Brie and pear tarts were made with only a minor alteration. Living in the middle of nowhere means the chances of finding phyllo pre-made mini tarts goes down exponentially, therefore one must attempt to create their own.
But! They smell amazing and I'm getting rave reviews, even with the makeshift shell 😂

Me at the start of today: I think I'll try making shortbread, it's my favorite cookie and it's really simple, how hard can it be?

This year's batch of Hamentaschen! They're apricot and earl grey flavored, and my husband says they're the only apricot hamentaschen he's ever actually liked.

These were actually a very straightforward bake, the trickiest part is waiting for the dough to rise. I may play around with my shaping method but I think that I’ll have plenty of practice cuz the kids are delighted with them

After reading Farmer Boy, I am extra glad I bought that Little House cookbook from a garage sale this summer. Never has a book made me hungrier.
I am delighted to report that the recipe for Birds' Nest Pudding sounds just as delicious as Laura's description made it sound.

This summer I was fortunate enough to find a wild yeast bloom on one of my chokecherry trees. I harvested & dried those chokecherries, then soaked them in water til they fermented. Then I used that levain to jumpstart a buckwheat/sweet white rice flour gf sourdough starter. (The picture is literally day one, now it’s so bubbly it looks like hot air)
((If you don’t know what hot air candy is, oh my god run don’t walk to your nearest fancy candy store and try some NOW))
But the thing is? Right after I got this starter established, I needed to go overseas for 2 weeks and Mr61below already had far too much on his plate, so I put it in the fridge so he’d only need to feed it once. But the cold really did a number on it, and it took me two whole weeks to get it bubbly again. I was legit concerned I’d gone and fully killed it. But, now it’s happily churning away again, and this is my second loaf made with this baby.
#meanwhile in minnesota#adventures in baking#sourdough#cw food#food sensitivities#due to Mr61below’s health issues we haven’t had yeasted bread in like… 8 years now? he’s got BAD food sensitivities#but my logic was ‘this is wild yeast in our yard literally it’s already here so it’s likely he’s already been exposed to it enough that#he’ll be okay with it! and IT WORKED#meanwhile I’m happy af to be able to work this bushcraft#I also threw in a few of the buckwheat groats I was actually able to glean but for fuckin real FUCK bakers creek their seeds are garbage#’ooh look we’ve got a pretty pink buckwheat! … wait you want to actually h a r v e s t? uh that’s .. uh but look! FLOWERS!
