together: Spread a lot of Cilantro Lime Cashew Cream on the bottom bun to start." After adding the arugula leaves, the grilled avocado slices, tomato slices, red onion slices, roasted red pepper strips, and toasted pumpkin and sunflower seeds should be added. Add black pepper and salt to taste, and then put the other half of the bun on top. Enjoy your Avocado Toast Burger with Cilantro Lime Cashew Cream right away!

These Vegan Zucchini and Black Bean Veggie Burgers are delicious and a great way to satisfy your burger cravings without eating meat. They're very simple to make and taste great.
Ingredients: 1 1/2 cups grated zucchini. 1 can 15 oz black beans, drained and rinsed. 1/2 cup breadcrumbs gluten-free if needed. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 1/4 cup finely chopped red bell pepper. 1/4 cup finely chopped fresh cilantro. 1 tsp ground cumin. 1/2 tsp paprika. Salt and pepper to taste. 2 tbsp olive oil. Burger buns vegan, if desired. Lettuce leaves, tomato slices, and vegan mayo for garnish.
Instructions: Put the grated zucchini on a clean kitchen towel and squeeze out as much water as you can. Use a fork or potato masher to mash the black beans in a large bowl. Grate the zucchini and mix it with the breadcrumbs. Then add the chopped onion, minced garlic, red bell pepper, cilantro, ground cumin, paprika, salt, and pepper. Combine well by mixing. Split the mixture in half and shape each half into a burger patty. In a pan, heat the olive oil over medium-high heat. The veggie burger patties should be cooked for four to five minutes on each side, or until they are golden brown and done all the way through. These black bean and zucchini veggie burgers are vegan. Put them on burger buns and top with vegan mayo, lettuce, and tomato slices. Enjoy the vegan burgers you made yourself!

Ingredients: 1 cup red lentils, cooked and drained. 1 large beetroot, grated. 1/2 cup oats. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 1 tsp cumin powder. 1 tsp paprika. Salt and pepper to taste. 1/4 cup fresh cilantro, chopped. 1/4 cup breadcrumbs. 4 whole wheat burger buns. Lettuce leaves, tomato slices, and vegan mayo for garnish.
Instructions: Put the cooked red lentils, grated beetroot, oats, chopped onion, minced garlic, cumin powder, paprika, salt, and pepper in a large bowl. Thoroughly mix everything together until it's all well mixed. If the mixture is too wet, you can make it firmer by adding breadcrumbs. Split the mixture in half and shape each half into a burger patty. Set the grill or skillet on medium heat and add a little oil to it. Patties made of lentils and beets should be cooked for four to five minutes on each side, or until they are golden brown and done all the way through. On the grill, toast the whole wheat burger buns until they get a little brown. Put lettuce and tomato slices on the bottom bun of your vegan burgers, then put the lentil and beetroot patty on top of them. Add vegan mayo and fresh cilantro on top. Put the top bun on top of the burger to finish, and it's ready to serve!
